1/2 cup finely chopped red onion
3/4 teaspoon salt
1 large tomato, seeded and chopped
4 teaspoons red-wine vinegar
1 teaspoon sugar
2 tablespoons chopped fresh dill
24 sea scallops (1 1/2 lb), tough muscle removed from side of each if necessary
Vegetable oil for brushing grill

Steps:

  • Prepare grill for cooking.
  • Make relish:
  • Soak onion in 1 cup water with 1/2 teaspoon salt 15 minutes, then drain. Stir together onion, tomato, vinegar, sugar, and remaining 1/4 teaspoon salt and let stand 20 minutes. Drain relish in a sieve, discarding liquid, then stir in dill.
  • Cook scallops while relish is standing:
  • Pat scallops dry and season with salt and pepper. Grill scallops in 2 batches on lightly oiled grill rack, turning once, until just cooked through, 4 to 5 minutes.
  • Serve scallops with relish.

Grilling sweet onions onion slices is the easy start to this classic relish that's great on hot dogs, burgers and veggies.

2 large sweet onions, cut into 1/4-inch slices
Canola oil
Kosher (coarse or sea) salt and pepper to taste
4 green onions, sliced (1/4 cup)
1 jalapeño chile, seeded, finely chopped
2 to 3 tablespoons extra-virgin olive oil
3 tablespoons balsamic vinegar
1/2 teaspoon ground cumin

Steps:

  • Heat gas or charcoal grill. Brush both sides of sweet onion slices with oil; sprinkle with salt and pepper.
  • Place onions on grill over medium heat. Cook uncovered, turning occasionally, until charred and softened. Remove onions from grill to cutting board; coarsely chop.
  • In medium bowl, mix sweet onions, green onions, jalapeño, oil, vinegar and cumin. Season with salt and pepper. Serve relish at room temperature or chilled.

1 pound Italian Roma tomatoes, cored and chopped
1 large onion, chopped
1/2 cup olive oil
1/3 cup white vinegar
1 bunch cilantro, leaves only, chopped
1/4 cup sugar
6 garlic cloves, minced
1 jalapeno chile, stemmed, seeded and diced
1 red bell pepper, cored, seeded and chopped
2 teaspoon salt
1 teaspoon freshly ground black pepper

Steps:

  • In a pot combine all ingredients. Cover and simmer about an hour. Set aside to cool to room temperature. Tomatillo relish can be stored in the refrigerator up to a week. To serve, line a large platter or serving plates with relish and top with grilled fish fillets. Or serve as a condiment with cold meats. Garnish with grilled scallions.

Roasted or Grilled Whole Fish With Tomato Vinaigrette image

There are a number of good reasons to roast or grill a whole fish. Fish tastes better cooked on the bone. It's just as easy as roasting meat or fowl, and is done in half the time. And a whole fish is apt to be fresher than many of the other choices at the fishmonger. A two-pound fish will serve two.

2 whole fish, such as branzino, blackfish or striped bass, about 2 pounds each, gutted and scaled
Salt and pepper
A few thyme sprigs
A few rosemary sprigs
A few parsley sprigs
A few fennel fronds
A few basil leaves
1 small lemon, thinly sliced
Extra-virgin olive oil
1 shallot, finely diced
3 tablespoons red wine vinegar
Salt and pepper
2 cups diced tomatoes, or use halved cherry tomatoes instead
1/4 cup olive oil
2 tablespoons roughly chopped basil or parsley

Steps:

  • Rinse fish with cool water and pat dry. Season generously on both sides with salt and pepper. Season the cavity with salt and pepper. Tuck thyme, rosemary and parsley sprigs in cavity of each fish. Add fennel fronds, basil leaves and lemon slices. Drizzle olive oil on both sides of fish, then place on a parchment-lined rimmed baking sheet. Leave at room temperature. (May season and refrigerate fish up to 2 hours in advance. Bring to room temperature before cooking.) Heat oven to 450 degrees.
  • Make the vinaigrette: Put shallot in a small serving bowl. Add vinegar and a good pinch of salt. Leave to steep 5 minutes, then whisk in olive oil. Season tomatoes with salt and pepper and spoon them into the olive oil mixture. Add basil and stir gently. Leave at room temperature.
  • Place fish on top shelf of oven and roast, uncovered, for 15 to 20 minutes, until fish is firm when probed and flakes at the thickest part. Take from oven and let rest 5 minutes. To serve, use a small knife, soup spoon and spatula to remove top fillets. Pull spine away to reveal bottom fillets. Transfer fillets to a platter or individual plates. Spoon a little tomato vinaigrette over each portion and pass the rest at the table.
  • Alternatively, if you are grilling the fish, prepare a bed of hot coals. Make sure the grill is cleaned with a wire brush and lightly oiled. Lay the fish directly on the grill and cook for 7 to 8 minutes. Do not attempt to turn fish until the skin has browned and crisped or it will stick. Carefully turn fish and cook for another 7 to 8 minutes, until fish is firm when probed and flakes at the thickest part. To serve, proceed as in Step 3.

Bright color of the rubbed halibut, quickly grilled and served in whole wheat tortillas, topped with fresh relish guacamole and yogurt in place of sour cream. 1 lime, rolled to release the juices
2 teaspoons canola oil
2 garlic cloves, minced
2 teaspoons chili powder
3/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon cayenne pepper
6 ounces halibut
4 whole wheat tortillas
1 lime, cut into wedges
1 lime, rolled to release juice
2 cups tomatoes, chopped
1/4 cup green onion, sliced
2 tablespoons jalapeno chili, seeded and chopped
1/4 cup cilantro, chopped
1/4 teaspoon salt
6 tablespoons yogurt, low fat, plain
1 avocado, sliced
1 cup lettuce, chopped

Steps:

  • You will need three limes, 2 juiced, one for the halibut and one for the relish. The third lime will be cut into wedges to serve with the tacos.
  • Combine lime juice, canola oil, garlic cloves, chili powder, cumin, salt and pepper and cayenne pepper in a large bowl.
  • Cut the halibut into bite size pieces and place in bowl with the other ingredients and toss until well covered. Place bowl in refrigerator while you prepare relish.
  • Combine all the relish ingredients in a bowl, stir well, and place in refrigerator while halibut is grilling.
  • Spray grilling surface with canola oil spray and warm the grill to 350 degrees. NOTE:I use a grilling pan placed on top of the grates of the grill.
  • Wrap tortillas in aluminum foil and place to the side of the heat source in the grill to warm.
  • Close grill lid - check after 3 minutes and turn halibut and tortillas.
  • When halibut flakes it is done, remove along with the tortillas.
  • Plate with yogurt, avocado slices and chopped lettuce.

1/4 cup drained bottled pimiento-stuffed green olives
1 small garlic clove, minced and mashed to a paste with a pinch of salt
2 tablespoons finely chopped fresh parsley leaves

2 teaspoons fresh lemon juice
two 6-ounce swordfish steaks (each about 1 inch thick)
olive oil for brushing swordfish

Steps:

  • Prepare grill.
  • Make relish:
  • In a food processor pulse olives until chopped fine. Add remaining relish ingredients and pulse until olives are minced.
  • Brush both sides of swordfish with oil and season with salt and pepper. Grill fish on a rack set 5 to 6 inches over glowing coals 4 minutes on each side, or until just cooked through. (Alternatively, fish may be grilled in a hot well-seasoned ridged grill pan over moderate heat.)
