COUNTRY TURNIP GREENS

Steps:
- Put the ham in a large stockpot over medium heat. Cook until the ham is crispy and the fat is rendered, about 8 minutes. Pour in the apple cider vinegar and scrape the bottom of the pot with a wooden spoon to lift up any brown bits.
- Meanwhile, rip the greens into large pieces to make it easier to fit all of them into the stockpot.
- Add the greens to the pot and season generously with black pepper. Pour in the chicken stock and stir to combine. Bring the greens to a simmer and cover the pot. Reduce the heat to medium low and cook until the greens are tender and the liquid is reduced by half, about 45 minutes. Remove the lid and continue to cook, stirring occasionally, until the liquid is nearly gone, about 10 minutes more. Serve immediately.
PATTY'S MASHED TURNIPS

Steps:
- Peel, wash, and quarter turnips.
- Boil 35-45 minutes or until tender. Strain and rinse cooked turnips.
- Place in large mixing bowl and use fork to break up turnips into smaller bits. Add milk and butter. Blend to desired consistency. Add salt and pepper to taste.

THE BEST EVER TURNIPS
Steps:
- Bring a lot of salted water to a boil and parboil the turnips for 7 minutes; add the garlic and boil 1 minute longer; drain.
- Melt 8 to 12 tablespoons of butter and cook the garlic and turnips, covered, over low heat for 5 minutes.
- Transfer turnips and garlic to a food processor and puree until smooth, adding 4 more tablespoons butter with the machine turned on. Season well with salt and pepper and, if made in advance, reheat in a double boiler.
GRANDMA MARY'S BEST EVER TURNIPS
Steps:
- Peel turnips. Cut into slices about 1/4" thick. Cut bacon into small pieces, approx. 1/2"x1/2". Place bacon into large pan for top of the stove frying. Fry bacon pieces until crispy.
- Add sugar, sliced turnips, and potato (added to remove some of the tartness of the turnips). Add water and stir ingredients well.
- Simmer and stir often for approx. 2 hours on very low heat. (Sometimes I add a little more sugar than what is called for...depends on your own personal taste.) You can salt and pepper to taste, if you like.
