3 1/2 ounces clear apple juice
1 2/3 ounces clear pear juice
2/3 ounce fresh lemon juice
1 tablespoon fresh gingerroot, grated (1 small piece)
ginger ale, to serve
apple, wedge to garnish (optional)

Steps:

  • Pour the apple, pear, and lemon juices into a shaker with ice.
  • Grate the ginger into the shaker.
  • Shake well to infuse the ginger flavor.
  • Strain into a highball glass with ice.
  • Top up with ginger ale. Stir.
  • Garnish with a fresh wedge of apple if desired.
  • Serve with a straw.

Homemade Ginger Ale image

1 cup sugar
1 cup water
1 inch piece ginger, thinly cut into coins
seltzer water

Steps:

  • In a saucepan bring sugar, water, and ginger to a boil. Stirring occasionally cook until sugar is completely dissolved. Remove from heat and let cool completely. (Syrup may be made 1 week ahead and chilled, covered.) Spoon 2 tablespoons of ginger syrup into a tall glass filled with ice. Top off with seltzer and stir to combine.

6 cups water
1 pound fresh ginger, peeled, coarsely chopped (about 2 1/2 cups)
1 cup (packed) golden brown sugar or white sugar
Crushed ice
1 lime, cut into 6 to 8 wedges

Steps:

  • Bring 6 cups water to boil in large saucepan. Finely chop ginger in processor. Transfer chopped ginger to large glass or ceramic bowl; add boiling water and stir to blend. Cover loosely with foil; let ginger mixture stand at cool room temperature 24 hours.
  • Strain ginger liquid into large pitcher; discard solids in strainer. Add sugar to liquid and stir until sugar dissolves. Fill glasses with crushed ice and pour ginger beer over ice. Serve each glass of ginger beer with lime wedge to squeeze over.
