Grilled Porterhouse Steaks with Mixed Green Salad image

Yield Makes 6 servings

Number Of Ingredients 9

4 flat anchovies, drained, or 1 tablespoon anchovy paste
2 tablespoons balsamic vinegar
6 tablespoons olive oil
2 to 3 teaspoons water (optional)
2 (1 3/4-inch-thick) porterhouse steaks (5 pounds total)
8 cups bite-size pieces mixed greens such as romaine, frisée, and red leaf (8 oz)
1/2 cup fresh flat-leaf parsley leaves
1/2 cup Niçoise olives (5 1/2 ounces)
Accompaniment:Pommes Paillasson

Steps:

  • Purée anchovies with vinegar in a blender. With motor running, add oil in a slow stream and blend until emulsified. Transfer to a bowl. If dressing is too thick, whisk in water 1 teaspoon at a time to thin to desired consistency. Season with salt and pepper.
  • Preheat oven to 450°F.
  • Pat steaks dry and season generously with salt and pepper. Heat an oiled ridged grill pan over moderately high heat until hot but not smoking, then grill steaks, in batches if necessary, until well browned on both sides, about 14 minutes total.
  • Transfer steaks to a shallow baking pan and roast in middle of oven until an instant-read thermometer inserted 2 inches into thickest part of meat (do not touch bone) registers 125°F, about 15 minutes. Transfer steaks to a cutting board, reserving meat juices in pan, and let stand 5 minutes.
  • Toss greens, parsley, and olives with enough dressing to coat and season with salt and pepper. Cut steak across grain into thin slices. Drizzle with reserved pan juices or remaining vinaigrette and serve with salad.

1/4 cup chopped fresh cilantro
2 12-ounce rib-eye steaks
2 tablespoons toasted sesame seeds
8 ounces crimini (baby bella) mushrooms, quartered
8 cups mixed greens

Steps:

  • Mix soy sauce, rice vinegar, 1 1/2 teaspoons vegetable oil, minced ginger, chili-garlic sauce, and 1/8 teaspoon sesame oil in small bowl. Add cilantro and stir to blend. Set dressing aside.
  • Rub 1/4 teaspoon sesame oil over each side of each rib-eye steak. Sprinkle steaks with salt, pepper, and toasted sesame seeds; press firmly to adhere. Heat 2 teaspoons vegetable oil in large nonstick skillet over medium-high heat. Add mushrooms; sauté until browned, about 8 minutes. Season to taste with salt and pepper. Transfer sautéed mushrooms to plate. Add 1 teaspoon vegetable oil and 1 teaspoon sesame oil to skillet; heat over medium-high heat. Add steaks; cook to desired doneness, 3 to 4 minutes per side for medium-rare. Transfer steaks to cutting board. Slice steaks. Toss mixed greens with dressing in large bowl; divide greens among plates. Top with steak slices and mushrooms and serve.

1 (2 lb.) flank steak
6 Tbs. extra-virgin olive oil
Gray salt
freshly-ground black pepper
3 Tbs. dried oregano
1 Tbs. minced garlic
12 cups of greens (mustard, chard or spinach), washed
red wine vinegar
hot sauce (optional)

Steps:

  • Prepare the grill pan and let it get smoking hot. Pour a tablespoon of the olive oil on one side of the meat and rub in. Season with salt and pepper to taste. Sprinkle half of the oregano on top and lightly press into meat. Flip and repeat process on the other side. Grill, turning once, for about 10 minutes or until done to your taste. Let rest for a few minutes before serving.
  • While steak is cooking, heat the remaining oil until hot in a large saute pan. Add the garlic and saute about 1 minute, or until light brown. Add the greens and toss occasionally. After about 3 minutes the greens will have cooked down. Season with a large pinch of salt and cook another 3 minutes. Transfer to a bowl and let cool. Splash with vinegar to taste.
  • Cut the flank steak across the grain into 1/4-inch slices. Serve with the greens and finish with drizzle of hot sauce, as desired.

3 garlic cloves, minced
1 teaspoon sea salt
1 teaspoon dried rosemary, crushed
1 tablespoon olive oil
1 beef flank steak (1-1/2 pounds)
RELISH:
4 large ears sweet corn, husks removed
4 green onions
2 medium tomatoes
1 poblano pepper
2 tablespoons olive oil, divided
1 medium ripe avocado, peeled and cubed
1 teaspoon balsamic vinegar
1/2 teaspoon salt

Steps:

  • Mix garlic, salt, rosemary and oil; rub over both sides of steak. Let stand at least 30 minutes. Meanwhile, brush corn, onions, tomatoes and poblano with 1 tablespoon oil. Grill, covered, over medium-high heat 5-10 minutes or until vegetables are charred and tender, turning occasionally., Grill steak, covered, over medium heat 5-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand 5 minutes., When corn is cool enough to handle, cut kernels from cobs; place in a large bowl. Remove skin and seeds from tomatoes and poblano. Chop onions, tomatoes and poblano; add to bowl. Gently stir in avocado, vinegar, salt and remaining oil. Thinly slice steak across the grain. Serve with relish.

My husband loves steak and he prepares this salad often in the summer when produce is plentiful. The success of this recipe depends on the quality and freshness of the ingredients. The meat can also be cooked on the stove top if you wish. We like to serve this with corn on the cob on the side!

1 large lemon, juice of
1/4 cup extra virgin olive oil
salt
fresh cracked black pepper
10 ounces top sirloin steaks or 10 ounces flank steaks
4 cups mixed greens, rinsed and drained
4 radishes, thinly sliced
2 small zucchini, grilled
3 green onions, thinly sliced (seasonal onion such as Walla Walla or Vidalia) or 1/2 cup sliced onion (seasonal onion such as Walla Walla or Vidalia)
6 -8 cherry tomatoes, cut in half
1/2 cup fresh basil, sliced into ribbons
1 cucumber, thinly sliced

Steps:

  • Prepare dressing. Set aside.
  • Preheat grill (or range) and cook zucchini on each side 2 to 3 minutes. Transfer to salad bowl. Grill meat until medium rare or cooked to desired doneness. Set meat aside.
  • Place mixed greens and other vegetables inlcuding the zucchini in salad bowl and add a little bit of the dressing and toss gently. Arrange the mixture on two salad plates.
  • Slice steak on grain. Serve the steak over the prepared salad.
  • Serve remaining salad dressing on side.
