GRILLED FRESH PEACHES RECIPE
Grilled fresh peaches make an excellent grill side or healthy dessert. Perfectly ripe fresh peaches grill in just a few minutes. As they cook and soften the sweet peach flavor intensifies. A list of idea variations is included for you.

Steps:
- Preheat your grill to 350 degrees (adjust the temperature up as needed)
- Use only a perfectly ripe peach to ensure sweetness
- Cut the peach in half and remove the pit. (You may grill wedges if you prefer)
- Lay the cut peach halves down on the preheated grill and cook for about 5 minutes.
- Lift the peach and check for grill marks and softness.
- Remove the peach to a serving plate.
- Optional Variations:
- Serve with homemade whipping cream slightly sweetened with maple syrup
- Throw a bit of candied ginger over the top.
- Add a dollop of frozen vanilla yogurt or Vanilla Bean ice cream
- Pour 1 Tablespoon honey or Pure Maple syrup over the grilled peaches at serving
- Sprinkle cinnamon lightly over grilled peach halves
- Balsamic vinegar either by itself or whisked with a bit of honey

SIMPLEST GRILLED PEACHES
Grilled peaches may be summer's greatest joy. Cook them over a medium to low gas grill or a dying charcoal fire, and serve them with ice cream, whipped cream or nothing at all.

- Heat a gas grill to medium. If you are cooking on a charcoal grill, wait until the fire has died down to medium to low heat.
- Cut the peaches along their seams, all the way around, and twist their halves off their pits. Brush the cut sides of the peaches with olive oil and grill, cut side down, until the fruit has developed grill marks and started to soften, about 4 to 5 minutes.
- Brush the tops with oil, turn over and move to the side of the grill to continue cooking over indirect heat, another 4 to 5 minutes. You can add flavor by brushing them with maple syrup and bourbon, or molasses and butter. But if they are perfect peaches, they shouldn't need anything at all.

- In a saucepan over medium heat, stir together the white sugar, balsamic vinegar, and pepper. Simmer until liquid has reduced by one half. It should become slightly thicker. Remove from heat, and set aside.
- Preheat grill for medium-high heat.
- Lightly oil the grill grate. Place peaches on the prepared grill, cut side down. Cook for about 5 minutes, or until the flesh is caramelized. Turn peaches over. Brush the top sides with the balsamic glaze, and cook for another 2 to 3 minutes.
- Transfer the peach halves to individual serving dishes, and drizzle with remaining glaze. Sprinkle with crumbled blue cheese.

- Puree 2 1/4 cups fresh raspberries along with 3 tablespoons water in food processor until puree is smooth. Strain raspberry puree through fine-mesh strainer, pressing on solids to release as much liquid as possible; discard solids in strainer. HOW TO GRILL PEACHES
Steps:
- Gather the ingredients.
- Prepare a gas or charcoal grill to medium heat: You should be able to hold your hand about an inch above the cooking grate for 3 to 4 seconds before pulling it away from the heat. If you are also using the grill to cook something else that requires more heat, place the peaches around the edges; they're cooler. Or cook dinner, let the fire cool down, and then grill the peaches.
- Cut the peaches in half and pit them.
- Lightly brush the peaches with the oil, being particularly aware of coating the cut sides well.
- Set the oiled peaches cut side down on the medium hot grill. Make sure they aren't touching so the hot air of the grill can circulate around each piece.
- Cook the peaches until grill marks form, turning as necessary. Then, flip the peach halves over, sprinkle with the cinnamon and sugar, if using. Cook until the peaches are tender, but not falling apart, about 8 minutes total (4 minutes per side).
