Steps:
- In a large saucepan, heat oil over medium heat; add tomatoes, onions, green bell peppers, garlic, white wine and salt and pepper to taste.
- Mix ingredients well; cover and simmer for 30 minutes. Serve.

STEPH'S CREAMY TOMATO PARMESAN SAUCE
This is not spicy! For a main dish I have added the Imitation crabmeat to this before and served over linguini. You can add any kind of seafood or even chicken and serve over pasta. Or for a side dish you can serve without meat and mix the sauce over the pasta. Try adding a variety of veggies! Possibilites are plenty!

Steps:
- Saute onions and garlic and seasonings (savory, rosemary, salt, pepper, bay leaf, Blackened Redfish Seas) in butter and olive oil.
- Add wine and cook 1 minute.
- Add tomato sauce and half and half; simmer for 5-7 mintes, stirring frequently.
- Add peas and Parmesan, simmer until cheese is melted, 3-5 minutes.
- Serve tossed with your favorite pasta.

FRESH TOMATO PARMESAN SAUCE
Steps:
- Note: to make chiffonade, roll basil leaves lengthwise into tight cylinder. Slice cylinder crosswise into 1/8 inch ribbons. Heat oil in large heavy skillet over medium heat. Add onions, 1/2 tsp salt, a gring of black pepper, and a 1/2 tsp sugar; sauté until soft, about 10 minutes, stirring frequently. Add garlic; sauté 1 minute, stirring to prevent browning. Add tomatoes and balsamic vinegar and bring to simmer. Lower heat and cook uncovered until softened, stirring frequently. For a fresher sauce with firmer tomatoes, simmer just 5 minutes. For a softer, smoother sauce, simmer longer-up to 15 minutes. Stir in basil during last minute of cooking; add salt and pepper to taste. Top freshly cooked and drained Ricotta, Mozzarella & Asiago ravioli with sauce and finish with freshly grated parmesan cheese.
CREAMY TOMATO & PARMESAN PASTA
After being unable to find a suitable creamy tomato pasta sauce recipe, I came up with my own, and by golly it's good. Easy to make too :)

Steps:
- 1. Cook fettucine as directed
- 2. Crush and chop garlic clove finely.
- 3. Heat oil in a frying pan on medium-high, add garlic and bacon and cook until they start to brown.
- 4. Add tin of tomatoes to the frying pan and stir.
- 5. Reduce heat to medium and simmer for 15 minutes.
- 6. Reduce to low heat and add cream.
- 7. Stir until cream is fully mixed inches.
- 8. Stir parmesan cheeses into the sauce.
- 9. Add fettucine and stir until heated through and covered with sauce.
- 10. Serve, sprinkling a little parmesan cheese over the top of each serve if you wish.
FRESH TOMATO MARINARA SAUCE
A rich, flavorful sauce that is healthy. Great for use in pasta, lasagna, and other casseroles. My favorite way to eat it is to pour over raw zucchini 'pasta' for an extra-fresh and tasty meal that's very healthy, too! A great recipe for using up extra-ripe tomatoes from your garden. Double the batch and freeze half; it freezes well.

UNCOOKED FRESH TOMATO SAUCE

- Boil several quarts of water in a deep pot. Score the tomatoes top and bottom with an ''x,'' just breaking the skin, and add the tomatoes to the water. Let the water return to the boil and continue boiling 30 seconds. Remove the tomatoes, run them under cold water and peel off the skins.
- Slice the tomatoes in half crosswise, place a sieve over a bowl and, holding each half over the sieve, push the seeds and juice out and into the sieve. Press out the juice and save for another use.
- Lightly sprinkle the cut surfaces of the tomatoes with salt and let them stand 10 minutes. Gently squeeze them to get rid of any additional juice and coarsely chop the tomatoes.
- Put the tomatoes into a bowl and add lemon juice, garlic, basil, salt and pepper, adjusting seasonings to taste.
- Serve over hot, very thin pasta (capellini, for example), garnishing each serving with a sprig of basil and grated Parmesan.

- Cook spaghetti in boiling salted water until it's al dente. Reserve 1 cup (235 ml) of the pasta water before draining.
- While the spaghetti is cooking, heat olive oil in a large pan (it should be large enough to toss the pasta in). Add garlic and tomatoes, and stir until well-incorporated. Season with salt and pepper.
- Cook tomatoes down for 5 minutes until they soften and release some of their juices.
- Then add the wine and allow that to reduce for 5-10 minutes until you're left with a syrupy sauce.
- Add the pasta to your sauce, along with a splash of pasta water and toss to coat it for about 1-2 minutes so the pasta finishes cooking and absorbs the flavor of the sauce.
- Add the parmesan and basil. Add another small splash of pasta water, if needed. Toss until the cheese is melted down and you're left with a smooth sauce.
- Gradually add small amounts of pasta water, as needed, until the sauce reaches your desired smoothness.
- Top off with extra parmesan and basil and serve immediately.
- Enjoy!
