2 cups whole-grain bow-tie pasta
1 teaspoon olive oil
2 cups sliced cremini mushrooms
½ cup chopped onion
⅓ cup chopped celery
⅓ cup chopped red bell pepper
⅓ cup chopped carrot
1 ½ cups light Alfredo sauce (such as Classico® Light Creamy Alfredo)
½ cup light sour cream
¼ cup grated Parmesan cheese
2 teaspoons snipped fresh dill
¼ teaspoon ground black pepper
1 (5 ounce) can solid white tuna (water pack), drained and broken into chunks
⅓ cup whole wheat panko bread crumbs
4 wedges lemon wedges

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat a 2-quart baking dish with nonstick spray.
  • Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain and set aside.
  • Meanwhile, heat oil in a large skillet over medium heat. Add mushrooms, onion, celery, bell pepper, and carrot; cook until vegetables are tender, about 8 minutes.
  • Whisk together Alfredo sauce, sour cream, 2 tablespoons Parmesan, dill, and black pepper in a large bowl. Stir in cooked pasta, vegetables, and tuna until combined. Transfer to the prepared dish. In a small bowl, stir together panko and remaining 2 tablespoons Parmesan; sprinkle over casserole. Lightly coat with nonstick spray.
  • Bake in the preheated oven, uncovered, until browned and bubbly, about 25 minutes. Serve with lemon wedges.

This tuna noodle casserole is the best with a classic creamy taste from my childhood. The sauce is rich and creamy but not overwhelmingly heavy. The crunch from the topping and fresh bite from the parsley create the perfect balance. Let's not forget that this is a great budget-friendly meal to feed a crowd!

1 (12 ounce) package egg noodles
4 ¼ teaspoons kosher salt, divided
4 tablespoons salted butter, divided
5 teaspoons olive oil, divided
1 (8 ounce) package sliced fresh mushrooms
1 small white onion, minced
¼ cup all-purpose flour
2 cups milk
1 ½ cups chicken stock
2 tablespoons lemon juice
1 teaspoon Dijon mustard
½ teaspoon ground black pepper
1 ½ cups shredded white Cheddar cheese
1 cup frozen sweet peas
2 (6 ounce) cans tuna, drained
1 cup panko bread crumbs
¼ teaspoon ground paprika
2 tablespoons finely chopped fresh parsley

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Bring a large pot of water to a boil. Add egg noodles and 3 teaspoons salt to the boiling water; cook until tender yet firm to the bite, about 6 minutes. Drain noodles. Return to pot and set aside.
  • Heat 2 tablespoons butter and 1 tablespoon oil in a large skillet over medium-high heat. Add mushrooms and onion and cook until mushrooms are softened and onions are translucent, about 4 minutes. Add remaining butter; stir constantly until melted. Sprinkle flour over vegetable mixture and cook, stirring constantly, for 1 minute. Stir in milk and stock and bring to a simmer, stirring often. Simmer for 5 minutes. Stir in lemon juice, Dijon mustard, 1 teaspoon salt, and pepper.
  • Add sauce mixture to reserved noodles. Stir in 1 cup Cheddar cheese, peas, and tuna. Pour mixture into the prepared baking dish and sprinkle remaining Cheddar cheese over the top.
  • Stir together bread crumbs, remaining 2 teaspoons oil, remaining 1/4 teaspoon salt, and paprika in a small bowl. Sprinkle bread crumb mixture evenly over the casserole.
  • Bake in the preheated oven until golden and bubbly, 25 to 30 minutes. Sprinkle with parsley and serve.

My Mom's Awesome Tuna Noodle Casserole image

If you're looking for a different-than-the-potato-chip-covered tuna casserole, look no further than the one I grew up with. It's almost like a strata or custard - give it a try! I've never had a better tuna casserole! It tastes even better the second day and freezes well when cut and wrapped in individual pieces. I recommend American cheese over Velveeta - tried it once and it just wasn't the same. You can use a larger can of tuna if you like.

3 cups uncooked egg noodles
1/2 teaspoon salt
1 (10 ounce) can cream of mushroom soup
1 3/4 cups milk
1 1/2 cups diced American cheese
2 tablespoons butter, melted
1 small onion, minced
1 (6 ounce) can tuna, undrained
1/4 teaspoon pepper
1 1/2 cups soft bread cubes
3 eggs, slightly beaten
2 teaspoons caraway seeds

Steps:

  • Prepare egg noodles as directed on the package; drain.
  • In a 13x9" baking dish, combine noodles with all remaining ingredients.
  • You may want to combine all the ingredients in a large bowl, then pour into the baking dish (it's a little less messy).
  • Shake paprika on top for color.
  • Set dish in another pan of hot water so that the hot water reaches 1/2 way up the sides of the baking dish.
  • Bake at 350F for 1 1/2 hours, or until set.
  • Let stand for 5 minutes, cut into serving pieces, and eat!
  • Serve with a salad for a complete meal.

Enhanced version of the old stand-by. Tuna noodle casserole has always been a favorite but this "enhanced" version is something special.

2 (5 ounce) cans tuna in water
2 (4 1/2 ounce) cans diced green chilies
2 (10 ounce) cans cream of mushroom soup
1 1/4 cups milk
1 (15 ounce) can peas
1 (12 ounce) bag noodles
1 1/2 cups Velveeta cheese
chips

Steps:

  • Cook noodles until just bearly softened I don't like noodles that are more than al dente.
  • I finally found a brand that makes noodles that are thicker than usual- I cook them until bearly softened and let them absort the tasty liquid of the casserole.
  • Meanwhile in a large bowl combine the drained tuna, the green chillis, mushroom soup and milk-.
  • Stir to combine,then add peas and gently fold in to tuna mixture.
  • Add noodles.
  • Stir to combine.
  • Pour in to 9x13 inches baking dish that has been strayed with PAM.
  • I usually let the dish set for 30-45 minute at this point so that the noodles can absorb the liquid of the dish.
  • Put cubed Velveeta evenly on top of tuna mixture.
  • Cover with foil and bake @ 350 degrees for 45/60 minutes or until bubbly.
  • Remove foil and sprinkle with crushed chips.-GARDEN SALSA SUNCHIPS-(I couldn't get this accepted).
  • Return to oven for another 10/15 minutes.
  • If you're not a tuna fan-try this with stewed chicken breast and cook the noodles in the chicken broth. YUM!
