Fish Cakes Fast and Simple image

I'm a simple man therefore I like simple things and this little recipe is very simple and quick to make. Great for a camping trip where you'll cook your catch the same night. I've done it many times. You can use any type of fish making this. Serve with a Tarter or Hollandaise sauce and enjoy.

1 lb boneless fish fillet
5 large potatoes
3 tablespoons chopped onions
2 eggs
1 tablespoon water
salt and pepper

Steps:

  • Peel and cut up potatoes.
  • Place in pot with fillets and cover with cold water.
  • Boil until the potatoes are"fork done".
  • Drain off the water.
  • Mash the potatoes and fish together.
  • Mix chopped onion, eggs, and 1 tablespoon water.
  • Add this to the fish and potatoes and mix well.
  • Form the mixture into hamburger size patties.
  • Season with salt and pepper and fry in well greased skillet until golden brown on both sides.

catsup, for topping

Steps:

  • Mix all ingredients together except for the breadcrumbs.
  • Shape the mixture into 6 patties.
  • Press each side of the patty into the breadcrumbs.
  • Bake at 350 for 20 minutes.
  • Enjoy!

Nova Scotia Fish Cakes image

Flaky white fish and potatoes come together with a crisp bread-crumb coating in this recipe, adapted from Judith Sanders and brought to The Times by Joan Nathan after a 2012 trip to Nova Scotia. You'll want to serve these warm, with tartar sauce, chutney, chowchow - or a tart splash of lemon.

Number Of Ingredients 13

1 pound haddock, cod, halibut or any other flaky white fish
1 cup milk
1 pound (about 2 medium) russet potatoes, peeled
Salt and pepper to taste
2 tablespoons butter
4 scallions, thinly sliced
3 large eggs
1 teaspoon Worcestershire sauce
2 tablespoons chopped parsley
2 cups bread crumbs for dredging
Corn oil, for frying
Tartar sauce, chutney or chowchow, for serving
Juice of 1 lemon, as needed, optional

Steps:

  • Put the fish and milk in a medium saucepan. Refrigerate at least an hour.
  • Peel the potatoes and put in a saucepan with water to cover. Bring to a boil, then simmer for 20 to 30 minutes, until the potatoes are soft. Drain thoroughly, mash and season well with salt and pepper.
  • In a small skillet, melt butter, add scallions and cook until soft, 1 to 2 minutes.
  • Remove the fish from the refrigerator and place over medium-low heat. Bring the milk to a simmer and cook the fish until flaky, 5 to 7 minutes; do not overcook. Remove from heat, drain off the milk and allow to cool. Using a fork, break the fish into large flakes.
  • Lightly beat one of the eggs and stir into the cooled potato mixture with the scallions and Worcestershire sauce. Add the flaked fish and 1 tablespoon of the parsley and gently fold into the mixture. Refrigerate for about 30 minutes.
  • Taste for seasoning and adjust if needed. Form patties about 3 1/2 inches in diameter and 1 inch thick for entree portions, or 2 inches in diameter for appetizer portions.
  • Beat the remaining 2 eggs in a small bowl and put the bread crumbs in another. Dip the patties first in the beaten egg and then the bread crumbs. Heat about 1/8 of an inch of oil in a frying pan, adding more as needed. Fry the patties for just a few minutes on each side until golden. Drain on paper towels and sprinkle with the remaining parsley. Serve warm with lemon, tartar sauce, chutney or chowchow.

Golden Crusted Fish and Potato Cakes With Dill Yoghurt image

These fishcakes are heavenly... for me they outweigh a good feed of steak any day. My husband came up with this recipe as I strived to make even a half decent fishcake. I LOVE THEM!! They are lovely and golden, and you don't have to use expensive fish either (we use the basic white fish here in New Zealand - Hoki, and they are just perfect). We hope you enjoy them as much as we do :o)

Number Of Ingredients 10

500 g white fish (nothing with too strong flavour, can be pretty basic fish)
6 medium potatoes
approximately 1 1/2 cups instant mash dried potato flakes (or)
additional 1 cup potato flakes
2 -3 tablespoons parsley
1 -2 teaspoon salt (to taste)
1/2 teaspoon white pepper
light vegetable oil, to fry
200 ml plain yogurt
4 tablespoons dill (Fresh or Herb Paste in the tube)

Steps:

  • De-bone fish and dice into small cubes (about the size of your little finger tip).
  • Coarsely grate 4 potatoes and Finely grate 2 potatoes.Gently squeeze some of the excess juice from the grated potatoes (however, don't go overboard).
  • Combine fish and potato with parsley, salt and pepper.
  • Add instant mash/potato flakes to bind the mixture together (you may need slightly more or less, depending on the amount of moisture left in your potatoes).
  • Roll fish cakes by hand, coating them in a mixture of potato flakes and salt.
  • Place oil in a frying pan (skillet), on medium heat (enough oil to fry, but not too much, as they can absorb quite a bit of oil).
  • Once up to temperature fry fishcakes for approximately 7 minutes a side, or until golden brown and warm throughout. (You may need to adjust the temperature from time to time to ensure they do not burn).
  • When finished, place on paper towels to absorb excess oil.
  • For the dill yoghurt, simply combine dill and yoghurt, and dollop onto your fish cakes.
  • Serve with rocket (arugula)/salad and your favourite dressing.

2 medium mealy potatoes, peeled
2 tablespoons cream
4 tablespoons butter
1 pound haddock fillets
1/2 cup finely chopped onions
1 egg
Salt and freshly ground black pepper to taste
Approximately 1 cup plain, dry bread crumbs
Bacon drippings and cooking oil

Steps:

  • Gently boil the potatoes in lightly salted water until they are tender. Drain and mash. Add the cream and butter and mix well. Set aside, but do not refrigerate.
  • While the potatoes are cooking, simmer fish fillets in water to cover until they are cooked through. Drain well, flake the fish and mix it with potatoes.
  • Add the chopped onions and lightly beaten egg to the fish-potato mixture. Add salt and pepper to taste. This recipe may be made ahead of time up to this point and refrigerated, covered.
  • When ready to cook, form the fish mixture into cakes similar to small hamburgers, about two and one-half inches in diameter. Spread the bread crumbs on a plate or dry surface and pat the fish cakes in the crumbs to coat well.
  • Heat one tablespoon of bacon dripping (for flavor) and one tablespoon of cooking oil over medium-high heat. Saute the fish cakes until they are brown on both sides. Serve immediately.

3 cups salt cod fish, cooked & shredded
3 medium potatoes, cooked and mashed
10 parsley sprigs, finely chopped
1 bunch green onion, finely chopped
5 teaspoons red pimento paste (to taste)
4 -6 large eggs, room temperature
oil, for frying
2 garlic cloves (for potatoes)
1 teaspoon red pepper flakes (for potatoes)

Steps:

  • Rinse the salt off of the cod fish. Cover cod with cold water and soak for 24 hours, changing water two or three times. Drain off water. In a saucepan, cover cod with cold water; bring just to a boil. Reduce heat and simmer for 10 to 15 minutes or until tender. Drain, and when cool enough to handle, remove any skin and bones, then shred.
  • In a saucepan, boil the peeled potatoes in salted water with 2 garlic cloves and hot pepper flakes just until tender. Drain and mash.
  • In a large bowl, combine all of the ingredients until well mixed using a hand mixer on low. Start with using 4 eggs, but if the mixture is too dry, add another egg, one at a time (see picture).
  • Heat frying pan and add a bit of oil. Form a small patty and cook on medium heat. When bottom has colour, flip and finish cooking.
  • Taste the cake, and adjust the salt and pepper if needed. If the patty doesn't hold together, you may need to add an additional egg.
  • Continue making the cakes, stirring the mixture often, adding oil as needed. Drain the cakes on paper towels.
  • Cakes can be served hot or at room temperature.
  • Note: The pimento paste is available in the international section of a store.

1 lb white fish fillet (preferably 1 lb salt cod*)
3 medium potatoes
3 eggs, beaten
1 onion, minced
2 garlic cloves, minced
3 tablespoons hot sauce
1 tablespoon ground pepper
1/3 cup fresh parsley, chopped
1 teaspoon salt (only if needed)
1 quart oil

Steps:

  • (*If using salt cod: let it soak in water overnight to remove extra salt before using in recipe. Change the water 1-2 times.).
  • In a large pot put the fish and the (unpeeled, uncut) potatoes, cover with water and bring to boil. Lower heat then let everything simmer 15 minutes. Remove fish from the pot and let cool; keep cooking the potatoes until tender.
  • Remove potatoes, peel and mash.
  • Shred the fish by hand or with a food processor. Mix with the potatoes and the rest of ingredients (but the oil). Season to taste. With two soup spoons (traditionally) or with your wet hands (easier) form about 30 small oval-shaped balls (around 1 tbsp each).
  • In deep solid pot heat about 3" of oil until hot. Drop 4-5 balls at a time and fry until golden brown. Remove with a slotted spoon and let cool on paper towels 10-15 minutes before tasting.
  • Serve with a dip, or drizzled with hot sauce.
