Great-Grandmother Pearl's Angel Food Cake with Peaches image

"My great-grandmother won so many blue ribbons with this cake," Katie Lee says. "I love to serve it with peaches, because the cake sops up the juices so nicely."

2 c. egg whites
2 tsp. cream of tartar
1/2 tsp. salt
3 c. sugar
2 c. cake flour
1 tsp. pure vanilla extract
1 tsp. pure almond extract
5 peaches
Lightly sweetened whipped cream

Steps:

  • Preheat the oven to 325°. In a standing electric mixer, beat the egg whites at medium speed until foamy. Add the cream of tartar and salt and beat until stiff peaks form. Beat in 2 1/2 cups of the sugar, a few tablespoons at a time, until smooth and glossy, about 4 minutes.
  • Transfer the egg whites to a large, wide bowl. Using a fine sieve, gradually sift the flour over the egg whites, gently folding in the flour with a spatula. Fold in the vanilla and almond extracts. Scrape the cake batter into a 10-inch angel food cake pan. Using a table knife, slice through the cake batter several times to release any air bubbles. Tap the cake pan once or twice on a flat surface.
  • Bake the cake in the center of the oven for 20 minutes. Increase the oven temperature to 350° and bake the cake for about 35 minutes longer, until a toothpick inserted in the center comes out clean. Invert the pan onto the neck of a wine bottle and let the cake cool completely.
  • Meanwhile, toss the peaches with the remaining 1/2 cup of sugar and refrigerate, stirring occasionally, until juicy, for at least 1 hour or up to 4 hours.
  • To loosen the cake, run a thin-bladed knife around the side and tube of the pan. Unmold the cake and transfer to a platter. Cut the cake into wedges and serve with the peaches and whipped cream.

2 teaspoons cornstarch
1 tablespoon cold water
1 box Betty Crocker™ white angel food cake mix
1/2 teaspoon ground cinnamon
3 cups frozen (thawed) reduced-fat whipped topping
1 cup sliced peaches

Steps:

  • In 1-quart saucepan, heat jelly to boiling. In small bowl, mix cornstarch and 1 tablespoon water; stir into jelly. Heat to boiling, stirring constantly. Boil and stir 1 minute. Cool completely.
  • Bake and cool cake as directed on box for angel food (tube) pan. Remove from pan.
  • In medium bowl, gently fold cinnamon into whipped topping. Spread on top and side of cake. Arrange peach slices on top. Stir glaze; spread over peaches and top of cake, allowing some to drizzle down side. Store in refrigerator.

3 eggs
1/3 cup vegetable oil
1 1/4 cups water
1 (4 ounce) box vanilla instant pudding mix (can use sugar free)
1 (32 ounce) can sliced lite peaches, drained and diced
2 (8 ounce) packages cream cheese, softened (fat free works just fine)
1 cup sugar (or Splenda)
6 tablespoons peach juice

Steps:

  • Prepare a 9 X 13 inch cake pan with grease and flour or spray.
  • Mix cake mix according to directions on box. (Note: The amount of eggs, oil, and water may be different on your cake mix than is listed here).
  • Add 1 box of instant vanilla pudding mix to cake mix. Pour batter into pan.
  • Arrange peaches, drained, on top of batter.
  • Mix together cream cheese, sugar, and peach juice. Pour over peaches.
  • Bake in 350 degree oven for 50 - 60 minutes unitl done.
