3.5 to 4 lbs lamb leg, bone-in (about 3/4 lb less if boneless)
5-6 sprigs rosemary, more for garnish
3-4 cloves garlic
2 tbsp Dijon mustard
3 tbsp extra virgin olive oil
1 lemon, zest only
2 tsp kosher salt, plus more for seasoning
1 tsp pepper, plus more for seasoning

Steps:

  • Make the marinade for the lamb leg - very finely chop the rosemary leaves, mince the garlic and press onto it with the flat side of the knife, zest the lemon. Combine all three with the olive oil, Dijon mustard and salt and pepper. Mix well.
  • Trim any excess fat from the leg of lamb, leaving a good fat cap on top. Score the fat cap in a diamond pattern until you just reach the meat. Apply the marinade paste all over the lamb, rub it in the scored parts. Place onto a plate, season with salt and pepper and cover*. Marinate refrigerated from 4 hours to overnight.
  • Bring the leg of lamb to room temperature (about 30-40 minutes of the counter) and preheat a charcoal** grill to 325F. No need to scrape off the marinade paste - it will help form a flavorful crust.
  • Place the leg of lamb directly onto the grill rack, over indirect heat, fat cap facing up. Turn it over/reposition it every 20 minutes or so to expose all surfaces to the indirect heat and the grill rack. Do so last for the side with the fat. Maintain a constant grill temperature and grill until a meat thermometer inserted in the thickest part registers 135 F for medium-rare. If you'd like a section of the lamb leg to be cooked medium (as seen in the pictures) grill the meatiest side of the leg until the temperature there is 140-145F. *** Allow the lamb to rest onto a board for 10-15 minutes before you carve it. You may loosely tent it with foil to keep it warm.

1.5 cups Olive oil
Juice of 3 lemons
1/2 cup dry red wine (cheap is OK)
1 large onion, peeled, quartered
6-8 large cloves garlic, peeled
1/4 cup Dijon mustard
1 TBL each dried oregano, dried basil, dried rosemary
2 tsp each ground cumin, kosher salt, freshly ground black pepper
1 butterflied, boneless leg of lamb, about 7 lbs, or 2 butterflies legs, 304 lbs each

Steps:

  • 1. Combine everything but the lamb in blender. Whiz until thick and creamy, about a minute. 2. If butcher has tied the leg of lamb, untie it. Lay it out fat side down on a rimmed baking sheet using a sharp knife, slash the thickest parts of the lamb. Pour about half the marine over the meat, and rub it in well with your hands. Turn the lamb over and pour remaining marinade over the fat side, again rubbing it in well. 3. Fold the lamb in thirds and put it into a zip-close bag or shallow pan. Pour remaining marinade from the baking sheet over the lamb. Refrigerate 8-24 hours, turning the bag or flipping the lamb every 2 hours or so. 4. At grilling time, make a hot fire. Unfold the lamb and pat away the excess marinade. Discard remaining marinade. Put the lamb on the grill cut side up and cook for 9 minutes. Turn the lamb over and cook an additional 9 minutes. Transfer the lamb to a platter and allow to rest for 15 minutes before carving.

Steps:

  • Combine oil, lemon juice, garlic, oregano, salt, and pepper in sealable plastic bag. Add lamb and seal bag, pressing out air. Turn bag to coat lamb, then put bag in a shallow baking pan and marinate, chilled, turning bag over occasionally, at least 8 hours.
  • Bring lamb to room temperature, about 1 hour, before grilling.

  • Open lamb like book on work surface. Using tip of small knife, make 1/2-inch-deep slits all over lamb. Thinly slice 4 garlic cloves. Insert garlic slices into slits in lamb. Combine remaining 4 garlic cloves, mustard, olive oil, white wine, rosemary, and lemon juice in processor. Blend until coarse puree forms. Spread underside of lamb with half of puree. Place lamb, seasoned side down, in 15 x 10 x 2-inch glass baking dish. Spread remaining puree over top of lamb. Cover lamb with plastic wrap and chill overnight.
  • Let lamb stand at room temperature 2 hours. Coat grill rack with nonstick spray and prepare barbecue (medium-high heat). Sprinkle lamb generously with salt and pepper on both sides. Grill lamb to desired doneness, about 17 minutes per side for medium-rare. Transfer lamb to cutting board; let rest 10 to 20 minutes.
  • Thinly slice lamb against grain. Overlap slices on platter. Sprinkle with salt and pepper. Garnish with fresh herb sprigs.
  • What to drink:

1 bunch fresh mint, coarsely chopped
1 head garlic, cloves crushed and peeled
Finely grated zest of 2 lemons
Coarse salt and freshly ground pepper
1/2 teaspoon crushed red-pepper flakes
3 pounds boneless leg of lamb (about 1/2 of 1 large leg), butterflied

Steps:

  • Combine oil, mint, garlic, zest, 3 tablespoons salt, and the red-pepper flakes; season with pepper. Reserve 1/2 cup marinade.
  • Pound lamb to an even 1-inch thickness. Place lamb in a baking dish, and massage marinade into meat. Refrigerate overnight.

1 de-boned (5 pound) leg of lamb, trimmed of excess fat
5 cloves garlic, peeled and thinly sliced
2 cups Greek-style yogurt
1/2 cup fresh mint leaves
2 teaspoons ground cumin
3 to 5 dashes hot pepper sauce
Salt and freshly ground black pepper

Steps:

  • Using a paring knife, make several small slits over the entire surface of the lamb, and stuff the slits with the sliced garlic. Add the yogurt, mint, cumin and hot pepper sauce to the work bowl of a food processor and process until smooth. Place the lamb on a large baking sheet and rub the entire leg with the yogurt mixture. Cover and refrigerate for at least 8 hours, or overnight.
  • Preheat the grill to high. Remove the lamb from the marinade and season well with salt and pepper. Place the lamb, skin side down, on the grill. Grill until the skin side is golden brown, then turn the lamb over, and reduce the heat of the grill to medium so that the grill maintains a constant temperature of 350 degrees F. Continue grilling until a thermometer inserted deep into the meat reaches a temperature of 145 degrees F for medium-rare doneness, about 1 1/4 to 1 1/2 hours. Remove lamb from grill, cover with foil, and let rest for 10 minutes. Slice the meat on the bias into 1/4-inch thick slices.

GRILLED LEG OF LAMB WITH GARLIC AND HERB LEMON MARINADE

This is really the only recipe I use when I grill a leg of lamb. Plan ahead, the lamb needs to marinate 24 hours or overnight. This marinade can also be used for lamb chops. A butterflied leg of lamb is with the bones removed and cut to spread open, you can ask your butcher to remove the bones and butterfly it for you. If you prefer a more lemony taste then thinly slice half of another lemon, leave the peel on, and just throw the slices inside the bag or bowl with along with the other marinade. If desired you can also stuff the lamb with garlic cloves as well as adding the minced garlic in with the marinade. Grilling time depends on size of lamb. This recipe produces an excellent grilled lamb that melts in your mouth, try to not overcook the lamb, for best results leave slightly pink in the middle.

  • You may baste the lamb with the leftover marinade if desired.

1/2 cup Canola Oil for high heat
3 sprigs Fresh Thyme
3 sprigs Fresh basil

  • Take a good sized boneless leg of lamb and bring to room temperature. It will generally come with a elasticized net. Remove the wrap and retain. Spread out the lamb like you were going to butterfly it. But, you're not going to butterfly. Remove all fat from the lamb. Especially the outside layer and also any fat from the inside. Removing the fat will help to remove the wild taste from the lamb. Salt and pepper inside and outside then, add the herbs to the inside like a stuffing. Put the lamb back into original oval shape. Tie with cooking twine to keep the herbs inside, if necessary. Coat with a high heat vegetable oil. In a small bowl, combine remaining ingredients and stir to evenly distribute. Place lamb in a gallon size sealable bag and pour liquid mixture over the lamb. Make sure to evenly distribute over the lamb. Refrigerate for 2-4 hours. Remove from fridge and allow to come to room temperature (30 minutes). Remove twine and herbs from the inside of the meat and discard. Lay the meat flat for cooking. Preheat grill to sear at 450 degrees F. Grill until there is a good sear on both sides of the meat; approximately 10 minutes per side. Do not overcook just do a sear. Preheat oven to 300 degrees F when ready to place meat on grill. Place meat on a grilling rack and cook in moderate oven for around 30 - 45 minutes more or until a meat thermometer inserted into the middle of the roast reads 120-125 degrees for rare after resting; or 130-135 degrees for medium rare after resting. Watch the thermometer! If the meat reaches 130 - 135 then turn off the smoker and let the meat rest until close to dinner time. Lamb is best served at no more than medium. If not grilling sear meat in hot skillet coated with high heat vegetable oil for 10-15 minutes then into oven to 300 for an additional using instructions from the above paragraph.

MARINADE
1/2 c vinegar
1/2 c mint jelly
1/4 c brown sugar
1/4 c sugar
1 Tbsp butter
1 Tbsp lemon juice
1 Tbsp lemon rind
1/2 tsp dry mustard
1 1/2 tsp salt

  • 1. LAMB: Wash and pat dry, sprinkle with salt. Poke with a sharp knife all over and insert garlic pieces
  • 2. MARINADE:In a saucepan, combine vinegar, jelly sugar, butter, lemon juice and rind. Bring to a boil. Add mustard and salt.
  • 3. Pour over Lamb and marinate 4 hours or preferably overnite...covered and refrigerated.

1 (5-pound) butterflied leg of lamb (9 pounds bone-in)

Steps:

  • Combine the yogurt, olive oil, lemon zest and juice, rosemary, salt, and pepper in a large non-reactive bowl. Add the lamb, making sure it is covered with marinade. Marinate in the refrigerator, covered, overnight or for up to 3 days.
  • Bring the lamb to room temperature. Prepare a charcoal grill with hot coals. Scrape the marinade off the lamb, wipe the meat with paper towels, and season it generously with salt and pepper. Brush the grill with oil to keep the lamb from sticking, and grill on both sides until the internal temperature is 120 to 125 degrees for rare. This will take 40 minutes to 1 hour, depending on how hot the grill is.
  • Remove the lamb to a cutting board, cover with aluminum foil, and allow to rest for 20 minutes. Then slice and serve.
