Gingerbread Cheesecake image

The warm, spicy flavors of gingerbread are a natural match for cheesecake. I mean, who doesn't love a slice of gingerbread cake slathered with cream cheese frosting? This dessert is certainly rich, but it is also packed with lots of spices, including a hefty sprinkle of both ground and fresh ginger, classic cinnamon, allspice that lends a slightly peppery note, and a bit of fresh lemon zest to brighten things up. It can be a little tricky to get the batter completely smooth, so make sure all the ingredients are at room temperature before you start mixing, and take care to bake the cheesecake gently to avoid cracks. The cranberry topping here is optional but it is festive and delicious, and a great little cover-up if the cheesecake does happen to crack. Alternatively, this is great with a bit of lightly sweetened whipped cream or crème fraîche. Slice cheesecake with a clean, hot knife for the tidiest servings.

1 tablespoon dark brown sugar

2 pounds/904 grams cream cheese
2/3 cup/146 grams dark brown sugar
1 tablespoon ground ginger
2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground cardamom
1/4 teaspoon ground nutmeg
4 large eggs, lightly beaten
3/4 cup/170 grams sour cream
1/3 cup/80 milliliters unsulfured molasses (not blackstrap)
2 tablespoons dark rum
2 teaspoons finely grated fresh ginger
1/2 teaspoon finely grated lemon zest
2 cups/200 grams fresh or frozen cranberries
1/2 cup/120 milliliters orange juice
2 tablespoons dark rum
1/3 cup/67 grams granulated sugar
1 tablespoon chopped crystallized ginger

Steps:

  • Bring the cream cheese, sour cream and eggs to room temperature.
  • Heat oven to 325 degrees. Wrap the bottom and exterior sides of a 9-inch springform pan with a layer of aluminum foil; make sure to wrap to the top of the sides since the pan will be submerged halfway in a water bath while baking.
  • Prepare the crust: Stir the gingersnap crumbs, brown sugar, ground ginger and a pinch of salt together in a medium bowl. Add the melted butter and stir until well combined. Press the mixture evenly into the bottom of the prepared pan. Bake the crust until golden brown and fragrant, 9 to 11 minutes. Set aside while you prepare the filling. Set a kettle or medium pot of water to boil.
  • Prepare the filling: Add the cream cheese to the bowl of a stand mixer and mix on medium-high, scraping down the sides of the bowl occasionally until very smooth and fluffy, 4 to 5 minutes. Add the brown sugar and spices and mix until well combined and completely smooth, about 2 more minutes. Scrape the bottom and sides of the bowl, then add the eggs a little bit at a time, mixing each bit completely into the mixture before adding the next. Add the sour cream, molasses, rum, fresh ginger, lemon zest and mix until just combined.
  • Use a rubber spatula to scrape down the bottom and sides of the bowl and mix the last few strokes by hand. Make sure the mixture is totally, completely smooth, then pour it into the prepared crust. The mixture will fill the pan almost all of the way to the top. Firmly tap the pan on a countertop to release any air bubbles.
  • Set a roasting pan on the center rack of the oven and place the cheesecake in the pan. Fill the pan with boiling water about halfway. Bake the cheesecake for one hour, without opening the door. After one hour check for doneness by gently tapping the side of the pan. The cheesecake should look set at the edges but still a bit wiggly, and will be light golden brown on top. If it is not finished baking, check it every 5 to 10 minutes or so until done.
  • When the cheesecake is finished baking, turn off the oven, prop the oven door open a crack (a wooden spoon works great for this), and let the cheesecake cool in the oven until it is close to room temperature, about an hour.
  • Remove the cheesecake from the oven, remove the foil from the outside of the pan, and transfer to the refrigerator to cool completely, at least 4 hours and up to 2 days. After it has completely cooled, loosely cover the pan with plastic wrap. To slice: run a hot thin knife around the edge of the pan before removing the ring.
  • While the cheesecake cools make the cranberries: Add the cranberries, orange juice, ¼ cup/60 milliliters water, rum, and sugar to a saucepan. Cook over medium-high heat, stirring occasionally until the cranberries burst and the mixture is slightly thickened, about 10 to 15 minutes. Stir in the chopped crystallized ginger. Serve at room temperature or chilled.

2 cups Cool Whip frozen whipped topping, thawed

Steps:

  • Heat oven to 375°F. Spray bottom and sides of 13x9-inch pan with cooking spray. In large bowl, stir cookie mix, butter, water and egg until soft dough forms.
  • Make 5 cookies by shaping dough into 5 (1-inch) balls. Place balls 2 inches apart on ungreased cookie sheet. Flatten slightly with bottom of glass dipped in sugar. Bake 8 to 10 minutes or until edges are set. Cool 1 minute; remove from cookie sheet to cooling rack.
  • Meanwhile, press remaining dough in pan. Bake 8 to 10 minutes or until set. Cool completely, about 30 minutes.
  • In large bowl, beat milk, cream cheese and lemon juice with electric mixer on medium speed until smooth. Fold in whipped topping. Spread over cooled cookie base.
  • Crumble 5 baked cookies; sprinkle over cream cheese mixture. Cover; refrigerate about 1 hour or until chilled. Store covered in refrigerator.

Press onto the bottom of prepared pan. Place pan on a baking sheet. Bake at 325° for 8-12 minutes. Cool on a wire rack., In a large bowl, beat cream cheese and sugar until smooth. Beat in the molasses, vanilla, cinnamon, ginger, nutmeg and cloves. Add eggs; beat on low speed just until combined. 225 grams ginger biscuits - crushed
115 grams unsalted butter - melted
300 grams full fat soft cheese
250 ml double cream
2 limes - juice and rind
4 tablespoons ginger syrup
8 pieces Opies stem ginger
Lime zest
Chopped ginger
Icing Sugar

Steps:

  • Mix the biscuits with the melted butter and press 40 50g into the bases of each 9cm individual ring mould.
  • Chill in the refrigerator for approximately 1 hour.
  • Lightly whip the cream and then mix in the cream cheese and ginger syrup and lime juice.
  • Add the stem ginger and lime zest and mix in thoroughly.
  • Spoon onto the biscuit bases and spread evenly over the surface.
  • Chill in a refrigerator for 2- 3 hours until firm.
  • To serve place the cheesecake on a serving plate and carefully remove from the mould.
  • Sprinkle a small amount of lime zest on the surface and then carefully arrange the chopped ginger around the edge of the plate.
  • Lightly dust with icing sugar.

12 ounces store-bought gingersnaps (about 45 cookies)

1 large egg
1 large egg yolk
3 tablespoons sour cream
3/4 teaspoon pure vanilla extract
2 tablespoons finely chopped crystallized ginger

Steps:

  • Preheat oven to 350 degrees. Coat a 9-by-13-inch rimmed baking sheet with cooking spray; set aside. Place gingersnaps in a food processor; pulse to a powder. Transfer to a small bowl, and stir in butter until well combined. Press gingersnap mixture evenly into bottom of prepared baking sheet. Bake crust until firm, about 12 minutes. Let cool completely.
  • Meanwhile, put cream cheese in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until softened. Mix in sugar, egg, egg yolk, sour cream, and vanilla until well combined. Mix in crystallized ginger.

  • In large bowl, beat all filling ingredients except eggs and peaches with electric mixer on medium speed until smooth. On low speed, beat in eggs until blended. Gently stir in peaches. Pour into crust.
  • Bake 1 hour 25 minutes to 1 hour 30 minutes or until edge of cheesecake is set but center still jiggles slightly when moved. Turn oven off; open oven door at least 4 inches. Leave cheesecake in oven 30 minutes longer.
  • Remove cheesecake from oven; place on cooling rack. Without releasing side of pan, run knife around edge of pan to loosen cheesecake. Cool in pan on cooling rack 30 minutes. Cover loosely; refrigerate at least 6 hours but no longer than 24 hours.
  • In small bowl, mix topping ingredients. Carefully spread over top of cheesecake. Run metal spatula along side of cheesecake to loosen. Remove side of pan; leave cheesecake on pan bottom to serve. Store covered in refrigerator.

2 cups gingerbread cookie crumbs
¼ cup unsalted butter, melted
3 (8 ounce) packages cream cheese, at room temperature
1 cup dark brown sugar
⅓ cup unsulphured molasses
1 tablespoon lemon juice
1 tablespoon vanilla extract
2 teaspoons ground ginger
1 ½ teaspoons ground cinnamon

1 cup heavy whipping cream
¼ cup confectioners' sugar, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan. Wrap the outside of the springform pan 3 to 4 times with aluminum foil.
  • Mix cookie crumbs and melted butter together until mixture resembles wet sand. Press into the prepared springform pan until bottom is evenly covered.
  • Combine cream cheese and brown sugar in a large bowl; beat with an electric mixer until smooth. Add molasses, lemon juice, vanilla extract, ginger, cinnamon, cloves, nutmeg, allspice, and salt; mix until well combined. Add eggs, 1 at a time, beating briefly after each addition until just combined. Pour batter over the crust in the pan. Tap the pan on the counter several times to remove any air bubbles.
  • Place the springform pan into a larger baking pan, and fill the baking pan with 1 inch hot water, making sure no water gets into the cheesecake batter.
  • Bake in the water bath in the preheated oven until the edges of the cheesecake are set and the middle jiggles slightly, about 1 hour. Turn off the oven without removing the cheesecake, leaving it inside until cooled, 1 to 2 hours.
  • Remove from the oven and water bath. Run the tip of a table knife around the edges of the springform pan before removing to a serving platter. Refrigerate until completely chilled, at least 4 hours.
  • Combine whipping cream, powdered sugar, vanilla extract, cinnamon, and salt for the cinnamon whipped cream in a large bowl. Beat with an electric mixer on medium-high speed until stiff peaks form; do not overmix.
  • Top cheesecake with whipped cream just before serving.

1 packet ginger snap biscuits, finely crushed
75g butter
2 tbs golden syrup
1 packet ginger snap biscuits, finely crushed
75g butter
2 tbs golden syrup
2 tubs standard soft cheese
1 small pot double cream
25g icing sugar
2 tsp ground ginger
50g finely chopped stem ginger

Steps:

  • Place biscuits inside food mixer and blitz them to fine crumbs.
  • Melt butter and syrup in a saucepan, add biscuit crumbs and stir well. Press mixture into lightly buttered push up cake tin. Can use a deep dish lined with foil if prefer. Smooth level with back of spoon and chill in fridge.
  • Place all other filling ingredients into processor and whisk well until combined and thickened. Mix should be quite stiff and hold its shape.
  • Place filling on top of the chilled biscuit base , smoothing it level and refrigerate for 2 /3 hours.
  • Serve chilled with a drizzle of runny honey. Keeps well in fridge for few days.

GINGER LEMON BASQUE CHEESECAKE

2 pounds cream cheese, at room temperature
1 1/4 cups granulated sugar
Generous pinch kosher salt
1/2 cup sweetened condensed milk
1 1/2 cups heavy cream
1 tablespoon grated fresh ginger
1 teaspoon ground ginger
1 teaspoon vanilla extract
Zest of 2 lemons, minced, plus zest of 1 lemon plus 1 tablespoon lemon juice
6 large eggs
1/3 cup all-purpose flour
1 cup prepared lemon curd
2 tablespoons limoncello liquor
2 tablespoons sour cream
Powdered sugar, for dusting
Fresh basil, chiffonade, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Grease one side of 2 to 3 sheets of parchment paper. Lay them butter-side up inside a 10-inch springform pan, arranging so that they cover all sides, and crimping the edges to ensure they stay in place. Place the springform pan on a sheet tray.
  • In a mixer fitted with the paddle attachment, combine the cream cheese, granulated sugar and salt. Cream on medium-high speed until smooth, about 1 minute. Scrape down the sides.
  • Turn the mixer down to medium and add the condensed milk. Beat to combine, then scrape down the bowl. Add the heavy cream, fresh ginger, ground ginger, vanilla and minced lemon zest. Fully combine, then scrape down the sides.
  • Turn the mixer to medium-high and add the eggs one at a time, being sure that each is fully combined before adding the next.
  • Add the flour, then beat again, scraping down the sides.
  • Pour the cheesecake into the center of the springform pan and tap it lightly on the counter to remove any air bubbles.
  • Bake for 30 minutes, then rotate. Continue to bake until dark golden brown, another 30 to 35 minutes. Allow to cool to room temperature, then refrigerate until completely set, 6 hours.
  • Remove the cheesecake from the pan, then peel down the paper. (You can leave the paper in place for a rustic look.)
  • Mix together the lemon curd, limoncello, sour cream, lemon juice and remaining lemon zest in a bowl.
  • Pour evenly over the top of the cheesecake, then sprinkle with the powdered sugar and garnish with the basil. Cut into slices and serve.

  • For filling:

Bake cheesecake until filling is set and golden brown on top (cake will rise slightly above edge of pan), about 1 hour 25 minutes. Turn off oven and prop open oven door with wooden spoon. Let cake stand in oven 1 hour (cake will fall).
  • Remove springform pan from water bath. Remove foil and cool cheesecake completely on rack. Cover and refrigerate overnight. (Can be prepared ahead and refrigerated 4 days or frozen up to 2 months. Defrost frozen cake overnight in refrigerator.) Release pan sides from cheesecake. Transfer cheesecake to platter. Arrange lemon slices decoratively around cake and serve.

All-purpose flour, for dusting
1/4 recipe of the dough for Molasses-Gingerbread Cookies
4 tablespoons unsalted butter, melted
1 3/4 cups granulated sugar
2 pounds cream cheese, room temperature
1 teaspoon pure vanilla extract
4 large eggs, room temperature
1/4 cup unsulfured molasses
1/4 teaspoon salt
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon
1 teaspoon freshly grated nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon finely grated lemon zest
6 gingerbread men (see above)

Steps:

  • Preheat oven to 350 degrees. Wrap exterior of a 9-inch springform pan in 2 layers of foil.
  • On a generously floured piece of parchment, roll dough to a 13-by-10-inch rectangle, about 1/4 inch thick. Brush off excess flour. Slide dough and parchment onto a baking sheet. Bake until firm and golden brown, about 14 minutes. Let cool completely on sheet on a wire rack. Break into large pieces, then pulse in a food processor until finely ground.
  • Combine butter, 1/4 cup sugar, and 2 cups cookie crumbs in a bowl. Press mixture firmly and evenly into bottom and one-third of the way up sides of prepared pan. Bake until set, about 10 minutes. Let cool on rack.
  • Reduce oven temperature to 325 degrees. Beat cream cheese with a mixer on medium speed until fluffy, about 3 minutes. Beat in remaining 1 1/2 cups sugar and the vanilla, scraping down sides of bowl as needed. Reduce speed to low. Add eggs, 1 at a time, beating well after each addition and scraping sides of bowl as needed. Beat in molasses, salt, spices, and lemon zest. Pour filling into cooled crust.
  • Place cheesecake in a large, shallow roasting pan. Transfer to oven, and carefully add enough hot water to roasting pan to come about halfway up sides of springform pan. Bake until cheesecake is set but still slightly wobbly in center, 60 to 65 minutes. Carefully remove springform pan from roasting pan, and let cool on a wire rack. Refrigerate, uncovered, for at least 8 hours (preferably overnight).
  • Before serving, run a hot knife around edges of cheesecake to loosen, and remove sides of pan. Arrange gingerbread cookies in center of cake in a circle (with heads facing inward and arms touching, alternating light and dark).

1 crumb-crust recipe , made with finely ground graham crackers and 1/2 teaspoon ground ginger
3 (8-oz) packages cream cheese, softened
4 large eggs
1 teaspoon vanilla
1/4 cup sugar
1/2 cup coarsely chopped crystallized ginger
1 1/2 tablespoons grated fresh ginger
16 oz sour cream
1 tablespoon sugar
1 teaspoon vanilla

Steps:

  • Make crumb crust as directed, adding ground ginger to crust. Preheat oven to 350°F.
  • Beat cream cheese with an electric mixer until fluffy and add eggs, 1 at a time, then vanilla, sugar, crystallized ginger, and fresh ginger, beating on low speed until each ingredient is incorporated and scraping down bowl between additions.
  • Put springform pan with crust in a shallow baking pan. Pour filling into crust and bake in baking pan (to catch drips) in middle of oven 45 minutes, or until cake is set 3 inches from edge but center is still slightly wobbly when pan is gently shaken. Let stand in baking pan on a rack 5 minutes. Leave oven on.
  • Stir together sour cream, sugar, and vanilla. Drop spoonfuls of topping around edge of cake and spread gently over center, smoothing evenly. Bake cake with topping 10 minutes.
  • Run a knife around top edge of cake to loosen and cool completely in springform pan on rack. (Cake will continue to set as it cools.) Chill cake, loosely covered, at least 6 hours. Remove side from pan and transfer cake to a plate. Bring to room temperature before serving.

2 cups gingersnap cookies, crushed
5 tablespoons melted butter
12 ounces cream cheese
1 1/2 cups sour cream or 1 1/2 cups yogurt
1/4 cup brandy
1/4 cup sugar
4 eggs
2 tablespoons grated fresh ginger
1 dash salt

Steps:

  • Preheat oven to 350°F.
  • Mix cookie crumbs with butter. Press firmly into the bottom of a 10 inch springform pan.
  • You can omit all or some the egg yolks. Whip everything together until very smooth. Taste to adjust sweetening.
  • Pour onto the crust in the springform pan.
  • Bake for 40 minutes or until center is firm to the touch and edges are slightly brown. Cool completely before removing the rim of the pan.

12 gingersnap cookies, crushed
1 (24 ounce) carton 1% fat cottage cheese
16 ounces light cream cheese
1 cup sugar, divided
2 tablespoons brandy
2 eggs
2 tablespoons chopped crystallized ginger
4 egg whites
1/8 teaspoon cream of tartar
gingerroot, strips (optional)

Steps:

  • Coat the bottom of a 20-inch springform pan with cooking spray; sprinkle with crumbs and set aside. Position knife blade in food processor bowl; add cottage cheese and cream cheese and process until smooth. Add 3/4 cup sugar, brandy, whole eggs, and gingerroot; process until smooth. pour into a large bowl; set aside.
  • Beat egg whites (at room temperature) and cream of tartar at high speed of an electric mixer until foamy. Gradually add remaining 1/4 cup sugar, 1 Tbsp at a time, beating until stiff peaks form. Gently stir 1/4 of egg white mixture into cheese mixture. Gently fold in remaining egg white mixture.
  • Pour into greased pan. Bake at 325 deg for 50 minutes or until almost set. Remove from oven and cool 15 minutes. Cover and chill at least 8 hours. Garnish with crystallized gingerroot strips if desired.
