Garlic, hazelnuts, and lime combine with green beans in this savory side dish recipe.

2 pound fresh green beans, trimmed
0.333 cup fresh Italian (flat-leaf) parsley
1 tablespoon snipped fresh rosemary
2 teaspoon finely shredded lime peel
1 tablespoon fresh lime juice
1 clove garlic, minced (1/2 tsp.)
2 tablespoon extra virgin olive oil
0.333 cup hazelnuts, toasted and chopped*
Lime Wedges (optional)

Steps:

  • Bring large saucepan of water to boiling. Add 1 tablespoon salt and green beans. Cook beans until crisp-tender, 3 to 4 minutes. Drain and immediately plunge in ice water. Let sit in ice water 3 minutes or until cool. Drain well and set aside.
  • In small bowl combine parsley, rosemary, lime peel and juice, and garlic. Set aside.
  • In 12-inch skillet, heat olive oil over medium-high heat. Add beans. Cook, stirring occasionally, 3 to 4 minutes or until heated through. Season with 1/2 tsp. each salt and black pepper. Remove from heat. Stir in lime mixture and hazelnuts. Serve with lime wedges. Serves 8.

1 tablespoon extra-virgin olive oil
3 tablespoons butter
2 large garlic cloves, minced
1 teaspoon red pepper flakes

Steps:

  • Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
  • Heat a large heavy skillet over medium heat. Add the oil and the butter. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.

1 lb green beans (Fresh or Frozen any style)
3 tablespoons butter (Reduce or substitute if you like)
1 tablespoon olive oil
1/2 teaspoon garlic powder
1 teaspoon sea salt
1/2 teaspoon ground pepper
1 -2 tablespoon lime juice (Minimum 1tbsp, this is a key ingredient)

Steps:

  • Heat oven to 380°F.
  • Prepare and grease a baking pan.
  • Melt Butter and combine butter with olive oil and dry ingredients. Toss the green beans in this mixture until evenly coated.
  • Pour coated green beans into greased pan and spread out evenly. A glass baking dish works well here.
  • Cook this for approximately 35 minutes or until the green beans on the top begin to lightly brown on the tips.
  • You may also broil these at the end to help brown and crisp your beans.

6 oz shallots (5 medium), thinly sliced crosswise and separated into rings
1 small fresh Thai or serrano chile (2 1/4 inches long; preferably red), thinly sliced crosswise
1/2 teaspoon salt
1/2 cup chopped fresh mint

Steps:

  • Cook beans in a 4- to 5-quart pot of boiling salted water , uncovered, until just tender, about 5 minutes. Drain beans in a colander.
  • Heat oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then fry shallots in 3 batches, stirring frequently, until golden brown, 3 to 5 minutes per batch (watch carefully; shallots burn easily). Transfer shallots quickly as browned with a slotted spoon to paper towels to drain. (Shallots will become crisp as they cool.)
  • Discard all but about 1 tablespoon oil from skillet, then cook chile over moderate heat, stirring, until softened, about 2 minutes. Add beans and salt and toss with tongs until heated through. Remove from heat and add fried shallots and mint, tossing to combine.

  • In a medium saucepan, bring 6 cups water and 1 tablespoon salt to a boil over high heat. Add butter beans and cook until tender, 9-12 minutes, depending on the size of the beans. Drain in a colander; shake colander several times to shed as much water as possible.
  • Put butter in a large serving bowl, and pour warm butter beans on top. Toss beans with butter until all the butter is melted. Add lime juice and toss again to distribute. Fold in mint, season with salt and pepper, and scatter lime zest over the top. Serve immediately.
