WHITE WINE-POACHED PEARS

Steps:
- Combine all ingredients but pears in a large saucepan. Bring mixture to a boil and cook 5 minutes. Add pears, lower heat, and cook 20 to 30 minutes, until pears are tender. If necessary, turn pears very gently by rotating stems with your fingertips so they cook evenly. Remove pears to a bowl, bring poaching liquid to a rapid boil, and reduce by half, about 10 minutes.
- Pour syrup over pears and refrigerate, covered, at least 6 hours, preferably overnight. Serve.

- Combine the wine and sugar in a saucepan. Place the saucepan over medium heat and bring to a boil; stirring to dissolve sugar. Remove the saucepan from the heat and add the mint; set aside.
- Combine the cantaloupe, grapes, and strawberries in a large bowl. Pour the wine mixture over the fruit; toss together until all the fruit is covered with the wine mixture; cover and chill. Store in the refrigerator up to 8 hours before serving.

- Combine first 7 ingredients in a large pitcher. Refrigerate, covered, stirring occasionally, about 4 hours. Discard cinnamon sticks. Refrigerate, covered, 2 hours longer. Just before serving, stir in chilled club soda. Serve over ice with fruit slices in each glass.

Honey, cinnamon, vanilla and orange slices spice up the wine marinade in this low-fat fruit dessert. Transport it in an airtight plastic container, and serve it in bowls.

- Combine 4 ingredients in heavy medium saucepan. Scrape in seeds from vanilla bean; add bean. Bring to boil. Reduce heat to medium-low; simmer 30 minutes to blend flavors.
- Combine apricots and cherries in large bowl. Pour hot wine mixture over. Cool to room temperature. Cover and chill. (Can be made 1 day ahead. Keep chilled.) Serve fruit with liquid.
SPICED WINE WITH DRIED FRUIT

Steps:
- Place tea bags in large glass measuring cup. Pour 2 cups boiling water over. Let stand 4 minutes. Discard tea bags.
- Combine tea, wine and all remaining ingredients in medium saucepan. Stir wine mixture over medium heat until sugar dissolves. Bring mixture just to simmer. Remove from heat. Cover and let steep 20 minutes.
- Rewarm wine over low heat (do not boil). Discard bay leaf and cinnamon stick. Ladle wine, raisins and dried fruit into mugs and serve.
