2 tablespoons chopped fresh basil
1 tablespoon fresh lemon juice
1 teaspoon soy sauce
3 tablespoons vegetable oil
1 tablespoon prepared white horseradish
1 tablespoon soy sauce
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon fresh coarse ground black pepper
6 salmon fillets, 1 inch-thick (about 6 ounces each)
nonstick cooking spray

Steps:

  • For Sauce: Mix all sauce ingredients in small bowl.
  • Season with salt and pepper.
  • (Can be made 1 day ahead. Cover and chill.) For Salmon: Spray grill rack generously with nonstick spray.
  • Prepare barbecue (nedium-high heat).
  • Whisk oil, horseradish, soy sauce, garlic, salt and pepper in another small bowl.
  • Brush oil mixture over both sides of salmon fillets.
  • Grill salmon just until opaque in center, about 4 minutes per side.

16 red new potatoes (1-1/2 lb.), cooked
1 skin-on salmon fillet (2 lb.), 1 inch thick
2 Tbsp. olive oil
1 Tbsp. chopped Italian parsley

Steps:

  • Heat greased grill to medium heat.
  • Mix first 4 ingredients until blended.

3 tablespoons honey
2 tablespoons prepared horseradish, drained
2 tablespoons finely chopped fresh mint leaves
Kosher salt and freshly ground black pepper
2 pound fillet salmon, skin on
2 tablespoons canola oil
1 bunch watercress, coarsely chopped
1 small red onion, halved and thinly sliced
2 tablespoons aged sherry vinegar
2 tablespoons extra-virgin olive oil

Steps:

  • Whisk together the mustards, honey, horseradish, mint and 1/4 teaspoon of salt and 1/4 teaspoon of pepper in a small bowl. Let sit for at least 15 minutes before using. Can be made 1 day in advance and refrigerated but do not add the mint until just before using. Bring to room temperature before using.
  • Heat the grill to high.
  • Brush the salmon with the oil and season with salt and pepper. Place the salmon on the grill, skin side down, and grill until golden brown and slightly charred, about 3 minutes.
