1 log (11 ounces) fresh goat cheese, cut into 16 slices
3 tablespoons prepared pesto

Steps:

  • Preheat oven to 425°. Place bread slices on a baking sheet; top with cheese., Bake until cheese begins to brown and bread is toasted, 10-12 minutes. Top with pesto. Serve warm.

  • Line a small mixing bowl with 2 pieces of plastic wrap crosswise overlapping bowl by 3 inches on each side Mix goat and cream cheese together in a another bowl in food processor add garlic, spinach, basil, chop with off and on until chopped. With processor running slowly add slowly add oil. Open processor and add Parmesan cheese use off / on until blended. spread 1/3 of goat and cream cheese to bowl lined with plastic wrap add 1/2 of pesto mixture and spread on top of cheese in plastic lined bowl spread 1/2 of sun dried to tomatoes on top of pesto mixture in plastic lined bowl spread 1/2 of roasted walnut on top of pesto and sun dried tomato mixture in plastic lined bowl spread 1/3 of goat and cream cheese mixture on top of goat cheese, tomato and nut mixture in the bowl lined with plastic wrap repeat adding the pesto, sun dried tomato and nuts to plastic lined bowl cover with balance of cheese mixture. fold over excess plastic wrap and refrigerate for 4 hours Remove fro refrigerator mixture from bowl unwrap and place on plate let the mixture return to room temperature prior to serving

1 (9 inch) unbaked pie crust
4 tablespoons crumbled goat cheese
3 eggs
½ cup half-and-half cream
1 tablespoon all-purpose flour
8 oil-packed sun-dried tomatoes, drained and cut into strips
salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spread pesto evenly in the bottom of the pie crust. Sprinkle goat cheese over pesto.
  • In a large bowl, beat together eggs, half-and-half cream, and flour. Season with salt and pepper. Pour over goat cheese in pie crust. Arrange sun-dried tomatoes on top.
  • Bake in preheated oven for 30 minutes, or until done.

3 medium zucchini
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon pepper
1/3 cup chèvre (goat) cheese
8 teaspoons basil pesto
15 small basil leaves
15 toothpicks

Steps:

  • Line cookie sheet with paper towels. Cut 5 thin lengthwise strips, each 1/4 inch thick, from each zucchini. Brush both sides of strips with oil. Sprinkle with salt and pepper.
  • Heat grill pan or grill over medium-high heat. Place zucchini on grill pan, and cook 4 to 5 minutes or until zucchini is softened. Turn, and cook 2 minutes longer. Transfer zucchini to pan. Cool 5 minutes.
  • Place 1 teaspoon cheese onto end of each zucchini strip. Top cheese with 1/2 teaspoon of the pesto and 1 basil leaf. Roll up, and secure with toothpick. Refrigerate at least 30 minutes until completely chilled.

1/2 cup pesto sauce

Steps:

  • Preheat your oven to 400 degrees.
  • Pour the drained diced tomatoes onto the center of an oven-safe serving dish (I like to use a glass pie dish). Place the goat cheese log on top of the tomatoes, then spread the pesto on top of the goat cheese.
  • Place in oven and cook until goat cheese is warmed through and soft to the touch (about 15-20 minutes). Serve with crackers, Italian bread, pita chips, or whatever else you have available.

8 ounces goat cheese
1 garlic clove, minced
1 1/4 teaspoons dried oregano or 4 teaspoons fresh oregano
1/8 teaspoon black pepper
1/4 cup basil pesto
1/2 cup sun-dried tomato packed in oil, drained and chopped
1 tablespoon sun-dried tomato packed in oil (cut into slivers for garnish) (optional)
5 -8 leaves fresh basil (for garnish, optional, optional) (optional) or 2 -3 oregano sprigs (for garnish) (optional)
2 loaves French bread, sliced thin (or crackers)

Steps:

  • Line an 8 x 4 loaf pan with plastic wrap.
  • Process the first five ingredients in a food processor until smooth.
  • Spread one-third of the cheese mixture in the lined pan.
  • Top with the pesto.
  • Spread one-third of the cheese mixture over pesto.
  • Spread the chopped, drained sun dried tomatoes next.
  • Top with the remaining cheese mixture.

Instructions. Preheat oven to 325° F. In a bowl whisk together the goat cheese, Greek yogurt, pecorino romano, pesto, sun dried tomatoes, salt and pepper. Divide the filling evenly into the phyllo shells. Bake for 12-15 minutes. Top the bites with extra sun dried tomatoes, pine nuts and basil. Serve immediately.
