- Heat oil in heavy large saucepan over medium-high heat. Add onion and apple and sauté until golden, about 7 minutes. Add cabbage, vinegar, sugar and celery seed and cook until cabbage is crisp-tender and liquid is reduced to glaze, about 10 minutes. Mix in bacon. Season with salt and pepper.
SWEET-SOUR RED CABBAGE
The first time I bought a red cabbage, I didn't quite know what to do with it. After some experimenting, I came up with this recipe that's now my fall comfort food. - Halve, core, and thinly slice red cabbage.
- Heat olive oil in a large skillet over medium heat. Add cabbage and red-wine vinegar; season with coarse salt and ground pepper. Cook, tossing frequently, until cabbage is crisp-tender, about 15 minutes (add a splash of water if pan becomes dry).
- Add light-brown sugar; toss until dissolved, about 30 seconds. Season again with salt and pepper, as desired.

MOM'S SWEET-AND-SOUR RED CABBAGE

- 1. Using a box grater, mandoline, or a coarse Microplane grater, grate the cabbage. In a large saucepan, heat the oil over medium-high heat. Add the onion and sauté for 2 minutes.
- 2. Lower the heat to medium; add the cabbage and apples and stir to combine. Add the juniper berries, allspice berries, cloves, bay leaf, salt, pepper, jelly, vinegar, sugar, and 1/2 cup (120ml) of water and stir to combine. Turn the heat to low, cover, and cook for 40 minutes, until the cabbage is tender.
- 3. Remove the juniper berries, allspice berries, cloves, and bay leaf. Serve the cabbage hot or at room temperature. Refrigerate for up to 4 days. Leftovers can also be frozen in an airtight container for up to 1 month.

- Quarter the cabbage, cut away the tough stem and thinly shred each quarter. Put on a pair of clean rubber gloves, and peel and grate the beetroot.
- Put all the ingredients in a large pan. Bring to the boil, then cover and cook over a low heat, stirring occasionally, for 45 mins-1 hr until tender. Cool to room temperature, then serve. Can be put into jars or dishes, covered and chilled for up to 3 days; bring to room temperature to eat.

RED CABBAGE AND FRUIT SLAW
I grabbed this from an 'Easy Home Cooking' booklet I found at my mother's place on my last visit. It sounded good and I am always happy to find a slaw recipe that doesn't include raw onion since I dislike raw onion so much. When I made this I used fat free mayo and splenda and it worked great. I really liked the colours in the dish. Cooking time includes chilling time.

- In large bowl, combine savoy cabbage, carrot, apricot and apple and mix well.
- In small bowl, mix mayonnaise, sugar and vinegar.
- Pour over cabbage mixture and mix well.
