3 cups cubed apples (1/2 inch)
2 tablespoons lemon juice
1 cup chopped celery
1 cup miniature marshmallows
2/3 cup fat-free mayonnaise
1/2 cup chopped pecans or walnuts

Steps:

  • In a large bowl, toss apples with lemon juice. Add celery and marshmallows. Stir in mayonnaise., Refrigerate, covered, until serving. Stir in pecans before serving.

I watched my Grandma & Mom work up apples as a young child and when I married, Grandma made sure I knew how to make my own applesauce. My sons loved this growing up and still do today. You can make this with water or apple juice instead of cider if you like. We prefer fresh pressed cider. Don't forget to save the cores and peelings to make Apple Jelly!

20 cups apples (peeled, cored, cut into chunks)
1 cup apple cider
1 tablespoon ground cinnamon
1 cup sugar (optional)
1/4 teaspoon salt

Steps:

  • Peel, core and cut up apples.
  • Place into large heavy pot and add water.
  • Cook for medium high heat, stirring often until apples are tender.
  • With potato masher, mash the fruit making it the desired consistancy. If you prefer very smooth, no chunks, process in food processor in small batches or use an inmerison blender. We like it semi-chunky so 5 or 6 presses with the masher tool is good.
  • Now, taste it. If you prefer sweeter, add the sugar. If you have used nice sweet assorted varities of apples, you may not need to add any sugar. Stir in the salt and cinnamon.
  • Carefully ladel into sterilized hot canning jars, place flats and rings on jars. Place in boiling water bath for 15 minutes.

Simple, old-fashioned apple crisp. If you want something simple and homemade on hand, you can double the filling recipe (I use a 5-pound bag of Granny Smith apples) and freeze half of it.

½ cup white sugar
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 cup brown sugar
1 cup all-purpose flour
1 cup quick-cooking oats
½ cup unsalted butter, diced
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease a 9x13-inch baking dish.
  • Combine apples, sugar, cinnamon, and nutmeg for filling in a bowl; transfer to the prepared baking dish.
  • Combine brown sugar, flour, oats, butter, and cinnamon for topping in a large bowl. Sprinkle on top of filling.
  • Bake in the preheated oven until golden and bubbly, about 1 hour.

1 large apple - peeled, cored and quartered

Steps:

  • Pour tea into large wide-rimmed cups or 1-pint soup bowls, filling them about half full. Dilute with freshly boiled water to a golden color; add 1 tablespoon sugar per cup.
  • Place an apple quarter in each cup. Stir and serve immediately.

1 can (20 ounces) unsweetened pineapple chunks
1 can (15 ounces) reduced-sugar sliced pears, drained
1 can (15 ounces) sliced peaches in juice, drained
1-1/2 cups seedless red grapes
1 package (3 ounces) cook-and-serve vanilla pudding mix
2 medium firm bananas
3 tablespoons lemon juice
1 jar (10 ounces) maraschino cherries, well drained

Steps:

  • Drain pineapple, reserving juice in a 1-cup measuring cup. In a large bowl, combine the pineapple, pears, peaches and grapes. Cover and refrigerate. , Add enough water to pineapple juice to measure 1 cup. Pour into a small saucepan. Whisk in pudding mix. Bring to a boil over medium heat, stirring constantly. Remove from heat; set aside to cool to room temperature., Slice bananas into a small bowl. Drizzle with lemon juice; gently toss to coast. Let stand for 5 minutes; drain. You don't need to chill the dressing before hand, but I like to make it ahead of time so even the little guys can help me make this when every thing else for dinner is just about ready.

1-1/3 cups all-purpose flour
2/3 cup rye flour
1/2 cup sugar
2 teaspoons baking powder
1-1/2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg, room temperature
3/4 cup unsweetened apple juice
3/4 cup sweetened applesauce
1/3 cup canola oil
1/2 cup chopped pecans

Steps:

  • In a large bowl, combine the flours, sugar, baking powder, cinnamon, baking soda and salt. In another bowl, whisk the egg, apple juice, applesauce and oil until smooth. Stir into dry ingredients just until moistened. Fold in pecans. , Pour into 2 greased 8x4-in. loaf pans. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

This was my Grandma's recipe for potato salad of course I have tweaked it up a bit, however it still is hers and tastes every bit as good as 40 years ago.

2 1/2 lbs idaho potatoes
3 tablespoons apple cider vinegar
1 cup mayonnaise
3 tablespoons yellow mustard
1/4 cup green onion, chopped
2 eggs, hard-boiled and diced
1 tablespoon fresh tarragon, chopped
5 tablespoons garlic, minced
3 medium sweet pickles, diced
1/2 cup onion, diced
1/2 cup celery, sliced thin
1 teaspoon sea salt
1 tablespoon sugar
1/2 teaspoon black pepper

Steps:

  • Place potatoes into a large heavy-bottomed pot.
  • Cover with cold water and place over medium heat.
  • Cover the pot and bring to a boil.
  • Immediately reduce heat and remove lid.
  • Gently simmer until potatoes are fork tender.
  • Drain and place into an ice bath to cool.
  • Remove skin.
  • Slice potatoes into rounds then half and place into a zip top bag.
  • Add the vinegar and toss to coat all of the potatoes.
  • Place the bag into the refrigerator overnight.
  • In a large mixing bowl, combine the mayonnaise, mustard, green onions, tarragon, garlic, pickles, diced hard boiled eggs, sugar, onions, and celery.
  • Once evenly combined, add the potatoes and season with salt and pepper.
  • Let the salad chill in the refrigerator for at least an hour before serving.

1 (11 ounce) can mandarin oranges (drain well)
1 (8 ounce) can crushed pineapple (drain well)
2 cups miniature marshmallows
1 cup sweetened flaked coconut
1 cup sour cream

Steps:

  • In a large bowl, combine the oranges, pineapple, marshmallows, coconut, and sour cream.
  • Stir until completely mixed together.
  • You can eat it immediately after mixing, but we recommend that you refrigerate for at least 2-3 hours before serving so that the sour cream can be sweetened by the fruit.
  • Try these other variations: add in chopped walnuts or pecans for an added crunch; to make it sweeter, stir in a little powdered sugar - it will also offset the tartness from the sour cream; add in a small jar of maraschino cherries; add in a can of drained fruit cocktail; add in dried cranberries and a dash of cinnamon; stir in 2 Tablespoons of instant lemon pudding powder for a lemon-taste; use pina colada flavored yogurt in place of the sour cream; top with corn flakes for an added crunch; add diced apples (if you don't like coconut, apples are a great alternative because of the crunch); add grapes (red or green) that have been halved; add diced bananas; add some marshmallow creme in with the sour cream to sweeten it up.
