HIGH-FIBER BREAKFAST MUFFINS



High-Fiber Breakfast Muffins image

This delicious muffin makes wholesome eating fun. This muffin is low in fat, and has good carbs and lots of fiber. It's great for heart health and wonderful for diabetics because of the oats, fiber, and low fat. It's also not too heavy like most high-fiber muffins and it tastes great. It just uses one bowl, which make everyone's life easier!

1 cup old-fashioned oats
1 cup all-purpose flour
½ cup whole wheat flour
¾ teaspoon baking powder
½ teaspoon baking soda
¾ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon sea salt
1 cup unsweetened applesauce
2 egg whites
½ cup skim milk
½ cup brown sugar
2 tablespoons canola oil
2 teaspoons vanilla extract
½ cup fresh raspberries
¼ cup fresh blueberries
¼ cup fresh blackberries

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line 12 muffin cups with paper or foil liners, or grease if not using liners.
  • Combine oats, all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, salt, applesauce, egg whites, milk, brown sugar, oil, and vanilla in a large bowl. Mix until blended. Fold in raspberries, blueberries, and blackberries. Divide batter evenly into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 15 to 17 minutes.
  • Let muffins cool for 5 minutes in the pan before transferring to a cooling rack.

These are an adult healthy banana nut muffin, definitely not a kid friendly muffin. These are very dense. I found the original recipe on cooks.com but have changed it some to suit our tastes. We keep these in the freezer and then take a couple out and put them in the microwave for about 30 seconds to defrost. Sometimes for a little more sweetness I add some dried cranberries too!

3/4 cup self rising flour
1/2 cup whole wheat pastry flour
2 -3 ripe to over ripe bananas
1 cup Fiber One cereal, crushed (some large pieces are good)
1 teaspoon vanilla
2 tablespoons Splenda brown sugar blend
1 teaspoon cinnamon
1/4 cup applesauce
1 egg, beaten
1/2 cup skim milk
1/2 cup pecan pieces

Steps:

  • Heat oven to 425F degrees.
  • In large mixing bowl place 1 cup Fiber One cereal and 1/2 cup milk. Mix in 2 to 3 pureed bananas and let stand 5 minutes.
  • After 5 minutes add all ingredients except for flour. Mix well.
  • Add flour and mix to even consistency.
  • Bake in greased muffin tins for 20 to 25 minutes until tops are lightly browned.
  • When done, loosen from muffin tin and let cool.

  • bake for 25 minutes at 350 degrees.
  • allow to cool before removing from pan.

I based this on the Tweaked All Bran Muffins, but not having all the ingredients handy, I made substitutions. They turned out really well. If you make 18 muffins, one muffin = 72 calories 0.3 gram fat 18 grams carbohydrate 3.4 grams fiber 2.3 grams protein

2 cup(s) fiber one original cereal
1 1/4 cup(s) fat free buttermilk
1/4 cup(s) egg beaters egg substitute
1/2 cup(s) xylitol sweetener (like ideal brown no calorie sweetener)
1/4 cup(s) brown sugar
1/4 cup(s) apple butter or applesauce
1 1/4 cup(s) all purpose flour
1 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
1/2 teaspoon(s) salt

Steps:

  • Preheat oven to 400 degrees. Combine cereal and buttermilk and let set for 10 minutes. Then stir in egg beaters, xylitol sweetener, brown sugar and apple butter until all is mixed well.
  • Stir together dry ingredients. Stir dry ingredients quickly into cereal mixture, just until combined. Spoon into greased muffin tins, filling cups half-full and making 16 - 18 muffins.
  • Bake about 20 - 22 minutes, until top springs back lightly when touched. Cool 2 minutes in pan, then flip muffins over individually in the cups to finish cooling, bottoms up.
