Steps:
- Place grapes, sugar and lemon juice into a preserving pan or similar.
- Using a gentle heat dissolve the sugar slowly, stirring frequently.
- As the mixture heats up break up some of the grapes with your wooden spoon or use a potato masher in order the release the grapes' juices.
- Once all the sugar has dissolved fully (around 20 minutes) take the mixture off the heat and use a stick blender to blend the grapes to a juice like consistency.
- Put pan back on the heat, bring to a rolling boil and then time for 25 minutes, stirring continuously. (You could start with 23 minutes as depending on freshness and variety of grapes the setting time can vary a little).
- Take the pan off the heat and test for set by placing a few drops of the jam on a chilled saucer and place in fridge for a minute.
- The jam should form a crinkle when you push your finger through it.
- If not then boil for another 2 minutes and re-test until set is achieved.
- Pot up in hot jars and place lids on immediately.
- Store in a cool dry place and once opened keep in fridge.

GREEN AND BLACK MACERATED GRAPES
Buy the best black grapes that have seeds, do not use purple ones, what a luxury! Serve as part of a dessert, or in place of one, for a light meal. Great on a side-buffet, next to a salad.

Steps:
- Wash all of the green grapes after detaching them from stems. Place in a bowl, that will accommodate the remaining ingredients.
- Detach the black grapes from the stems and wash those as well. Place on a surface. Cut each in half. Using a paper clip, that has been bent straight, pull out the seeds from each half, using the smallest eye, place each cleaned half in the grape bowl, making sure there are no seeds still attatched.
- Add the grated lemon zest, sugar and strain over the orange juice.
- Stir well and cover, chilling two or three hours before consumption.

- Keeping grapes on stems, poke each grape several times with a wooden pick and put in a large heatproof bowl. In a saucepan stir together remaining ingredients and bring to a boil. Pour hot syrup over grapes. Macerate grapes at room temperature, gently turning occasionally, 1 hour. Chill grapes, covered, at least 2 hours and up to 2 days.
CHAMPAGNE GRAPES
Steps:
- Cut grapes into small clusters of 2 to 4 grapes each. Pour Champagne into a plastic bowl with a tight-fitting lid. Add granulated sugar and zest; stir gently until sugar dissolves. Add grapes, cover and chill 8 hours. Pour off marinade. Dry grapes on a paper towel; sprinkle with superfine sugar and zest.
PICKLED GRAPES
We had pickled grapes as part of an appetizer that was served at Teatro ZinZanni. These ones don't taste exactly the same as the ones chef Tom Douglas served there, but they're a tasty addition to a cheese or charcuterie plate. They taste similar to a sweet pickle, only better. I like to mix red and green seedless grapes, but you can use one or the other. I also use Splenda, but feel free to use granulated sugar if you desire. This recipe is adapted from one I found on NPR, which in turn was adapted from a recipe from Seattle's Boat Street Cafe. They are ready to eat after about 8hrs in the brine.

Steps:
- Rinse & dry grapes, and carefully remove all stems. Using a sharp paring knife, trim away the stem end of the grape (or 'belly button'). Put the grapes into a medium bowl, and set aside (I like to use a 1qt glass Pyrex measuring cup).
- In a medium saucepan, combine remaining ingredients, except for the Splenda (but if you're using sugar, add it now). Bring mixture to a boil over medium heat. If using Splenda, remove from heat and add it now, stirring until dissolved. Pour mixture over the grapes; stir to combine. Cover, and set aside to cool at room temperature.
- Cover the bowl with plastic wrap (or pour grapes & brine into jars with tight fitting lids); chill at least 8hrs or overnight. Serve cold.
