Molten Chocolate Cake with Crushed Candy Canes image

1 1/4 sticks unsalted butter
Granulated sugar, for the ramekins
1/2 (6-ounce) bag semisweet chocolate chips
3 eggs
3 egg yolks
1 1/2 cups powdered sugar, plus a little more for dusting
1 teaspoon vanilla extract
1/2 cup all-purpose flour
2 candy canes, smashed to bits

Steps:

  • Preheat the oven to 425 degrees F.
  • Melt 1/4 a stick of butter in a small saucepan over low heat. Paint the inside of 6 ramekins or aluminum souffle cups with butter. Coat the inside of each ramekin with granulated sugar. Reserve.
  • Put the remaining stick of butter and chocolate chips in a large mixing bowl. Set the bowl on a saucepan filled with about 1-inch of boiling water. Be sure that the bowl is not touching the water. Gently stir the butter and the chocolate together until melted and the mixture is smooth. Turn off the heat and reserve.
  • Combine the eggs, yolks, sugar and vanilla in the bowl of a stand mixer. (This can also be done with a hand beater.) Beat the egg mixture until it doubles in size, and gets very thick and very pale.
  • Gently whisk the melted chocolate and butter into the egg mixture. Remove the bowl from the mixer and gently stir in the flour. Pour the batter into the prepared ramekins. Arrange the ramekins on a baking sheet and bake in the preheated oven for 14 to 15 minutes. Remove the cakes from the oven and let rest for 3 to 4 minutes.
  • Remove the cakes from the ramekins, and arrange them on individual serving plates. Dust with powdered sugar and garnish with crushed candy cane.
  • HOHOHOHOHO!!!

SUPER EASY MOLTEN CHOCOLATE CAKE

Martha Stewart's SUPER EASY, SUPER RICH molten chocolate cake. I always thought making these would be so hard, but this is SO EASY! They're small (individual cupcake sized), but I'm sure you could use ramekins or something. They're also crusted with sugar after they come out of the oven. mmm. Martha said it makes exactly 6 cakes (1/4 cup of batter each), but I guess my muffin tins must run small, because I filled 6 and had enough for 2 more left over. I would butter and sugar extra tins first, and then wipe them out if they're unneeded, because it's hard to butter and sugar tins when there's batter in some. You can also melt the chocolate either in the microwave (use 1-2 minute increments, and stir between), or in a double boiler over the stove.

Steps:

  • 1. Preheat your oven to 400°F Butter 8 cups of your muffin tin (if you find that the batter doesn't fill all 8, you can just wipe them out later). Make sure there are no globs of butter in the cup though, because it'll make your cake mushy. Spoon some granulated sugar into each cup, swirling to make sure the cup is completely lined.
  • 2. Next, cream the butter and granulated sugar. Add the eggs one at a time, incorporating them into the butter after each addition. Beat in flour and salt on low speed until combined. Then add in the molten chocolate, and beat until combined. At this point my batter was really runny, but Martha's on her video was more like cookie/cake batter. They both turn out fine.
  • 3. Divide the batter among the muffin tins using a 1/4 cup measure, or until 3/4 full. These will rise some, so make sure you leave extra room.
  • 4. Put the tin into the heated oven, and bake until the middle of the cakes no longer jiggle, about 8-12 minutes. Make sure you don't overcook it or you'll end up with chocolate cupcakes! Remove the tin from the oven, and let it sit for 10minutes before turning the cakes out.
  • 5. Place them wide side down onto a plate, dust with confectioner's sugar, and serve with vanilla ice cream or whipped cream.

100g butter, plus extra to grease
100g dark chocolate, chopped
150g light brown soft sugar
3 large eggs
½ tsp vanilla extract
50g plain flour
single cream, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Butter 6 dariole moulds or basins well and place on a baking tray.
  • Put 100g butter and 100g chopped dark chocolate in a heatproof bowl and set over a pan of hot water (or alternatively put in the microwave and melt in 30 second bursts on a low setting) and stir until smooth. Set aside to cool slightly for 15 mins.
  • Using an electric hand whisk, mix in 150g light brown soft sugar, then 3 large eggs, one at a time, followed by ½ tsp vanilla extract and finally 50g plain flour. Divide the mixture among the darioles or basins.
  • You can now either put the mixture in the fridge, or freezer until you're ready to bake them. Can be cooked straight from frozen for 16 mins, or bake now for 10-12 mins until the tops are firm to the touch but the middles still feel squidgy.
  • Carefully run a knife around the edge of each pudding, then turn out onto serving plates and serve with single cream.

2 tablespoons flour
6 ounces bittersweet chocolate, chopped

1 teaspoon vanilla extract
1 pinch salt
sweetened cocoa, as garnish

Steps:

  • Preheat the oven to 450 degrees F.
  • Butter and flour 4 (6-ounce) ramekins or baking dishes, tapping out the excess flour.
  • Set on a baking sheet.
  • In a double boiler, or a glass bowl set over a pan of boiling water, melt butter with the chocolate, cream, and powdered sugar, stirring until smooth.
  • Remove from the heat.
  • In a separate bowl, whisk together the eggs, egg yolks, sugar, vanilla, and salt until thick ribbons form, about 3 minutes.
  • Sift flour into the egg mixture and fold together.

7 1/2 ounces imported bittersweet chocolate (preferably El Rey or Valrhona), coarsely chopped
11 tablespoons unsalted butter, cut in large pieces
3 large eggs
3 large egg yolks
1/4 cup plus 2 tablespoons white granulated sugar
5 tablespoons all-purpose flour, sifted

Steps:

  • Preheat the oven to 325 degrees.
  • Butter and flour six 6-ounce custard cups.
  • Place 5 1/2 ounces of the chocolate and the butter in a metal bowl, and set it over a pan of simmering water. Stir until melted and smooth. Cool slightly.
  • Using a standard electric mixer with the whisk attachment, beat the eggs, yolks and sugar at medium-high speed until they are pale and thick, about 10 minutes.
  • Reduce the speed, and gradually mix in the flour.
  • Add the chocolate mixture to the flour mixture, and continue to beat until thick and glossy, about 5 minutes.
  • Divide half of the mixture among the prepared custard cups. Divide the remaining 2 ounces of coarsely chopped chocolate among them, placing the chunks in the very center of the chocolate mixture (there should be about 1 tablespoon of chopped chocolate per custard cup). Then top with the rest of the chocolate batter.
  • Bake until the cake is set around the edges but the center jiggles slightly when the cup is moved, about 12 minutes. Cool slightly (no more than 5 minutes).
  • Run a sharp knife around the edges of the cups. Turn the cakes out onto plates, and serve.

  • Using electric mixer, beat eggs, yolks, 4 tablespoons sugar, vanilla, 1 teaspoon espresso powder and salt in medium bowl until very thick ribbon falls when beaters are lifted, about 6 minutes. 1 egg yolk

Steps:

6 tablespoons unsalted butter, room temperature, plus more for ring molds
12 ounces semisweet chocolate
5 large eggs, separated
10 tablespoons sugar
1/2 teaspoon pure vanilla extract
6 Chocolate Truffles
Earl Grey Ice Cream
Chocolate curls, for garnish (optional)

Steps:

  • Butter six ring molds measuring 2 1/2 inches high and 2 3/4 inches in diameter. Place on baking sheet lined with parchment paper, and set aside.
  • Place the chocolate and butter in a medium heat-proof bowl set over a pan of simmering water, and heat until melted. Stir mixture to combine.
  • Combine the egg yolks and 6 tablespoons sugar in a large bowl, and whisk until mixture is pale yellow and thick, 3 to 5 minutes. Stir in the vanilla extract. Add the chocolate mixture to egg-yolk mixture, and stir to combine.
  • Place the egg whites in the bowl of an electric mixer fitted with the whisk attachment, and beat until frothy. Add the remaining 4 tablespoons sugar, and whisk until stiff peaks form. Fold egg-white mixture into chocolate mixture.
  • Spoon about 1/4 cup batter into each ring, and place a truffle in the center of each. Spoon the remaining batter over the truffles, and place in the freezer to set, at least 1 hour.
  • Preheat the oven to 350 degrees. Transfer the baking sheet with the filled ring molds to the oven, and bake cakes for 20 to 25 minutes, or until sides are set but center is still soft. Using a thin spatula, carefully transfer the cakes (still in the ring molds) to a serving plate. Lift the ring molds, and remove them. Serve the cakes warm with Earl Grey ice cream, and garnish with chocolate curls, if desired.

Steps:

  • 1. Preheat the oven to 375°F. Liberally grease the ramekins with softened butter and dredge the inside with sugar. Line the prepared ramekins on a baking sheet and set aside.
  • 2. In the bowl of a stand mixer fitted with the whisk attachment, beat the eggs, egg yolks, and 3/4 cup sugar on medium-high speed until very pale and nearly tripled in volume (the foam will hold a "ribbon" when drizzled over itself), about 10 minutes.
  • 3. While the eggs are whipping, in a bowl set over a pan of barely simmering water, melt the chopped bittersweet and unsweetened chocolates with 1 1/4 cup butter. Keep warm.
  • 4. Transfer the egg foam to a large mixing bowl and add the melted chocolate. Gently fold until almost completely combined. Sprinkle the flour over the mixture and continue folding just until the flour is incorporated and the batter is blended.
  • 5. Divide the batter among the prepared ramekins, filling them almost to the top. Bake until the edges are set and the middle of the cake is starting to dry and sink slightly, about 10 minutes (take care not to overbake the cakes or the center will not be molten). Using a small sharp knife, loosen the edges of the cakes then invert each one onto a serving plate. Dust with confectioners' sugar, if desired, and serve warm.

2 (3.5 ounce) packages instant vanilla pudding mix
4 cups milk
1 (16 ounce) package frozen whipped topping, thawed
1 (16 ounce) package prepared chocolate frosting

Steps:

  • Line the bottom of a 9x13 inch baking pan with graham crackers. In a large bowl, combine the milk and vanilla pudding according to directions on box. Fold in the whipped topping. Spread a layer of the pudding mixture over the graham crackers. Alternate the graham cracker and pudding layers up to the top of the pan. Cook the container of prepared frosting, uncovered in the microwave for 1 minute on half power. Pour over the top of the cake. Refrigerate for at least 12 hours before serving.
