This is a great recipe to get the kids in the kitchen - they'll enjoy the results too

Provided by Good Food team

Categories     Afternoon tea, Treat

Time 1h20m

Yield Makes 18

Number Of Ingredients 8

450g fresh plum , halved, stoned and roughly sliced
½ tsp mixed spice
300g light muscovado sugar
350g butter , plus extra for greasing
300g rolled porridge oats (not jumbo)
140g plain flour
50g chopped walnut pieces
3 tbsp golden syrup

Steps:

  • Heat oven to 200C/180C fan/gas 6. Tip the plums into a bowl. Toss with the spice, 50g of the sugar and a small pinch of salt, then set aside to macerate.
  • Gently melt the butter in a saucepan. In a large bowl, mix the oats, flour, walnut pieces and remaining sugar together, making sure there are no lumps of sugar, then stir in the butter and golden syrup until everything is combined into a loose flapjack mixture.
  • Grease a square baking tin about 20 x 20cm. Press half the oaty mix over the base of the tin, then tip over the plums and spread to make an even layer. Press the remaining oats over the plums so they are completely covered right to the sides of the tin. Bake for 45-50 mins until dark golden and starting to crisp a little around the edges. Leave to cool completely, then cut into 18 little bars. Will keep in an airtight container for 2 days or can be frozen for up to a month.

FLAPJACK BAKED PLUMS

Flapjack baked plums image

It's a pleasure to sink into a warm pud of orange-poached plums with crunchy, oaty topping.

Provided by Mary Cadogan

Categories     Dessert, Dinner, Supper

Time 50m

Number Of Ingredients 6

9-12 plums , depending on size
2 tbsp light muscovado sugar
3 medium or 2 large orange , juice only
50g butter
2 tbsp golden syrup or honey
50g porridge oat

Steps:

  • Heat oven to 190C/fan 170/gas 5. Halve the plums and arrange in a snug layer in one large or 4-6 individual shallow, ovenproof dishes. Sprinkle over the sugar and squeeze over all the orange juice. Press a sheet of baking parchment down over the plums and bake for 20-25 mins, until they start to soften.
  • Meanwhile, heat the butter with the syrup or honey in a pan. Remove from the heat and stir in the oats until they are evenly coated. Remove parchment, roughly spoon oats over the plums, then return to the oven for a further 10 mins, until the topping is crisp and golden and the plums are tender. Serve warm with crème fraîche or ice cream if you are feeling indulgent, or fromage frais or low-fat yogurt if not.

SPICY OVEN-ROASTED PLUMS

Spicy Oven-Roasted Plums image

Several years ago I was looking for a recipe to take advantage of our bumper crop of plums, and came across a recipe similar to this. After tweaking a bit, I have come up with a very versatile version that my family and friends love. Season with ground white pepper and use it as a side dish for pork or chicken. Sprinkle with toasted almonds and spoon it over vanilla bean ice cream, angel food, or pound cake for dessert! Play around with the spice combination by adding cloves, allspice, or cayenne. Be adventurous!
