Goat Cheese-Onion Naan with Mango Salsa image

Yield Makes 4 breads (2 servings per bread)

Number Of Ingredients 8

1 1/2 cups unbleached all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup plus 2 tablespoons plain yogurt
1 cup crumbled soft fresh goat cheese
3 tablespoons butter
3 1/2 cups sliced Maui or yellow onions
Olive oil Mango Salsa

Steps:

  • Sift first 3 ingredients into bowl. Mix in yogurt and 1/4 cup goat cheese. Knead on floured surface until smooth and elastic, about 10 minutes. Form into ball. Return to bowl; cover with plastic. Let rest 2 hours (dough will not rise).
  • Melt butter in large skillet over medium heat. Add onions; sauté until deep golden, about 25 minutes. Season with salt and pepper. Cool. Set aside. Turn dough out onto floured surface. Divide into 4 pieces. Form each into ball. Roll out each to 8-inch round.
  • Brush heavy medium skillet with olive oil; heat over medium-high heat. Add 1 dough round and cook until brown spots appear all over bottom, about 5 minutes. Turn bread over and cook until brown spots appear all over second side and bread is cooked through, about 5 minutes. Transfer to large baking sheet. Repeat with remaining dough rounds. (Can be made 2 hours ahead. Cover onions and bread separately; let stand at room temperature. Rewarm bread uncovered in 350¡F oven about 5 minutes.)
  • Preheat broiler. Spread onion mixture atop breads. Sprinkle with 3/4 cup goat cheese. Broil breads just until cheese begins to melt, watching closely to avoid burning, about 2 minutes. Cut breads into wedges. Serve with Mango Salsa.

2 spring onions
5 ounces goat cheese
1/2 mango
1/4 cup avocado oil
1/4 cup raspberry vinegar
1 teaspoon sugar

ground black pepper

Steps:

  • Place the spinach leaves in the salad bowl.
  • Crumble thick pieces of the goats cheese into the salad.
  • Slice the mango into very thin one inch slices and add to the salad.
  • Slice the spring onions into ringlets and add to the salad.
  • Mix the avocado oil.
  • raspberry vinegar and sugar together and add salt and pepper to taste.
  • Pour the dressing over the salad and toss well.

1 large ripe mango, peeled, pitted, and thinly sliced
1/2 small red onion, thinly sliced
1 jalapeno, thinly sliced
1/3 cup fresh cilantro leaves

Steps:

  • Spread goat cheese on tortillas. Divide mango, onion, jalapeno, and cilantro on one half of each tortilla. Fold tortilla over filling.
  • Heat a large heavy skillet over medium-high. Working in batches, cook quesadillas until cheese softens and tortillas are crisp and browned in spots, 1 to 2 minutes per side (if skillet begins to scorch, reduce heat to medium). Transfer quesadillas to a cutting board and cut each into 4 wedges. Serve immediately.

1/4 teaspoon bicarbonate of soda
2 tablespoons skim milk
2 tablespoons low-fat plain yogurt
200 g low-fat cheddar cheese (grated)
1 large onion (chopped)
4 green chilies, chopped
1 tablespoon red chile, crushed
1 tablespoon cumin seed
2 tablespoons fresh coriander leaves (chopped)

Steps:

  • Sieve refined flour along with salt and soda bicarbonate into a bowl. Add milk and yogurt and mix. Add sufficient water and knead into a soft dough. Cover with a damp cloth and set aside for fifteen minutes. Divide into eight equal portions.
  • mixx both cheeses with onion ,green chillies,cumin seeds,coriander leaves ,red chillies and salt.and Divide into eight equal portions.
  • Roll out each portion of dough into a puri, place one portion of cheese mixture in the centre, gather in the edges and roll into a ball.
  • Further roll into a round disc as thin as possible. Heat a pressure cooker. Apply a little water on one side of the kulcha and stick onto the inner wall of the cooker. Similarly stick on two more kulchas.
  • Cook on medium heat for two to three minutes. Keep the cooker open side down on the flame and cook so that both the sides of the kulchas get cooked. Remove the kulchas with a tong and serve hot.

2 tablespoons red wine vinegar
4 slices whole grain bread, quartered
6 ounces herbed goat cheese, slightly softened
⅓ cup Hellmann's® or Best Foods® Real Mayonnaise

Steps:

  • Combine grapes, onion, jalapeno pepper, cilantro and vinegar in medium bowl. Season, if desired, with salt and pepper. Let stand at least 30 minutes.
  • Preheat oven to 375 degrees F. Arrange bread on large baking sheet in a single layer and bake, turning once, 8 minutes or until lightly golden brown and crisp on both sides. Remove and let cool.

450g strong bread flour , plus extra to roll out
7g sachet fast action yeast
350ml warm water
1 tbsp olive oil
8 tsp mango chutney

Steps:

  • Mix the flour in a bowl with 2 tsp salt and the yeast. Make a well, add the water and oil then mix to a rough dough. Leave it to sit for 5 mins as it is. Flour the work surface and hands, then knead the dough for 1-2 mins until smooth and springy. Leave it to sit for 10 mins in a warm place, covered with oiled clingfilm. Don't worry about waiting for it to double in size.
  • Cut the dough in to 8 even pieces, roll each one out into a thin circle. Spoon 1 tsp mango chutney into the middle of the circle, then fold one side over to make a semi-circle shape. Press the edges together. Heat the grill to high. Dust a baking sheet with flour, then grill the breads for 1 ½-2 mins on each side until puffed and golden. You'll need to do this in a few batches. Serve with the curry.

50g mature cheddar , grated
50g hard mozzarella , grated
3 spring onions , thinly sliced
1 small green chilli , finely chopped
½ tsp cumin seeds
1 tbsp coriander , roughly chopped
1 large round garlic naan bread (we used a fresh one from ocado.com)
1 tbsp mango chutney , plus extra to serve
10g butter

Steps:

  • In a bowl, mix the cheeses, spring onion, chilli, cumin seeds and coriander.
  • Cut the naan in half down the centre. Spread one half with the chutney, top with the cheese mixture, then cover with the other half. Melt the butter in a frying pan over a medium heat until just beginning to foam. Add the naan sandwich and use something heavy like a saucepan to press it down. Fry on one side for 4-5 mins or until golden brown, then turn over and repeat. Both sides should be crisp, with the cheese gooey. Cut in half and serve with extra chutney.
