BELGIAN ENDIVE AND HAM GRATIN RECIPE



Belgian Endive and Ham Gratin Recipe image

If you have some leftover ham on hand, use it to make this creamy dish. It's totally comforting and would be perfectly served with roasted veggies!

Number Of Ingredients 9

4 endives
1/2 tsp salt
4 slices Ham
¼ cup unsalted butter
1/2 cup all purpose flour
2 cups 2% milk
salt and pepper (to taste)
¼ tsp nutmeg
1/2 cup hard mountain cheese, (grated )

Steps:

  • Preheat your oven to 400 F degrees.
  • Add endive to a pot with boiling water. Simmer for 45 minutes, or until the endives are fork-tender.
  • Drain the endives in a colander. Squeeze the endives gently. Set aside.

Steps:

  • Heat 1/4 cup vegetable oil in a large nonstick skillet over medium-high heat. Add 4 halved heads endive cut-side down; season with salt. Cook until browned and softened, turning once, about 10 minutes. Add 2 tablespoons white wine vinegar, 1 tablespoon water, 1 teaspoon sugar and a pinch of salt. Simmer, turning to coat, until syrupy, about 30 seconds. Sprinkle with chives.

Yield Makes approximately 10 to 15 endives

Number Of Ingredients 4

1 head endive
1 cup of blue cheese, crumbled
1/2 cup spiced nuts , chopped
3 tablespoons honey

Steps:

  • Slice off the base of the endive and separate the endive leaves, carefully pulling them off at the base so they're intact.
  • Lay the leaves on a large servign tray in a decorative pattern - such as concentric circles or diagonal rows.
  • Fill the base of each leaf (the strongest and whitest part) with a heaping teaspoon of blue cheese crumbles. Sprinkle each with nuts and top with a drop or two of honey.
  • Now slip into something fabulous.
