Sauteed green beans with onion - one of my favorite fresh green bean recipes. Also good with bacon or slivered almonds.

1 pound fresh green beans, trimmed
1 pinch salt
4 tablespoons extra-virgin olive oil
1 medium onion, finely diced
1 shallot, chopped
½ teaspoon garlic salt
½ teaspoon soy sauce
salt and ground black pepper to taste

Steps:

  • Fill a stockpot with water and bring to a boil over high heat. Add green beans and 1 pinch salt; boil until tender, 5 to 10 minutes. Drain beans in a colander and rinse with cold water. Blot dry using paper towels.
  • Heat olive oil in a skillet over medium heat. Cook and stir onion and shallot in the hot oil until tender and translucent, 5 to 7 minutes. Add green beans, garlic salt, soy sauce, salt, and pepper. Cook and stir for 5 to 7 minutes more. Serve immediately.

  • To a medium pan over medium heat add extra-virgin olive oil and butter and onion. Saute onion 3 minutes, add broth and bring to a boil. Add beans, season with salt and cover pan and simmer 8 minutes, until tender.

1 small red onion, sliced and separated into rings
1/3 cup chopped pecans
3 tablespoons butter

  • Place beans in a saucepan and cover with water; bring to a boil. 1 pound fresh green beans, trimmed
2 tablespoons butter
½ cup minced onion
1 tablespoon minced garlic
1 tablespoon sesame seeds
¼ cup soy sauce
2 tablespoons mayonnaise
1 teaspoon sriracha hot sauce
¼ teaspoon ground allspice
salt and ground black pepper to taste

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until tender, 2 to 6 minutes.
  • Melt butter in a saucepan over medium heat; cook and stir onion and garlic for 2 minutes. Add sesame seeds; cook and stir until sesame seeds are golden brown, 3 to 5 minutes.

1/3 cup beer or nonalcoholic beer

  • In a large skillet, cook bacon over medium heat until crisp. Meanwhile, in a large saucepan, bring the beans, beer and butter to a boil. Reduce heat; cover and simmer for 8-10 minutes or until beans are crisp-tender. , Using a slotted spoon, remove bacon to paper towels to drain. This is a recipe I got from a friend from church. She served it at a dinner and another friend, Kelly, begged me to get the recipe for her. If you like your veggies on the slightly sweet side, you will really like this. The sauce for this recipe can be made in advance, so this makes a great entertaining side dish.

6 medium onions, peeled and sliced into 12 to 14 wedges
6 tablespoons butter
2 cups unsalted chicken stock
3 tablespoons sugar
2 tablespoons red wine vinegar
3 lbs green beans

Steps:

  • Preheat oven to 400°F.
  • Spray 2 large baking sheets with vegetable oil spray.
  • Spread onion wedges over baking sheets and dot with only 5 tablespoons of butter.
  • Season with salt and pepper.
  • Bake for about 35 minutes, stirring occasionally.
  • The onions are done when they are dark brown on bottom, but be careful not to burn or blacken.
  • Meanwhile, boil broth in a large saucepan for about 6 minutes over high heat until it is reduced to 1/2 cup.
  • Then add sugar and red wine vinegar.
  • Whisk until sugar dissolves and mixture comes back to a boil.
  • When onions are done, add to sauce and reduce heat to medium low.
  • Simmer about 5 minutes until sauce is reduced to a thicker consistency.
  • Reserve.
  • Boil green beans till they are tender-crisp.
  • Toss cooked green beans with 1 tablespoon of butter.
  • Then pour sauce over green beans and toss to coat well.
  • •The sauce part of this recipe can be made 1 day in advance.

1/3 cup cider vinegar

  • Bring a large pot of lightly salted water to boil. Add beans; cook 4 minutes or until crisp tender. Drain in a colander; chill under running cold water. Pat dry with paper towels.
  • To make the sauce; while water comes to a boil melt butter in a large nonstick skillet over medium high heat. Add frozen onions toss to coat. Sprinkle with sugar and cook, shaking pan often, 8-10 minutes until onions are lightly golden and liquid has evaporated.
  • Reduce heat to medium. Add vinegar, garlic, rosemary and salt. Cook stirring occasionally, 4 minutes or until onions are tender.

2 lbs fresh wax beans (can use both) or 2 lbs fresh green beans (can use both)
1 -2 tablespoon olive oil (can use more, and can use both oil and butter) or 1 -2 tablespoon butter (can use more, and can use both oil and butter)
2 medium onions, sliced
3 chopped fresh garlic cloves (or to taste, I use about 2 tablespoons, chopped not minced!)
2 tablespoons grated orange zest
2/3 cup orange juice
salt and pepper

Steps:

  • Rinse the beans with cold water and trim off ends.
  • In medium saucepan, steam the beans (tightly covered) in about 1/4 cup water until tender, about 5 minutes; remove from water to drain well, and set aside (I pat them dry with paper towels).

Steps:

  • Preheat oven to 450°F. Spray 2 heavy large baking sheets with vegetable oil spray. Arrange onions in single layer on prepared sheets.
  • Dot onions with 4 tablespoons butter, dividing equally. Season with salt and pepper. Bake until onions are dark brown on bottom, about 35 minutes.
