Garlic Roasted Green Beans with Shallots and Hazelnuts image

1 pound green beans, trimmed
1 shallot, thinly sliced
4 cloves garlic, crushed
3 tablespoons olive oil
Salt and freshly ground pepper
1 teaspoon grated lemon zest
1/4 cup hazelnuts, toasted and chopped

Steps:

  • Preheat oven to 425 degrees F.
  • Toss together green beans, shallots, garlic, oil and salt and pepper in a medium roasting pan. Roast in the oven until the beans are cooked through and light golden brown. Remove from the oven and stir in the lemon zest and hazelnuts. Transfer to a platter and serve.

1 ½ pounds fresh green beans, washed and trimmed
2 tablespoons olive oil
1 ½ teaspoons lemon zest
⅓ cup chopped toasted hazelnuts
salt and pepper to taste

Steps:

  • In a large pot of salted boiling water, cook beans 3 to 8 minutes or until tender. Drain and place in a large bowl.
  • Add olive oil, lemon zest, hazelnuts, salt and pepper. Beans may be made 1 day ahead, chilled and covered. Reheat beans, preferably in a microwave.

3 tablespoons unsalted butter (softened)
1 tablespoon minced shallots
1 teaspoon lemon zest
2 tablespoon chopped hazelnuts
1 pound French green beans (rinsed and trimmed)
1/4 teaspoon sea salt
1/2 cup water

Steps:

  • Make the compound butter. Mix the butter, shallots, lemon zest and hazelnuts in a small bowl until combined. Refrigerate while the beans are cooking.
  • Steam the beans. Place the beans in a sauté pan and sprinkle with salt. Add the water. Cover and cook over medium-high heat for 6 minutes. Remove the lid and continue to cook for about 2 minutes, until all of the water boils off. Immediately remove from heat.
  • Finish the dish. Spoon butter mixture over the beans. Using a pair of tongs, toss the beans until all of the butter is melted and the beans are coated. Serve immediately.

FRENCH STRING BEANS

1 pound French string beans, both ends removed
Kosher salt
1 red onion, large- diced
1/2 red bell pepper, large diced
1/2 yellow bell pepper, large diced
Good olive oil
Freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Blanch the string beans in a large pot of boiling salted water for just 4 minutes. Drain immediately and immerse in a large bowl of ice water to stop the cooking. When they are cool, drain and set aside.
  • Meanwhile, in a large bowl toss the onion and bell peppers together with 2 tablespoons of olive oil and sprinkle generously with salt and pepper. Place in a single layer on a baking sheet and roast for about 15 minutes, tossing with a spatula from time to time to be sure the vegetables roast evenly.
  • Just before serving, reheat the string beans in a large saute pan drizzled with a little olive oil. Sprinkle with salt and pepper and arrange on a platter. Spoon the roasted vegetables over the string beans and serve hot or at room temperature.

French Toast Fingers With Chocolate Hazelnut Spread and Blueberries image

WARNING: This French toast is wickedly indulgent. Enjoy it for breakfast on special occasions, although it's probably better suited to a decadent dessert. Either way, it's freaking tasty!

2 cups half and half (500 mililiters)
1 tablespoon honey
1/2 ounce butter (15 grams) butter
Zest of 1 orange
1 vanilla bean, split and seeds scraped
4 eggs
5 1/2 ounces caster (superfine) sugar (150 grams)
1 brioche loaf
2 tablespoons homemade chocolate hazelnut spread
1 cup blueberries (9 1/2 ounces/270 grams)
1 1/2 fluid ounces coconut oil (50 milliliters)

Steps:

  • Preheat oven to 325°F (175°C).
  • Put the cream, honey, butter, orange zest and vanilla bean in a medium saucepan over medium-high heat. Bring to a boil, stirring, and remove from the heat.
  • Put the eggs and sugar in a large bowl and whisk to combine.
  • Pour the hot cream mixture over the egg mixture and whisk to combine.
  • Using a bread knife, cut the crust off the brioche loaf to create a square log. Slice the loaf in half lengthways. Spread both halves with chocolate hazelnut spread, like you're making a big sandwich, then add the blueberries to the middle and close the sandwich.
  • Soak the brioche loaf in the warm egg custard for 10 minutes, or until it's well soaked.
  • Put coconut oil in a medium pan over medium heat and cook the brioche loaf until it's golden brown all over, then finish in the oven for 5 minutes. Transfer to a plate lined with paper towel and slice into fingers.

1 lb small white pea beans
1 onion, coarsely chopped
1 teaspoon dry mustard
2 teaspoons ground black pepper
1 -2 cup pure maple syrup, plus more if desired
1/3 lb salt pork
salt

Steps:

  • Pour the beans onto a plate, and pick-over looking for bad beans, or stones. Place beans in bowl, cover with water by at least 2 inches, and soak overnight.
  • Preheat oven to 250 degrees F.
  • Drain beans and place in 4-quart bean pot. Add onion, dry mustard, pepper, salt, and maple syrup. Add water to cover. Cut salt pork into 1-inch pieces and place on top of beans. Bake covered, approximately 8 hours. Check each hour to see if water needs to be added. You can add more maple syrup in place of water for flavor, if desired.
  • Serve the beans with brown bread, franks, or ham. For breakfast, serve with eggs, bacon, and home-fries.
