3 tablespoons olive oil
2 teaspoons grated lemon zest
1 garlic clove, minced
1/2 teaspoon minced fresh oregano or rosemary
1/4 teaspoon crushed red pepper flakes
1/2 cup assorted pitted Greek olives
1 package (5.3 ounces) fresh goat cheese
1 tablespoon minced fresh basil
Assorted crackers

Steps:

  • In a small skillet, combine the first 5 ingredients; heat over medium heat just until fragrant, 2-3 minutes, stirring occasionally. Stir in olives; heat through, allowing flavors to blend. Cool completely., To serve, place cheese on a serving plate. Stir basil into olive mixture; spoon over cheese. Serve with crackers.

One pan recipe for slow roasted goat leg seasoned with aromatic spices and served on a bed of vermicelli rice. The result is tender and juicy meat that will impress your guests!

1 goat shoulder ( (2 to 3 lbs))
5 cloves garlic (finely chopped)
1 teaspoon paprika
2 tablespoon olive oil
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon black pepper
1 teaspoon 7 spices (or all spice)
2 tablespoon balsamic vinegar
1 ½ cup water (or stock)
6 cardamom pods
5 cloves garlic

Steps:

  • Preheat the oven to 450 degrees.
  • In a bowl, add all seasonings ( garlic, paprika, olive oil, salt, onion powder, balsamic vinegar, seven spices, and black pepper)
  • Mix until all seasonsing are combined.
  • Pour the seasonings mixture over the goat shoulder, rub the shoulder, make sure its all coated with the seasonings.
  • Place seasoned goat shoulder in a baking dish, add water, cardamom pods, and garlic cloves.
  • Cover tightly with foil.
  • Bake at 450 degrees for 40 minutes, lower the heat to 350 degrees, and bake for 2 hours.
  • Serve it over rice and enjoy.

This recipe adapts beautifully to lamb shoulder.

Number Of Ingredients 16

1 bone-in goat shoulder, about 4 pounds look for the meaty Boer breed
Salt
freshly ground black pepper
½ cup harissa (see recipe, or use store-bought)
1 large onion, peeled and sliced
2 carrots, peeled and sliced
4 garlic cloves, smashed
2 bay leaves
1 teaspoon coriander seeds or a few sprigs fresh cilantro
1 cinnamon stick
2 tablespoons extra-virgin olive oil
2 cups low-sodium chicken stock or water
½ cup white wine
1 tablespoon honey
½ Moroccan preserved lemon, rinsed and inner flesh removed, finely chopped
2 sprigs mint leaves, roughly torn

Steps:

  • The evening before you plan to cook the shoulder, season it generously with salt, pepper and ¼ cup of the harissa. Refrigerate overnight and start to bring it to room temperature two hours before you plan to cook it.
  • Preheat oven to 350 degrees. In a large Dutch oven set over medium heat, cook the onion, carrots, garlic and spices for a few minutes in the olive oil until fragrant and slightly browned. If using cilantro sprigs, tuck them into the vegetables after they've cooked. Lay the shoulder over the vegetables.
  • In a small saucepan, bring the stock, wine and honey to a simmer and pour it over the goat. Cook uncovered in the oven for about 1 hour, adjusting the temperature so the juices maintain a very gentle simmer. Add a little more broth or water if it gets too low. Carefully turn the shoulder over and return to the oven. After 30 minutes, turn again and repeat every 30 minutes until the meat is very tender and nearly falling off the bone. Total cooking time will be 2½ to 3 hours. The slower it cooks, the more meltingly tender it will be. Cool in its juices.
  • Remove the shoulder and strain the liquid into a bowl, pushing some of the solids through the strainer. Let the liquid settle for a few minutes, then skim off all of the fat. This is made easier if you refrigerate the juices for a half hour or so, partially solidifying the fat.
  • To serve, gently reheat the meat in the juices and stir in the preserved lemon and sprinkle with mint. Serve with more harissa, yogurt and aromatic baked rice (recipe follows).

5 tablespoons extra-virgin olive oil, divided
6 medium tomatoes or large romas, cored, halved crosswise, seeded
2 small garlic cloves, thinly slivered
2 tablespoons minced fresh thyme, divided
1 sheet frozen puff pastry (half of 17.3-ounce package), thawed
1 cup coarsely grated whole-milk mozzarella cheese
1/2 cup soft fresh goat cheese (about 4 ounces)
2 large eggs
1/4 cup whipping cream
1/3 cup oil-cured black olives, pitted
2 tablespoons freshly grated Parmesan cheese

Steps:

  • Preheat oven to 300°F. Line rimmed baking sheet with foil; brush foil with 1 tablespoon oil. Place tomato halves, cut side up, on baking sheet. Sprinkle garlic and 1 tablespoon thyme over tomatoes; drizzle remaining 1/4 cup oil over. Sprinkle lightly with salt and pepper. Bake until tomatoes begin to shrink and are slightly dried but still soft, about 2 hours. Cool tomatoes on sheet. (Can be prepared 1 day ahead. Store in single layer in covered container in refrigerator.)
  • Roll out pastry on lightly floured surface to 13-inch square. Transfer pastry to 9-inch-diameter tart pan with removable bottom, pressing pastry firmly onto bottom and sides of pan. Trim overhang to 3/4 inch. Fold overhang in and press, pushing crust 1/4 inch above pan. Pierce crust all over with fork; chill 30 minutes.
  • Position rack in center of oven and preheat to 375°F. Line pastry with foil; fill with dried beans or pie weights. Bake until crust is set, about 20 minutes. Remove foil and beans; bake until crust edges are golden, piercing with fork if crust bubbles, about 12 minutes longer. Cool crust 10 minutes. Reduce oven temperature to 350°F.
  • Meanwhile, using fork, mash mozzarella cheese, goat cheese, and remaining 1 tablespoon thyme together in medium bowl. Season with salt and pepper. Add eggs and cream and stir until mixture is well blended. Spread cheese filling evenly in crust. Arrange tomato halves in filling, cut side up. Place olives between tomatoes. Sprinkle Parmesan cheese evenly over top. Bake until filling is puffed and set, about 35 minutes. Cool 5 minutes. Push up pan bottom, releasing sides. Serve tart warm.

Goat is a delicious, mild-flavored meat that is overlooked in the U.S. This recipe results in a tender, savory dish that, while unusual, is still basically good old comfort food. This would be great to serve with Israeli-style couscous; alternatively, you could add some potato chunks to the pan halfway through the cooking.

3 pounds goat shoulder
salt and freshly ground black pepper to taste
2 tablespoons olive oil
1 medium yellow onion, chopped
10 pitted prunes, chopped
¼ cup chopped Moroccan preserved lemon
½ cup dry red wine
1 ½ cups chicken broth

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Heat the oil in a Dutch oven over medium-high heat. Season the goat shoulder with salt and pepper, and place into the pan. Brown quickly on all sides. Add the onions to the pan, and cook, stirring constantly until browned. Mix in the prunes and preserved lemon; cook and stir for a few minutes to blend the flavors. Pour in the red wine and chicken broth, and bring to a simmer.
  • Cover the Dutch oven, and bake for 2 hours, or until meat is so tender that it falls off of the bone.
