You know that something with a name like this is going to be good and this truly is! The traditional recipe itself is very simple but the method for making it is not, so I developed this "cold oven cheater method" which is much safer and easier. The end result is an amazing flavor and texture combination of fatty sausage links, crispy, puffed, and tender Yorkshire pudding, and delicious onion gravy. And the gravy is so good you'll want to eat it on just about anything (and everything!)

4 large eggs
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 pinches cayenne pepper
1 cup all-purpose flour
1 tablespoon all-purpose flour
¾ cup whole milk
¼ cup cold water
¼ cup vegetable oil
4 links pork sausage
2 tablespoons butter
1 large red onion, minced
kosher salt to taste
3 tablespoons all-purpose flour
2 cups chicken broth
¼ teaspoon Worcestershire sauce
1 teaspoon balsamic vinegar
2 tablespoons Onions, spring or scallions (includes tops and bulb), raw
1 teaspoon chopped fresh chives, or to taste

Steps:

  • Prepare batter: Combine eggs, salt, pepper, cayenne, 1 cup plus 1 tablespoon flour, and milk in a large bowl; whisk thoroughly until batter is very smooth and no lumps remain. Whisk in water. Cover and let rest at room temperature for 1 hour.
  • Prepare sausages: Heat vegetable oil in a skillet over medium-high heat. Add sausages and cook until browned, 2 to 3 minutes per side. Remove from the heat and transfer to a buttered 9x12- or 9x13-inch baking dish. Pour oil from the skillet over the sausages; brush oil with a pastry brush all over the bottom and up the sides of the dish.
  • Start onion gravy: Melt butter in the same skillet over medium-high heat. Add onion and salt; saute until soft and starting to brown, 5 to 6 minutes.
  • While onion is cooking, pour batter in and around the sausages. Place in the center of a cold oven and turn temperature to 500 degrees F (260 degrees C). Set oven timer for 30 minutes.
  • While toad in the hole cooks, finish onion gravy: Stir in flour and cook for about 2 minutes. Whisk in chicken broth and return to a simmer. Add Worcestershire sauce and balsamic vinegar and simmer until gravy thickens up and reduces, about 5 minutes. Reduce heat to low and stir in green onions. Taste and adjust seasoning.
  • When timer goes off, remove toad in the hole from the oven; it should be browned and puffed. Spoon gravy over the sausages and garnish with green onions and chives.
  • Serve with extra gravy.

8 links of pork sausage
1 tablespoon of vegetable oil
2 cups of all-purpose flour
4 eggs
1 cup milk
salt and pepper (to taste)

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Pour the vegetable oil into the bottom of an 8x12 or 9x9 baking dish. You can use a metal or ceramic casserole dish. Place the sausages in the dish in a single layer and bake for 10 minutes in the preheated oven.
  • While waiting, whisk flour, eggs, and 1/2 cup of milk in a medium bowl. Gradually mix in the rest of the milk until the mixture forms a smooth batter. Season with salt and pepper.
  • Take the sausages out of the oven and pour the batter over them, covering them 3/4 of the way. Place the dish back into the oven and bake for another 35 minutes or until the center has risen and turned golden brown. If the underside seems a little soft - that's okay, that's how it's supposed to be.

Lard or vegetable shortening, for baking pan
1 cup plus 2 tablespoons all-purpose flour
Pinch salt
3 medium eggs
3/4 cup plus 2 tablespoons milk
1 pound pork sausages, preferably Cumberland
1 to 2 tablespoons lard or vegetable shortening
Prepared English mustard, for serving

Steps:

  • Heat oven to 425 degrees. Coat a small roasting pan with lard or shortening. Combine flour and salt in a medium bowl. Make a well in the center, and add eggs. Transfer to a food processor fitted with a steel blade. Add milk and 3/4 cup water plus 2 tablespoons water; process until well combined. The batter will be fairly thin and pourable.
  • Arrange the sausages in the prepared pan so that they are not touching one another or the sides of the pan. Bake for 10 minutes. Quickly pour batter over partially cooked sausages, and bake until the batter is thoroughly cooked, puffed, and crispy brown on top, 30 to 35 minutes. Serve immediately with mustard.

1/2 teaspoon salt

1 package (12 ounces) uncooked maple breakfast sausage links
3 tablespoons olive oil

Steps:

  • Preheat oven to 400°. In a small bowl, whisk eggs, milk and salt. Whisk flour into egg mixture until blended. Let stand 30 minutes. Meanwhile, cook sausage according to package directions; cut each sausage into 3 pieces., Place oil in a 12-in. nonstick ovenproof skillet. Place in oven until hot, 3-4 minutes. An easy, filling and tasty proper Toad-in-the-hole, the way it should be.

8 fat pork or beef sausages (frozen or fresh)
113g / 4oz plain flour
1 medium egg
250ml / 8 floz semi-skimmed milk
A pinch of salt and pepper

Steps:

  • Preheat the oven to 180c fan, 200c, gas 6
  • Place the sausages (fresh or frozen) in a medium roasting tin or roasting dish (Mine measures 12"x7") and cook in the oven for 10-15 mins until lightly browned and the oil is starting to come out of sausages
  • While the sausages are in the oven, prepare the batter.
  • Put the flour in to a medium bowl (I don't bother sifting), make a well in the centre using the unbroken egg then crack the egg into it. Add a little of the milk and start to whisk the egg/milk into the flour. Add the milk in bit by bit. Add a pinch of salt and pepper. Whisk to ensure no lumps.
  • Leave to one side.
  • After 10-15 mins take the sausages out of the oven, shut the oven door to keep the heat in and quickly pour the batter evenly over the sausages then put straight back in the oven for another 35-45 mins. (Do not open the oven door during this time) When done the Yorkshire will be risen and deep golden all over. (if the pudding starts to brown too quickly during cooking, turn down to 150 degs and leave 5 mins longer)
  • Serve cut into portions with mashed or new potatoes, veg and gravy.

1 red onion, cut into wedges, layers separated
8 thick low-fat pork sausages
1 teaspoon olive oil
100 g plain flour
1 medium egg
300 ml skim milk
2 teaspoons coarse grain mustard
1 teaspoon fresh thyme leave

Steps:

  • Preheat the oven to 200C/Gas 6/fan oven 180°C
  • Tip the onions into a small shallow non-stick tin (about 23x30cm/ 9x12in). Arrange the sausages on top of the onions, then add the oil and roast for 20 minutes.
  • Sift the flour into a bowl, drop the egg in to the centre and beat in the milk a little at a time until it makes a smooth batter. Stir in the mustard and thyme and season.
  • Pour the batter quickly into the tin and return to the oven for 40 minutes until the batter is risen and golden.

found this recipe in a magazine while waiting at the doctors office one day. not sure how old the magazine was, but this looked neat and i decided to try it on my kids. They LOVED it! now they cant get filled up on their toast before even touching their eggs. *I usually add a side of 2 half pieces of bacon to add some meat to the dish, other than that, its great on its own.

1/4 cup cheddar cheese, grated
1 dash salt
cooking spray

Steps:

  • Cut a hole in the middle of each slice of bread with a medium sized round cookie cutter.
  • Preheat a frying pan over medium high heat.
  • Spray pan with cooking spray.
  • When the pan gets hot, place bread in the pan making sure it is flat on the bottom of the pan.
  • Crack each egg into the hole of each slice of bread.
  • Cook eggs however you would normally cook them.i.e. sunny side up, over easy, over medium.,,.
  • Sprinkle cheese over top at the last minute of cooking.
  • Serve.
