3 tablespoons brown sugar
3 tablespoons Dijon mustard
¾ teaspoon minced fresh ginger root
2 cups chopped fresh pineapple
⅓ cup chopped red bell pepper
1 small jalapeno pepper, seeded and chopped
2 green onions, chopped
1 tablespoon minced fresh cilantro
1 tablespoon brown sugar

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a shallow roasting pan with aluminum foil.
  • Place pork in roasting pan. Combine 3 tablespoons brown sugar, mustard, and ginger in bowl; spread over pork.
  • Bake in preheated oven until juices run clear and a meat thermometer reads 160 degrees F (71 degrees C), about 35 to 40 minutes. Let stand 10 minutes before slicing.
  • Combine pineapple, peppers, green onions, cilantro, and 1 tablespoon brown sugar in a bowl. Serve with pork.

1 pork tenderloin ((1 to 1.5 pounds in size))
2 tablespoons homemade jerk rub
2 cups fresh pineapple chunks
1 small red pepper diced
1 red onion minced
1/2 teaspoon salt
1/4 cup minced cilantro
juice of 1 lime

Steps:

  • Preheat the grill to medium-high heat.
  • Combine the ingredients for the homemade jerk rub in a small bowl.
  • Remove pork tenderloin from packages and pat dry with a paper towel.
  • Rub the pork evenly with the spice mixture patting the rub to adhere to the pork.
  • Place the seasoned pork on the grill and cover.
  • After 8-10 minutes, flip the pork tenderloin and then continue to grill for an additional 8-10 minutes, or until the internal temperature is between 140-145 degrees.
  • Once the pork reaches the desired temperature, remove from grill and tent with foil for 10 minutes.
  • After the pork rests, slice and serve with the salsa.
  • While the pork is cooking combine the pineapple with onion, cilantro peppers, onions, cilantro, salt, and lime juice.

1 tablespoon tomato paste
1 tablespoon mild or hot chili powder (or achiote paste)
1/2 cup orange juice
3 tablespoon fresh lime juice
1 tablespoon olive oil
1 pound pork tenderloin, trimmed
1 small golden pineapple (about 1 1/2 pounds), diced into 1-inch cubes
1/2 cup pineapple (or orange) juice
1 large red bell pepper, cored, seeded and thinly sliced
1/4 small red onion, finely chopped
1/4 cup chopped fresh basil
Vegetable oil cooking spray

Steps:

  • Mix tomato paste with chili powder. Combine with orange juice, lime juice and oil in a double resealable bag. Add tenderloin and marinate at least 3 hours. Heat a large pan over high heat to the smoking point, 3 to 4 minutes. Brown pineapple 4 to 5 minutes, stirring occasionally. Add pineapple juice and stir 1 minute, scraping up brown bits from pan. Remove pineapple from heat. Combine in a bowl with pepper, onion and basil. Heat a grill or grill pan over high. Coat with cooking spray. Remove pork from marinade; place on grill. 2 tablespoons Caribbean-style rub, or to taste
2 cups teriyaki marinade
½ fresh pineapple, diced
1 large yellow onion, chopped
3 serrano peppers, chopped
1 cup apple cider vinegar
1 cup brown sugar
1 cup pineapple juice
½ cup grated fresh ginger root
2 tablespoons minced garlic
1 teaspoon mustard seeds
1 teaspoon salt
1 cup golden raisins

Steps:

  • Place pork chops in a large resealable container and season liberally with rub. Pour marinade over and seal. Place in the refrigerator for at least 1 hour, or up to 24 hours.
  • While pork is marinating, combine pineapple, onion, serrano peppers, vinegar, brown sugar, pineapple juice, ginger, garlic, mustard seeds, and salt in a large saucepan. 1 medium red pepper, finely chopped
2 env. SHAKE 'N BAKE Original Pork Seasoned Coating Mix
1 Tbsp. ground cumin
1 Tbsp. garlic powder
1-1/2 tsp. ground allspice
2 Tbsp. lime juice
1 boneless center-cut pork loin roast (3 lb.)

Steps:

  • Heat grill to high heat.
  • Mix pineapple, red pepper, cilantro and dressing until well blended. Cover and refrigerate until ready to serve.
  • Combine coating mix and seasonings in large plastic bag. Brush lime juice evenly onto meat. Place meat in bag with coating mixture; close bag and shake until meat is evenly coated. Remove meat from bag; place in disposable roasting pan, or on large piece of foil that has been poked in several places with holes. Press any remaining coating mixture onto meat.

1⁄2 Tbsp chili powder

4 (1⁄2"-thick) slices pineapple
core removed
1 red onion
minced
1 jalapeño pepper
minced
1⁄2 cup chopped fresh cilantro
Juice of 1 lime

Steps:

  • Preheat the grill. Combine the mustard, honey, chili powder, and a good sprinkle of salt and pepper, and rub all over the pork. Place the pork and pineapple slices on the grill. Grill the pineapple for 2 to 3 minutes per side, until lightly charred and softened. Grill the tenderloin, turning once or twice, for about 10 minutes, until lightly charred and firm (but yielding) to the touch (an internal thermometer should read no more than 160°F). 1/4 cup very finely chopped garlic
Juice of 1 orange
1 tablespoon very finely chopped fresh marjoram
1 teaspoon orange zest
2 pork tenderloins (3/4 to 1 pound each), trimmed
1 teaspoon coarse salt
1/2 teaspoon ground white pepper
Fresh Fruit Salsa, for serving

Steps:

  • Combine olive oil, garlic, orange juice, marjoram, and orange zest in a resealable plastic bag; add tenderloins, seal, and marinate, refrigerated, overnight.
  • Preheat a grill pan over medium-high heat. Remove tenderloin from marinade, discarding marinade. Wipe excess marinade from pork and season with salt and pepper. Add pork to grill and cook, turning every 4 minutes, until grill marks appear and internal temperature of pork reaches 135 to 140 degrees on an instant-read thermometer, about 21 minutes total. Set aside and let cool completely.

4 teaspoons extra virgin olive oil

1 Serrano Chile, stemmed, seeded, minced

  • FOR THE PORK: Combine salt, sugar, cumin, and chile powder in small bowl. Reserve 1/2 teaspoon spice mixture. Rub remaining spice mixture evenly over surface of both tenderloins. Transfer to large plate or rimmed baking sheet and refrigerate while preparing grill. 2
  • FOR A GAS GRILL: Turn all burners to high, cover, and heat grill until hot, about 15 minutes. Leave primary burner on high and turn off other burner(s). 3
  • Clean and oil cooking grate. Place tenderloins on hotter side of grill. Cover and cook, turning tenderloins every 2 minutes, until well browned on all sides, about 8 minutes. 4
  • FOR THE SALSA: Brush pineapple and onion with 1 teaspoon oil. Move tenderloins to cooler side of grill (6 to 8 inches from heat source) and place pineapple and onion on hotter side of grill. Cover and cook until pineapple and onion are charred on both sides and softened, 8 to 10 minutes, and until pork registers 140 degrees, 12 to 17 minutes, turning tenderloins every 5 minutes. Tent tenderloins with aluminum foil and let rest for 10 minutes
  • While tenderloins rest, roughly chop pineapple. Pulse pineapple, onion, cilantro, serrano, lime juice, reserved spice mixture, and remaining 1 tablespoon oil in food processor until mixture is roughly chopped, 4 to 6 pulses. Transfer to bowl and season with salt and extra lime juice to taste.
