1/2 taza de aderezo Mil Islas reducido en grasa KRAFT Lite Thousand Island Dressing
1 cucharada de cilantro picado
4 chayote s medianos, cortados en cubitos y cocidos
1 taza de tomates (jitomates) cereza
1 taza de zanahoria s rebanadas, cocidas y escurridas

Steps:

  • Mezcla el aderezo con el cilantro.
  • Mezcla en un recipiente grande los chayotes, los tomates y las zanahorias. Agrega la mezcla del aderezo; revuelve ligeramente. Cubre.
  • Refrigera por lo menos 1 hora antes de servir la ensalada.

Chayote Salad Recipe | Chayotes are also added to many stews (like the well-liked Caldo de Res and Caldo de Pollo), cooked on their own in a tomato sauce, and also battered fried and served on top of a rich tomato sauce.

2 chayotes (large)
2 tablespoons olive oil
1 tablespoon mild vinegar
1 tablespoon water
1 tsp oregano Mexicano
1/2 tsp. salt
¼ tsp freshly ground pepper
¼ white or red onion (cut into thin slices or chopped)
½ cup Mexican Queso Fresco (cut into cubes)

Steps:

  • Place chayotes in a saucepan and cover with water. Cook over medium-high heat until they are soft and a knife can be inserted easily. This process will take about 15 to 20 minutes depending on the size of the chayotes and how tender they are. Usually, larger chayotes take longer to cook.
  • While the chayotes are cooking, mix the olive oil, vinegar, salt, and pepper in a small bowl. Before adding the oregano to the dressing, crush the oregano with the tips of your fingers. Add the oregano to the dressing along with the onion and mix. Taste and add more salt if needed, based on your personal taste.
  • Once the chayotes are cooked, gently remove from the saucepan using cooking tongs and drain. Now, with the help of a vegetable peeler, remove the peel. Cut the chayote into cubes or slices.
  • Place the chayotes on a serving plate and drizzle with the dressing. You can serve this salad either cold or warm. As I mentioned above, you can also add some Queso Fresco cubes to the salad. Enjoy!

3 chayotes, about 3/4 to 1 pound each
Salt to taste, if desired
2 teaspoons imported mustard
2 tablespoons red wine vinegar
6 tablespoons peanut, vegetable or corn oil
Freshly ground pepper to taste
2 teaspoons finely minced garlic
1/4 teaspoon dried hot-pepper flakes
1 cup thin-sliced red onion
3 cups thin-sliced, halved red ripe tomatoes if available
1/4 cup finely chopped parsley
2 flat fillets of anchovies, cut in small pieces

Steps:

  • Using swivel-bladed paring knife, peel chayotes. Split in half and put in kettle with water to cover and salt to taste. Bring to boil and let simmer about 15 minutes or until just tender when pierced with fork. Drain and run briefly under cold water. Drain again. The seeds are edible.
  • Cut each half crosswise. Cut the halves lengthwise into quarter-inch-thick slices. There should be five cups or slightly less.
  • Put mustard, vinegar and oil in salad bowl. Blend well. Add salt and pepper to taste. Add chayotes and remaining ingredients. Blend well and serve cold.

A pleasant, somewhat summery side dish from M.S. Milliken & S. Feniger. Especially good with flaky white fish or grilled chicken. I think that the salad and veggie seasoning adds a nice flavor, but omit it if you are avoiding MSG. The chayote is just fine without it.

6 chayotes, peeled (also known as mirliton or chuchu in some regions)
1/4 cup olive oil
1 large onion, diced
3 cloves garlic, minced
2 tomatoes, cored,seeded and diced
1/2 cup water
1 envelope salad and veggie seasoning (I use Goya brand) (optional)

Steps:

  • Quarter the chayote.
  • Remove and discard the center seed of each.
  • Cut into 1/4-inch slices.
  • Bring a large pot of salted water to a boil, add the chayote, and boil for 5 minutes.
  • Drain.
  • Heat the olive oil in a large skillet over moderate heat.
  • Cook the onions until translucent, about 5 minutes.
  • Add the garlic and cook for 1-2 minutes longer.
  • Add the chayote, tomatoes, and water.
  • Bring to a simmer, cover, and cook over low heat for 10 minutes.
  • Serve immediately.
  • NOTE: If you can't locate chayotes (usually found in the tropical or exotic produce section), try using zucchini or cucumbers (yes, cucumbers can be cooked like zucchini).
  • These are the closest matches to chayote, taste- and texture-wise.

  • Coloca los chayotes en una cacerola y cúbralos con agua; cocina a fuego medio-alto hasta que estén suaves, revisa con un cuchillo chuzándolos para ver si están blandos. Este proceso tomará cerca de 15 a 20 minutos dependiendo del tamaño de los chayotes y de cuan tiernos sean. Por lo general, los chayotes más grandes tardan más en cocinar.
  • Mientras los chayotes se están cocinando, mezcla el aceite de oliva, el vinagre, la sal y la pimienta en un tazón pequeño. Antes de que añadas el orégano, aplástalo con las puntas de los dedos; añada el orégano al aderezo junto con la cebolla y mezcle. Prueba y agrega más sal si es necesario, de acuerdo al gusto.
  • Una vez que los chayotes estén cocidos, retira suavemente de la cacerola con las pinzas de cocinar y retira el agua. Ahora, con la ayuda de un pelador de verduras, quita la cáscara, corta el chayote en cubos o rodajas.
  • Sirva los chayotes en un plato y rocía el aderezo encima, puedes servir esta ensalada fría o caliente. Como te he mencionado anteriormente, también puedes añadir algo de queso Fresco en cubos para la ensalada.
