Steps:
- Place cilantro, pepper, garlic powder, and onion salt in the bowl of a blender. Pour in margarita mix, lime juice, orange juice, tequila, triple sec, and honey. Puree on high speed until smooth, then reduce speed to medium-low, and slowly add the olive oil; blend until creamy. Place chicken breasts in a resealable plastic bag or glass bowl; pour marinade overtop and toss to coat. Refrigerate for 5 hours.
- Preheat an outdoor grill for medium-high heat and lightly oil grate.
- Remove chicken from the marinade, shake off excess, and discard remaining marinade. Grill the chicken until tender and juices run clear, approximately 7 minutes per side.

GRILLED CHICKEN MARGHERITA
Fire up your grill or your cook-top, I've got an easy, healthy Chicken Margherita topped with melted light mozzarella cheese, marinara sauce, and a tomato basil topping. It tastes like the ever-popular pizza version only on top of chicken instead of a crust. This makes a delightful low-carb dish. Each serving has 269 calories, 12 grams of fat and 4 Blue WW Freestyle SmartPoints, and 4 Green. Serve with my recipe for Skinny Garlic Green Beans.

- In a large bowl combine chicken breasts, salt, pepper, olive oil, garlic powder, and Italian seasoning. Toss to combine.
- To Grill Chicken: Cook chicken over medium-high heat for about 5-7 minutes on each side until cooked through. Top each piece of chicken with 3 tablespoons pizza sauce and a slice of cheese, close grill, and cook another minute or so until cheese is melted. Remove to a plate.
- To Cook Chicken on Cook Top: To a large nonstick pan add seasoned chicken breasts. Cook for 4-5 minutes (depends on thickness). Turn over and continue to cook for 4-5 minutes. Remove chicken breasts to a baking pan. Top each breast with 3 tablespoons of pizza sauce and 1 slice of cheese. Place in preheated 400 degrees oven. Bake for 5 minutes, until cheese, is melted. Remove to a serving plate.
- In a small bowl, toss together tomatoes, lemon juice, basil, and a little salt and pepper. Top each chicken breast with about 2 tablespoons tomato mixture. Serve immediately or it can be reheated in the microwave or oven.

- Heat gas or charcoal grill. In small bowl, mix oil and garlic. Brush chicken breasts with 1 teaspoon of the oil mixture; sprinkle with seasoned salt. Place on grill over medium-high heat. Cover grill; cook 12 to 18 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F). Reduce heat to medium-low.
- On ungreased cookie sheets, place tortillas. Brush with remaining oil mixture. Cut chicken into strips. Arrange chicken strips over tortillas. Sprinkle each with 1/4 cup of the cheese. Top evenly with tomato slices; sprinkle with remaining cheese and basil.
- With wide spatula, carefully slide pizzas onto grill over medium-low heat. Cover grill; cook 3 to 5 minutes, rotating pizzas to avoid hot spots, until cheese is melted and crusts are crisp. Slide pizzas back onto cookie sheets.

- Flatten chicken to 1/2-in. thickness. In a large bowl, combine vinaigrette and garlic. Add chicken; turn to coat. Cover; refrigerate 30 minutes. Drain and discard marinade. This marinade has all the ingredients of a margarita! Marinate the chicken breasts for an hour (not much longer, or the lime juice will start to cook the chicken) and then grill over medium-hot coals. Servings are based on the number of chicken pieces. If you have hearty eaters, this will not serve 8! Delicious!

- Combine the olive oil, lime juice, tequila, cilantro, triple sec, and salt in a medium bowl, whisking until blended. Pour into an ungreased 13x9x2 inch pan. Add chicken, turning to coat. Cover and marinate in the refrigerator for 1 hour.
- Remove the chicken from the marinade, reserving marinade. Grill, covered, over medium-hot coals (350 to 400 degrees) for 10 minutes on each side or until the chicken is done, turning and basting occasionally with the reserved marinade.

- Pour margarita mix over chicken breasts, and marinate for 2 hours in refrigerator.
- When ready to prepare, drain and dust chicken breasts with black pepper.
- Grill on an outside grill (or George Foreman works) 3-4 minutes on each side.
- If you do not have a grill use an iron skillet. Bring to medium high temperature and spray skillet with an oil coating. Braise the chicken breasts until done on each side. Place chicken breasts atop Black Beans.
- Serve with a serving of your favorite Mexican rice and Pico de Gallo.
