Our easy eggnog muffins capture the flavor of Christmas's essential beverage in a format that's perfect for Christmas brunch. These holiday muffins are sweet enough to serve for dessert, too.

2.25 cup all-purpose flour
1 cup sugar
2 teaspoon baking powder
0.5 teaspoon ground nutmeg
2 eggs, lightly beaten
1 cup eggnog
0.5 cup butter, melted and cooled
1 teaspoon vanilla
0.5 teaspoon rum extract
1 recipe Nutmeg-Streusel Topping
0.333 cup all-purpose flour
0.333 cup sugar
0.5 teaspoon freshly grated nutmeg or 1/4 teaspoon ground nutmeg
2 tablespoon butter

Steps:

  • Preheat oven to 375°F. Grease twelve 2-1/2-inch muffin cups or line with paper bake cups; set aside. In a medium bowl combine flour, sugar, baking powder, and nutmeg. Make a well in the center of the flour mixture; set aside.
  • In another bowl combine eggs, eggnog, butter, vanilla, and rum extract. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Spoon batter into prepared muffin cups, filling each two-thirds full. Sprinkle Nutmeg-Streusel Topping over muffin batter in cups.
  • Bake for 18 to 20 minutes or until golden and a wooden toothpick inserted into centers comes out clean. Cool in muffin cups on a wire rack for 5 minutes. Remove from muffin cups; serve warm. Nutmeg-Streusel Topping
  • In a small bowl stir together all-purpose flour, sugar, and nutmeg. Using a pastry blender, cut in butter until mixture resembles coarse crumbs.

1/2 cup sugar
1 egg
1/2 cup eggnog
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground nutmeg
1/8 teaspoon salt
1/2 cup crushed pineapple, well drained
TOPPING:
1/4 cup sugar
1/2 teaspoon ground cinnamon

Steps:

  • In a small bowl, beat butter and sugar until crumbly, about 2 minutes. Add egg; mix well. Beat in eggnog and vanilla. Combine the flour, baking powder, nutmeg and salt; add to creamed mixture just until moistened. Fold in pineapple., Fill greased or paper-lined muffin cups three-fourths full. Combine topping ingredients; sprinkle over muffins., Bake at 400° for 18-22 minutes or until a toothpick inserted in muffin comes out clean. 1 1/4 cups eggnog or 1 1/4 cups half-and-half
1/2 cup sugar
1/2 cup unbleached all-purpose flour

1/8 teaspoon eggnog, flavor (optional)
3 tablespoons butter, melted

Steps:

  • Preheat the oven to 425°F Line a muffin tin with 12 paper or silicone muffin cups, and grease the cups with non-stick vegetable oil spray; this will ensure that they peel off the muffins nicely.
  • In a medium-sized mixing bowl, cream together the butter and sugar till smooth. Add the eggs, beating for several minutes and scraping the bowl, till the mixture is smooth and light colored. Beat in the baking powder, nutmeg, salt, and eggnog flavor or vanilla.
  • Stir the flour into the butter mixture alternately with the eggnog or half and half, beginning and ending with the flour and making sure everything is thoroughly combined. Spoon the batter evenly into the prepared muffin cups.
  • Stir together all of the topping ingredients JUST till crumbly. Stir gently, and don't overmix; you don't want to turn this crumbly topping into a solid mass. Sprinkle the topping over the muffins.
  • Bake the muffins for 20 minutes, or until they're a pale golden brown. Remove them from the oven, and serve warm, or at room temperature.

10 star anise
10 allspice berries
10 cinnamon sticks
10 cloves
10 cardamom pods
1/2 gallon apple cider
2 cups fresh carrot juice
1/2 cup fresh ginger juice
1/2 cup demerara sugar
Zest of 1 orange
1/4 teaspoon freshly grated nutmeg
Pinch kosher salt
3 large eggs
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1/2 ounce aged rum
Pinch kosher salt
1/4 cup plus 1/8 cup granulated sugar
12 ounces aged rum
6 ounces aged brandy
Freshly grated nutmeg, for garnish

Steps:

  • For the mulled cider: Combine the peppercorns, star anise, allspice, cinnamon, cloves and cardamom in a large stockpot over medium heat. Toast the spices until aromatic, 3 to 5 minutes. Pour in the cider, carrot juice, ginger juice, sugar, orange zest, nutmeg and kosher salt. Reduce the heat to low and let the mixture sit uncovered until the cider is aromatic and the spices are well infused, 1 to 2 hours. Strain the cider through a fine sieve or cheesecloth; discard the solids. (The cider can be made in advance and reheated prior to serving.)
  • For the eggnog batter: Separate the whites and yolks of the eggs into 2 medium size mixing bowls. Whip the yolks with the nutmeg, cinnamon, rum and salt. Gradually add 1/4 cup of the sugar. Mix until the texture is silky and the sugar is fully incorporated. Set aside.
  • Whip the egg whites on medium-high speed, gradually incorporating the remaining 1/8 cup of sugar. Whip until stiff peaks form.
  • Gently fold the egg white mixture into the yolk mixture. This batter has a lifespan of about one evening. Be sure to use fresh eggs as these will be served in a raw state.
  • To assemble the holiday eggnog: For each drink, mix together 4 ounces of the hot mulled cider, 2 ounces of the eggnog batter, 1 ounce of the rum and 1/2 ounce of the brandy in a heat-treated glass or mug. Garnish with grated nutmeg.

½ cup white sugar
½ cup brown sugar
1 large egg
⅔ cup eggnog
½ teaspoon brandy flavoring
2 dashes all-purpose flour
½ teaspoon baking soda
½ teaspoon ground nutmeg
¼ teaspoon salt
¾ cup powdered sugar, or more to taste
5 teaspoons eggnog, or more to taste
1 tablespoon unsalted butter, softened
⅛ teaspoon ground nutmeg
2 tablespoons multi-colored sprinkles, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cream butter, white sugar, and brown sugar for cookies in a large bowl. Add egg and beat well. Mix in eggnog and brandy flavoring until smooth.
  • Combine flour, baking soda, nutmeg, and salt in another bowl. Add to the eggnog mixture in 2 additions, mixing well after each addition until no dry flour remains.
  • Drop tablespoonfuls of dough 2 inches apart onto ungreased cookie sheets.
  • Bake in the preheated oven until the edges are just golden, 10 to 12 minutes. Let stand on the cookie sheets for 5 minute before removing to a wire rack to cool completely, about 30 minutes.
