Steps:

  • Boil 3/4 pound sugar snap peas in salted water, 3 minutes. Add 2 bunches thinly sliced baby turnips; cook 2 minutes, then drain. Cook 1 sliced onion and 1 chopped garlic clove in butter until soft. Add the vegetables, 1 tablespoon sugar, and salt and pepper; cook until glazed. Top with chopped parsley. Serve with lemon wedges.

1 pound sugar snap peas or snow peas
1 tablespoon water
2 teaspoons canola oil
3 scallions, white and green, sliced
1 tablespoon minced fresh ginger
1/4 cup orange juice
1/2 cup low-sodium chicken broth
1 tablespoon rice vinegar
2 tablespoons low-sodium white miso paste
1 teaspoon toasted sesame oil

Steps:

  • Place the snap peas or snow peas into a microwave-safe bowl with 1 tablespoon of water. Cover tightly and microwave for 3 minutes. Carefully remove the cover, drain and set aside.
  • Heat the oil in a saucepan over a medium-high heat. Add the scallions and ginger and saute for 2 minutes. Add the orange juice, chicken broth and vinegar and cook for 5 minutes, uncovered. Turn heat to low and stir in the miso paste and sesame oil. Stir until miso paste is dissolved, about 1 minute.
  • Pour the sauce over the snow or snap peas toss to coat and serve.

This tasty, Asian-inspired summer side has an air of sophistication, but is surprisingly sweet and approachable.

1/2 lb sugar snap peas
1 Tbsp canola oil
1 lb turnips
4 scallions (about 1/3 C)
2 Tbsp minced ginger
2 Tbsp white miso
1/2 tsp dark brown sugar
2 Tbsp water

Steps:

  • Peel and chop the turnips into bite-sized pieces. Wash, remove the stems from, and string the sugar snap peas. Cut the trimmed sugar snap peas in half diagonally. Chop the scallions and mince the garlic.
  • Heat 1 Tbsp of canola oil over medium-high heat. Evenly spread the turnips out over the pan and do not stir for 5 minutes so that they brown. Continue cooking, stirring periodically for another 3-5 minutes or until the turnips begin to soften.
  • Meanwhile, whisk together the white miso, dark brown sugar, and water. Set aside.
  • Add the sugar snap peas, scallions and ginger to the pan and cook for 3 more minutes or until the peas are just tender. Pour the miso mixture over the vegetables and cook for 1 more minute and then remove from the heat. Serve immediately.

Steps:

  • Heat oil in a large skillet or wok over moderately high heat until hot but not smoking, then sauté shallots, ginger, and garlic, stirring, 1 minute.
  • Add peas and sauté, stirring, 2 minutes. Add water and simmer, stirring occasionally, until peas are crisp-tender, about 2 minutes. Season with salt and pepper.

3/4 lb sugar snap pea, trimmed of their strings
2 medium sized turnips, halved and thinly sliced
1 tablespoon vegetable oil
1 shallot, chopped
1 garlic clove, chopped
1 teaspoon sugar
salt and pepper, to taste
1 tablespoon chopped parsley

Steps:

  • Bring a medium sized pot to a boil and add salt.
  • Cook peas for 3 minutes.
  • Add turnips and continue cooking another 2 minutes.
  • Meanwhile, in medium sized pan, over medium heat, saute the shallots in oil until translucent.
  • Add garlic and fry until fragrant.
  • Add drained vegetables along with the sugar and stir until glazed.
  • Adjust seasonings.
  • Sprinkle parsley on top and serve immediately.
