1 cup water
1 egg
2/3 cup packed brown sugar
1/2 cup water
1/2 cup orange juice
1/4 cup butter or margarine
1 1/2 teaspoons grated orange peel
Whipped cream or vanilla ice cream, if desired

Steps:

  • Heat oven to 350°F. In ungreased 8-inch square (2-quart) glass baking dish, stir together gingerbread mix, 1 cup water and the egg with fork until blended. Stir vigorously about 2 minutes, scraping corners frequently, until well mixed. Sprinkle brown sugar evenly over batter.
  • In 2-quart saucepan, heat 1/2 cup water, the orange juice and butter over high heat, stirring frequently, until mixture is hot and butter is melted. Stir in orange peel. Slowly pour over batter and brown sugar (some batter will rise to top).
  • Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Carefully remove from oven because cake floats on top of pudding layer (top of baked cake will have cracks). Cool 30 minutes. Serve warm with whipped cream.

1/4 pound (1 stick) unsalted butter
1 cup unsulfured molasses
1 cup (8 ounces) sour cream
1 1/2 teaspoons grated orange zest
2 1/3 cups all-purpose flour
3/4 teaspoon baking soda
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon kosher salt
1/3 cup minced dried crystallized ginger (not in syrup)
8 ounces cream cheese, at room temperature
1/4 pound (1 stick) unsalted butter, at room temperature
1/2 teaspoon orange zest
1/2 teaspoon pure vanilla extract
1/2 pound confectioners' sugar, sieved
6 pieces dried crystallized ginger (not in syrup), sliced in half

Steps:

  • Preheat the oven to 350 degrees F. Line a muffin pan with paper liners.
  • Place the rum and raisins in a small pan, cover, and heat until the rum boils. Turn off the heat and set aside. Place the butter and molasses in another small pan and bring to a boil over medium heat. Pour the mixture into the bowl of an electric mixer fitted with the paddle attachment. Cool for 5 minutes, then mix in the sour cream and orange zest.
  • Meanwhile, sift the flour, baking soda, ginger, cinnamon, cloves, and salt together into a small bowl. Mix with your hand until combined. With the mixer on low speed, slowly add the flour mixture to the molasses mixture and mix only until smooth. Drain the raisins and add them and the crystallized ginger to the mixture with a spatula.
  • Divide the batter among the muffin pan (1 rounded standard ice cream scoop per cup is the right amount). Bake on the middle rack of the oven for 25 to 30 minutes, or until a toothpick comes out clean. Cool for 10 minutes before removing from the pan.
  • For the frosting, mix the cream cheese, butter, orange zest and vanilla in the bowl of an electric mixer fitted with the paddle attachment until just combined. Add the sugar and mix until smooth.
  • When the cupcakes are cool, frost them generously and garnish with a slice of crystallized ginger.

1 tablespoon baking powder
1 teaspoon cinnamon
1/2 cup skim milk, plus

1/4 cup packed brown sugar

2 tablespoons canola oil (or other vegetable oil)
1 1/2 cups boiling water
6 tablespoons frozen orange juice concentrate, thawed
3 tablespoons packed brown sugar

Steps:

  • Combine flours, baking powder and cinnamon in an ungreased 9 x 9 inch baking pan (yes, you can mix it right in the pan).
  • In a small bowl, mix together milk, 1/4 cup brown sugar, molasses and oil.
  • Add to dry mixture in baking pan.
  • Mix until batter is smooth, then spread it out evenly.
  • Combine hot water, orange juice concentrate and 3 T brown sugar (you can use the same small bowl).
  • Carefully pour over the batter in the baking pan.
  • Bake in preheated 350 F oven for 40 minutes.
  • Remove from oven and allow to stand for 10-15 minutes before serving.
  • Best served hot.
  • (If you have leftovers, use the microwave to warm up a serving.).

  • Preheat the oven to 150C/gas mark 3. Grease and line a 7in square baking tin with greaseproof paper.
  • Melt the butter, chocolate, sugar, syrup, milk and zest together in a pan over a gentle heat. Sift flour, bicarb and spices into a large mixing bowl.
  • Once melted add the chocolate mixture to the dry ingredients and beat well. Add the egg and beat again. Pour mixture into the tin. Tap the pan on the work surface to allow excess air bubbles to rise to the top.
  • Bake in the oven for exactly 30 mins, test cake with a skewer in the centre, if it does not come out clean leave for another five mins and keeping testing until skewer is clean. Leave to cool in tin for 10 mins then empty out on to a wire tray to cool completely. Place cake on serving dish.

Using oven mitts as aid, remove mold from pot. Uncover and let stand 10 minutes. Cut around top center and sides of pudding to loosen. Turn pudding out onto rack and cool 20 minutes. (Can be made 1 day ahead. Cool completely. Return to mold; cover and chill. Resteam 45 minutes to heat through, then turn out of mold.) Transfer pudding to platter. Cut pudding into wedges; serve with sauce.
