Birria is usually served with a side of consomé, the rich pan juices from the roasted meat. We went a step further and puréed it with the roasted vegetables and softened dried chiles left in the roasting pan, turning the brothy soup into a spicy dipping sauce.

1 (7-10-lb.) bone-in leg of goat or lamb, untrimmed
⅓ cup Diamond Crystal or 3 Tbsp. Morton kosher salt, plus more
1 large white onion, chopped
10 garlic cloves, peeled
3 large guajillo chiles, seeds removed
1 large ancho chile, seeds removed
2 dried chiles de árbol
1 (3") piece ginger, peeled
2 whole cloves
1 (14.5-oz.) can diced fire-roasted tomatoes
1 Tbsp. black peppercorns
1 Tbsp. dried oregano, preferably Mexican
1 tsp. ground cumin
5 Persian cucumbers, cut into (¼") pieces
½ medium red onion, cut into (¼") pieces
⅓ cup fresh lime juice
¼ cup chopped basil
1 tsp. kosher salt
1-4 habanero chiles, seeds removed, finely chopped
24 (6"-diameter) corn tortillas, warmed

Steps:

  • Rub goat leg with ⅓ cup Diamond Crystal or 3 Tbsp. Morton kosher salt, working into flesh and fat. Wrap tightly in parchment or wax paper and chill at least 3 hours and up to 3 days.
  • Place a rack in lower third of oven; preheat to 350°F. Evenly scatter onion, garlic, guajillo chiles, ancho chile, chiles de árbol, ginger, cloves, tomatoes, peppercorns, oregano, and cumin across a large roasting pan and place a roasting rack on top. Unwrap goat leg and set on rack. Pour 4 cups water into pan and cover tightly with foil. Bake until meat is pulling away from the bone and shreds easily with a fork, 4½-5 hours.
  • Let leg sit (still covered) until cool enough to handle (about 1 hour). Shred meat into small pieces and place in a large bowl; discard bones. Remove ginger from pan; discard. Working in batches if needed, purée liquid and aromatics left in pan in a blender until smooth. Pour half of consomé over meat and mix to coat. Taste and season with more salt if needed. Cover and set aside. Pour remaining consomé into a medium bowl and set aside for serving.
  • Do Ahead: Meat can be prepared 3 days ahead. Chill meat and consomé.
  • Toss cucumbers, onion, lime juice, basil, and salt in a medium bowl. Add 1-4 chiles, depending on their heat and how spicy you like things, and let sit 10 minutes.
  • Top warm tortillas with meat, then salsa. Serve with consomé for dipping.

1 cup white vinegar
15 whole black peppercorns
1 (1 inch) piece fresh ginger root

2 pounds plum tomatoes
2 cups water

Steps:

  • Bring a pot of water to a boil; add ancho chile peppers and cook for 5 minutes. Remove from heat and let chiles soak in the hot water until soft, about 10 minutes; drain.
  • Blend softened chiles, 1 cup vinegar, 15 peppercorns, ginger, 2 garlic cloves, 3 cloves, 1 pinch marjoram, 1 pinch cumin, and 1 pinch thyme in a blender until marinade is smooth. Strain marinade into a bowl.
  • Place goat in a bowl and pour in marinade, coating goat completely. Cover and refrigerate for 8 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Transfer goat and marinade to a baking dish; cover with a lid or aluminum foil.
  • Bake in the preheated oven until goat is very tender, about 3 1/2 hours. Remove lid or foil and cook until goat is browned, about 15 minutes. Pour meat juices into a container and reserve. Cover the goat to keep warm.
  • Bring a large pot of water to a boil; add tomatoes and boil until soft, 5 to 10 minutes. Drain and let tomatoes cool until easily handled.
  • Peel tomatoes and place in blender with reserved goat juices, 2 cups water, 3 peppercorns, 2 garlic cloves, 2 cloves, 1 pinch marjoram, 1 pinch thyme, and 1 pinch cumin. Blend until meat sauce is smooth.
  • Pour meat sauce into a small saucepan and season with salt; bring to a boil. Reduce heat and simmer over low heat.
  • Bring a pot of water to a boil; add chiles de arbol and boil until soft, about 5 minutes. Drain.
  • Blend softened chiles with 1/4 cup vinegar, 10 peppercorns, 1 garlic clove, and salt until hot sauce is smooth. Strain into a glass.
  • Cut goat into bite-sized pieces and serve with a generous amount of meat sauce and hot sauce on the side. Sprinkle onion over goat.

Portobello mushroom caps, sliced (1 to 1 1/2 per person)
1/4 cup extra-virgin olive oil (enough to coat while tossing)
Garlic powder
Lime, to squeeze over mushrooms while grilling

1 white onion, chopped
2 tomatoes, chopped
2 jalapeno peppers, chopped

2 flour tortillas
4 radishes, thinly sliced

Steps:

  • Set up your grill and heat up your coals.
  • When coals are almost ready, toss mushrooms caps in oil and garlic. Set stand for a few minutes. Place mushroom slices onto grill. Cook for about 3 to 5 minutes.
  • Meanwhile, combine the ingredients for the Pico de Gallo. Season with salt and let stand for a few minutes.
  • Squeeze lime over the mushroom slices and then sprinkle with some salt. Flip and cook for another 1 to 2 minutes and squeeze more lime and salt over slices.
  • Heat tortillas on open section of grill while mushrooms finish up, about 1 to 2 minutes.
  • Remove tortillas from the grill. To assemble, place a few slices of the mushrooms on a tortilla, top with Pico de Gallo and sliced radishes, and serve immediately.

2 teaspoons sesame seeds
2 teaspoons ground cumin
1 teaspoon whole black peppercorns
1 teaspoon coriander seeds
½ (1 inch) piece cinnamon stick
2 whole cloves
3 bay leaves
2 cups beef broth
2 tablespoons vegetable oil, divided
4 peppers guajillo chile peppers
2 small ancho chile pepper
1 chile de arbol chile peppers
1 large white onion
7 cloves garlic, minced
2 pounds goat stew meat, cut into 1-inch cubes
¼ cup distilled white vinegar
2 teaspoons salt
2 teaspoons dried Mexican oregano
¼ teaspoon ground thyme
1 (14 ounce) can diced tomatoes
16 (6 inch) flour tortillas
1 cup grated Cheddar cheese
1 lime, cut into wedges
1 tablespoon chopped fresh cilantro, or to taste

Steps:

  • Heat sesame seeds, cumin, peppercorns, coriander seeds, cinnamon stick, cloves, and bay leaves in a dry pan over medium heat until fragrant and the sesame seeds begin to brown. Remove from the pan and set aside.
  • Heat beef broth in a medium-sized pot and turn to a low simmer.
  • Heat 1 tablespoon vegetable oil in a large pot over medium heat. Add guajillo, ancho, and chile de arbol peppers, turning occasionally. Remove the peppers once they have started to blister a bit, 5 to 7 minutes.
  • Place the peppers in the pot of simmering broth. Cover and allow to simmer until the peppers are rehydrated and tender, about 20 minutes.
  • Slice 3/4 of the onion into thick slices and finely dice the rest. Put the diced onion aside. Add the thick slices to the pot, along with the garlic, and cook until the onion is browned, about 5 minutes. Remove and set aside.
  • Heat remaining oil in the pot over medium-high heat, and add goat meat. Allow to brown on all sides, 5 to 7 minutes.
  • Add the warmed spices, peppers and broth, onions, garlic, vinegar, salt, Oregano, and thyme into a blender. Allow to cool slightly before blending to prevent scalding yourself, about 5 minutes. Blend until very smooth.
  • Add the blended sauce into the pot, and stir, scraping all the browned bits off the bottom of the pot. Cover and simmer over medium-low heat until the meat is very tender, about 2 1/2 hours.
  • Remove the meat from the sauce and allow to cool enough to shred. Shred the meat with your hands or with 2 forks. Stir in about 1/4 cup of the sauce. Blend the diced tomatoes until very smooth and add to the sauce.
  • Working in batches, dip each tortilla in the pot of sauce and place in a hot pan. Add a bit of the meat mixture and a bit of cheese. Fold in half and brown on both sides, 3 to 4 minutes. Pour the remaining sauce into 4 small bowls. Serve the tacos and sauce with the reserved diced onion, lime wedges, and cilantro.

2 cups masa harina
2 teaspoons salt
1/4 teaspoon baking powder
All-purpose flour, for dusting
1 tablespoon vegetable oil
1 small onion, cut into 1/4-inch dice
1 pound ground beef
2 large tomatoes, cut into 1/2-inch dice
1 tablespoon ground cumin
1/2 tablespoon dried oregano
1/4 teaspoon freshly ground black pepper
Pico de Gallo for Beef Tacos

Steps:

  • Combine masa harina, 1 teaspoon salt, and baking powder. Add 1 cup plus 3 tablespoons warm water (100 to 110 degrees), and quickly knead together by hand to form a smooth dough.
  • Lightly flour a work surface. Pinch off a 1 1/2-inch ball of dough, and roll it into a 4-inch disc.
  • Heat a heavy skillet, preferably cast-iron, to medium high. Cook discs, 1 or 2 at a time, until just puffed and slightly golden, 2 to 3 minutes; turn and cook 1 to 2 more minutes. Remove from heat; fold in half to create a shell. Repeat with remaining dough.
  • Heat oil in a large skillet over medium-high heat. Add onion; cook until soft, 3 to 5 minutes. Add beef; cook, stirring, until well browned, 5 to 7 minutes. Drain excess fat. Stir in tomatoes, cumin, and oregano, and season to taste with pepper and remaining teaspoon salt. Simmer until tomatoes break down and mixture is saucy, 3 to 5 minutes.
  • Fill each shell with about 1 tablespoon shredded cabbage and 1 tablespoon beef. Spoon a small amount of Pico de Gallo over beef, or serve on the side.
