1 pineapple, cored and sliced into 8 rings
2 plums, cored and each cut into 8 wedges
Vegetable oil, for brushing fruit
3/4 cup plain Greek yogurt
1/4 cup honey
1 tablespoon finely chopped mint leaves
1/4 cup pine nuts, toasted

Steps:

  • Preheat grill to medium.
  • Lightly brush fruit with oil and place on the grill. Cook until pineapple and plums are nicely caramelized, turning once, about 8 to 10 minutes. Remove to a plate. Meanwhile, in a medium bowl whisk together yogurt, honey and mint. Place 2 rings and 4 wedges on each plate and drizzle with dressing. Garnish with pine nuts.

1/2 cup balsamic vinegar
1/2 cup honey
Dash salt
6 medium peaches or nectarines, halved and pitted
Vanilla ice cream, optional

Steps:

  • In a small saucepan, combine vinegar, honey and salt; cook and stir over low heat until blended, 2-3 minutes. Reserve 1/3 cup mixture for brushing peaches., Bring remaining mixture to a boil over medium heat; cook and stir just until mixture begins to thicken slightly (do not overcook), 4-6 minutes. Remove from heat., Brush peaches with some of the reserved balsamic mixture. Grill, covered, on an oiled rack over medium heat until caramelized, brushing occasionally with remaining reserved balsamic mixture, 6-8 minutes on each side. Serve with glaze and, if desired, ice cream.

3 tablespoons honey

For skewers
4 firm-ripe plums, each cut into 8 wedges
4 firm-ripe peaches, peeled and each cut into 8 wedges
1/2 ripe pineapple (1 1/2 lb), peeled, cored, and cut into 1-inch pieces
Special Equipment
48 (8-inch) wooden skewers soaked in water 1 hour

Steps:

  • Prepare grill for cooking.
  • Stir together yogurt, honey, lime juice, and mint in a small bowl and chill until ready to serve.
  • Thread about 4 pieces of fruit onto each skewer. When fire is medium-hot (you can hold your hand 5 inches above rack 3 to 4 seconds), grill fruit in batches on lightly oiled grill rack, turning once, until browned and slightly softened, about 5 minutes total. Serve fruit on skewers with sauce on the side.

10 ounces yogurt (strained overnight, preferably Greek)
1/2 cup cashews or 1/2 cup pistachios
2 tablespoons corn syrup
2 tablespoons brown sugar
6 pears or 6 peaches, cut into wedges 2 tablespoons olive oil
salt & freshly ground black pepper, to taste
6 tablespoons honey (preferably Greek thyme-scented)
2 teaspoons aged balsamic vinegar or 2 teaspoons lemon juice
4 mint leaves, julienned
6 wooden skewers, soaked in water

Steps:

  • Place yogurt in a colander lined with cheesecloth and set over a bowl and drain overnight. Remove yogurt from cheesecloth and place in a food processor. Process at high speed until a thick, souplike consistency is achieved. Transfer to a bowl, cover, and refrigerate.
  • In a small sauté pan, toast nuts with corn syrup, brown sugar, and 1 teaspoon water, until the nuts are glazed with syrup. When cool, chop coarsely.
  • In a bowl, gentle toss fruit of choice with oil and season with salt and pepper, until the fruit is coated. Thread the fruit onto skewers.
  • Set the fruit skewers on a hot grill, and cook until the fruit just starts to char. Transfer to a plate to cool.
  • Scatter 1 tablespoon toasted nuts onto each plate, arrange skewers on top, and drizzle with yogurt and honey. Sprinkle with a few drops of lemon or balsamic vinegar and garnish with mint.

1/4 cup Yogurt Cheese
1 1/2 teaspoons honey, plus more for drizzling
2 drops of pure vanilla extract
8 slices of very thinly sliced white bread, crusts removed
2 very ripe small nectarines, plums, or peaches, thinly sliced
Butter-flavored cooking spray

Steps:

  • In a small bowl, stir together the Yogurt Cheese, honey, and vanilla until combined well.
  • Spread about 1 tablespoon of the yogurt cheese mixture on 4 slices of bread. Arrange a layer of fruit over the cheese and top with the remaining slices of bread.
  • Heat a medium skillet over medium heat and spray with cooking spray. Cook the panini, 2 at a time, until golden, about 2 minutes per side. Transfer to a cutting board and repeat with the remaining panini.
  • Halve each panini, divide among 4 dessert plates, and drizzle with additional honey.

3 tablespoons honey
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
2 apples
2 pears
1 small pineapple
1 mango
1/2 cup plain yogurt
1/2 cup Greek yogurt
1/8 teaspoon vanilla extract

Steps:

  • Preheat the grill to high.
  • Mix the honey, apple juice, and spices together and set aside.
  • Peel, slice, and core all the fruits.
  • Cover the grill rack with foil, lay the fruits on it, and drizzle the honey mixture over the fruits. If there isn't enough room on the grill, work in batches of two.
  • Grill for about 10 minutes or until its is a little soft and slightly browned. Be sure to turn the fruit once while grilling.
  • While the fruit is cooking mix the yogurts together with a few drops of vanilla extract and serve with the warm fruit.
