GRILLED BRIE WITH GRAPES AND PISTACHIOS

Steps:
- Place a piece of aluminum foil under the rack of your grill and preheat it to medium-high.
- Drizzle the oil over the grapes and season with salt and pepper. Place the grapes and the brie onto the grill and cook, turning both occasionally, until the grapes are lightly charred and bursting, about 4 to 6 minutes.
- Remove the grapes from the heat, transfer to the serving platter and drizzle with balsamic. Continue to cook the brie for 2 to 3 minutes, or until grill marks appear and it is soft but you are still able to lift it. Add to the platter.
- Scatter the pistachios over the brie and grapes and garnish with a few basil leaves. Serve immediately with sliced baguette and crackers.
GRILLED BRIE AND STRAWBERRIES

- Preheat a grill or grill pan to medium-high heat.
- Brush the Brie with some of the oil. Grill until softened and grill marks appear, 3 to 4 minutes per side. Carefully transfer to a serving platter or board.
- Toss the strawberries in the brown sugar in a bowl until coated. Brush the grill with the remaining oil and add the strawberries cut-side down. Grill until the sugar is caramelized and the strawberries are tender, 1 to 2 minutes per side.
- Arrange the strawberries around and on top of the Brie. Garnish with the thyme and sprinkle with the fleur de sel and red pepper flakes. Serve warm with crackers.
BALSAMIC STRAWBERRY & BRIE GRILLED CHEESE SLIDERS

- Place sliced strawberries in a small storage container and pour the balsamic vinegar over the top. Toss gently with a spoon and cover (either use an airtight lidded container or cover tightly with plastic wrap). Allow to marinate for at least 4 hours, or up to two days.
- Butter one side of each piece of bread. Lay bread buttered side down and cover every other piece with a single layer of brie cheese. Use a slotted spoon to remove the berries from the vinegar, and press three or four slices into the brie on each sandwich. Sprinkle each with two or three strands of fresh basil. Top with a second piece of bread, buttered side up.
- In a large frying pan or on a griddle over medium-low heat, cook the sandwiches, flipping often and flattening them gently with the bottom of the spatula, until they're golden-brown on the outsides and the cheese is melted inside, about 10 minutes total.
- Serve immediately.

Steps:
- Generously butter one side of each slice of bread.
- Heat a skillet over medium heat.
- Place bread slices butter-side down into hot skillet. Arrange Brie cheese slices on top of each piece of bread. Sprinkle thyme and cracked black pepper over the top.
- Spread pear slices in a single layer over the Brie cheese on one slice of bread and top with a pinch of salt.
- Flip the slice of bread without pears onto the slice of bread with the pear slices. Continue cooking sandwich until cheese and pear are heated through and cheese is melted, 2 to 3 minutes per side. Transfer to a plate and cut into halves.
