Delicious & Nutritious Grape-Nuts Cookies perfect for breakfast or as a healthy after school snack

Number Of Ingredients 11

1/4 cup butter (melted)
1/2 cup firmly packed dark brown sugar
2 tablespoons maple syrup
2 tablespoons unsweetened applesauce
1 large egg
1 teaspoon vanilla or 1/2 teaspoon maple extract
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup rolled oats (old-fashioned or quick-cooking)
1/2 cup all-purpose flour
1/2 cup Grape-Nuts cereal

Steps:

  • Adjust an oven rack to the center position and preheat oven to 350 degrees. Line 2 cookie sheets with parchment paper or lightly grease them.
  • In a mixing bowl beat together the butter and brown sugar with an electric mixer on medium speed until smooth. Add the maple syrup, applesauce, egg, and vanilla or maple extract, and beat until well blended.
  • Add the baking soda, salt, rolled oats, flour, and Grape-Nuts and stir just until combined.
  • Arrange the dough by heaping teaspoonfuls spaced 2 inches apart onto the prepared cookie sheets. Press down the cookies slightly with floured or dampened fingers.
  • Bake, one cookie sheet at a time in the center of the oven until lightly golden brown, 10 to 14 minutes.
  • Remove from the oven and cool on the cookie sheets for 2 to 3 minutes and then transfer the cookies to wire racks to cool completely.

1/2 cup granulated sugar
3 tablespoons honey
2 eggs
2 teaspoons vanilla
1 teaspoon baking soda
1/4 teaspoon salt
2 cups rolled oats
1 cup flour
1 cup grape nuts cereal

Steps:

  • Preheat oven to 350.
  • Beat butter and sugar in large bowl with electric mixer on medium speed until smooth. Add honey, eggs, and vanilla; mix well.
  • Add baking soda, salt, rolled oats, flour, and grape-nuts. Combine until just mixed.
  • Drop rounded tablespoonfuls of dough, 2-inches apart onto lined or greased cookie sheets. Bake for 10-14 minutes or until golden brown.
  • Cool 2-3 minutes; remove from baking sheets. Cool completely on wire racks.

3 cups graham flour or 3 cups whole wheat flour
1/2 cup wheat germ (or omit wheat germ and use 1/2 cup additional flour)
1 cup brown sugar or 3/4 cup corn syrup
2 cups low-fat buttermilk or 2 cups sour milk
1 teaspoon baking soda
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F.
  • Combine all ingredients in large mixing bowl.
  • Beat until smooth.
  • Spread the dough on 2 large greased cookie sheets.
  • Bake for 25-30 minutes.
  • While still warm, break the dough into chunks and grate it or whirl briefly in blender, about one cup at a time.
  • Return to 250 F oven to crisp for 20-30 minutes.
  • Store in airtight container.
  • Serve for breakfast with milk.

  • Preheat oven to 375°F.
  • Mix flour, baking soda and salt in small bowl.
  • Beat margarine in large bowl with electric mixer on medium speed to soften.
  • Gradually add sugars, beating until light and fluffy.
  • Beat in egg and vanilla.
  • Gradually add flour mixture, beating well after each addition.
  • Stir in cereal, oats and cranberries.
  • Drop by rounded tablespoonfuls onto ungreased cookie sheets.
  • Bake 8 minutes or until lightly browned.
  • Cooled 1 minute; remove from cookie sheets.
  • Cool completely on wire racks.

These cookies will make your mouth sing! If you love the flavor thar toasted nuts have, you will love these cookies. They are not a doctored up oatmeal cookie, but like a really good energy bar/cookie. These have been adapted from a bakery called "Tutti's" in Montecito, CA.

2 cups old fashioned oats
1 1/4 cups whole wheat flour
1 cup all-purpose flour
1 cup Grape-nuts cereal
1/2 cup wheat germ
1/2 cup oat bran
2 teaspoons baking soda
2 cups unsalted butter, room temperature
2 large eggs
1 cup packed golden brown sugar
1/2 cup sugar
1 tablespoon vanilla extract
1 cup almonds, toasted, coarsely chopped
1 cup raisins
1 cup chopped pitted dates
14 whole pitted dates, split lengthwise in half

Steps:

  • Preheat oven to 350°F.
  • Mix oats, both flours, Grape-Nuts, wheat germ, oat bran, and baking soda in large bowl to blend.
  • Using electric mixer, beat butter in another large bowl until creamy.
  • Add eggs, both sugars, and vanilla and beat until smooth.
  • Add cereal mixture and stir just until blended; add almonds, raisins, and 1 cup chopped dates and incorporate.
  • Can be prepared 1 week ahead.
  • Cover and chill.
  • Let soften at room temperature before continuing.
  • Line 2 heavy large baking sheets with parchment paper (I use Silipat mat).
  • Using a 2 ounce cookie scoop or 1/4 measuring cup, scoop dough onto prepared baking sheets about 2-inches apart.
  • Using damp fingers, press cookies to 1/2-inch thick rounds.
  • Press 1 date half into center of each cookie.
  • Bake cookies 1 sheet at a time at 350° until brown on top, about 15 minutes.
  • Let cookies stand on baking sheet 10 minutes before transfering to rack to cool.
  • (Can be made 8 hours ahead and let stand at room temperature).
  • Serve at room temperature or slightly warm.
