A hearty chicken chili in a tomato base with lots of beans, corn, and peppers makes a great family dinner or lunch.

Steps:
- In a large stockpot, cook the onion and the chicken in the olive oil over medium heat, until the chicken is cooked through.
- Add the peppers, spices, and tomatoes, and stir.
- Add the rinsed and drained beans, corn, broth, and water, and bring to a boil.
- Reduce heat to medium low and cook for about 25 minutes to allow the flavors to blend.
- In a small container with a lid, combine the gluten free flour blend and 3 Tablespoons of water. Shake well. Add to the chili a little bit at a time, stirring constantly to thicken.
- Add more salt, pepper, or spices according to your taste.
- Serve with corn chips or gluten free crackers.

- Cook pasta as directed on package.
- Meanwhile, heat oil in large skillet on medium-high heat. Add chicken. Cook and stir 6 min. Add peppers, dressing and chili powder; cook 3 min. or until chicken is done, stirring frequently. Stir in salsa and sour cream.
- Drain pasta. Toss with chicken mixture. Sprinkle with cheese.

- In a large bowl, combine the soups, tomatoes, picante sauce, green pepper, onion and chili powder. In a greased 13x9-in. baking dish, layer half of the tortilla strips, chicken, soup mixture and cheese. Repeat layers. , Cover and bake at 350° until bubbly, 40-50 minutes. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

FIESTA STEAK CHILI
This is a basic recipe for non-traditional chili using steak. My wife is allergic to chili powder, so I don't use any in this recipe, but you are welcome to add some if you like. This is a very tame, full-flavor, colorful chili recipe that even the kids will like. There are plenty of other variations that you can use with this basic recipe, please change at will. Things we have tried include adding three or four fresh jalapenos, or adding Tabasco® habanaro sauce, or cilantro, or fresh tomatoes, or using red, yellow, orange, and green peppers, or hamburger instead of a steak or roast. Serve with tortilla chips, cheese and sour cream.

- Heat oil in a large pot over medium heat. Cook and stir steak and ground black pepper in hot oil until browned on all sides, 5 to 10 minutes.

- Cut chicken breasts into 1/2-inch strips.
- Spray a wide bottom sauce pot or 12-14 inch skillet with a nonstick spray and heat over a medium heat until hot. Add the chicken and red pepper, cook until chicken is browned and fully cooked.
- Remove from pan, set aside and keep warm.
- In same pan add the onion, cook for 30 seconds. Add the water, rice, chili powder, corn and salsa; simmer for 10 minutes or until rice is done.
- Serve chicken and peppers over the rice with chopped cilantro.

FIESTA CHILI
Steps:
- 1. Brown the beef, pork and chorizo in a nonstick skillet. Drain off the fat.
- 2. Heat oil in a heavy pot over low heat; cook onions, garlic, and bell peppers for 15 minutes or until tender. Stir in the next 9 ingredients; cook 2 to 3 minutes to mellow the flavors.
- 3. Add jalapeños, tomatoes, tomato sauce, beans, and the browned meats. Heat through. Add beer, then simmer 15 minutes, stirring once or twice. Season with salt. Serve with grated cheese, if desired.
FIESTA CHICKEN WITH CHILI
This is a quick and simple recipe I came up with. We were in process of changing our kitchen over to a low carb kitchen so decided to pull this dish together. Some people add a 1/4 tbsp. of chili power to the chili. Others have added 1 tbsp of taco seasoning to the vegetable sauce to begin with. To make this recipe truly low carb substitute in vegetarian 'ground beef' for the red kidney beans.

Steps:
- Preheat the oven to 375 degrees F.
- Mix the Diced Tomatoes with Chiles, Green Peppers, Garlic Salt, and Olive Oil in a ceramic, glass, or plastic bowl.
- If possible, do not use a metal bowl, especially copper.
- Metal may react with the tomato and diminish the overall taste.
- Cut the chicken breasts in half if desired.
- Spray your non-metal cooking pan with an Olive Oil Spray and lay the chicken in the pan.
- Spoon the vegetable mixture onto the chicken with just the edges of the chicken showing.
- Mix the vegetables every time you spoon the mixture onto the chicken so the oil does not separate.
- You should use about half the of the vegetable mixtures.
- Pour as much of the juice of the vegetable mixture into the empty areas in your cooking dish as you can.
- For clean up its best not get any of the tomatoes your pan.
- Cover and place the dish with the chicken in the oven for 25-30 minutes.
- Place the rest of the vegetable mixture and the Kidney Beans, Tomato Juice, and Water into a sauce pan.
- Heat the chili mixture on low about 10 minutes before the chicken is done.
