BLUE CHEESE STUFFED TOMATOES

1 pint grape tomatoes
Kosher salt and freshly cracked black pepper
2 ounces cream cheese, at room temperature
1/2 cup blue cheese
2 tablespoons finely chopped fresh chives
4 slices crispy cooked bacon, finely chopped
1 tablespoon hot honey (or 1 tablespoon honey mixed with a dash of hot sauce)

Steps:

  • Slice the top third (stem side) off each tomato. Cut a small slice off each bottom so that the tomatoes are flat and able to stand up. Using a melon baller or small spoon, remove the inside of each tomato to hollow out the center. Place the tomatoes on a plate or platter. Sprinkle the tomatoes with 1/4 teaspoon salt.
  • Mash the cream cheese in a bowl with a rubber spatula until it is soft and malleable. Gently fold in the blue cheese, being careful not to overmix and break the blue clumps. Season with pepper. Use two small spoons to fill the tomatoes with the blue cheese mixture. (How much will depend on the size of the tomato; small tomatoes should get about 1 teaspoon of the mixture. You can also transfer the mixture to a pastry bag or resealable plastic bag with the corner cut off and pipe the cheese mixture into each tomato.)
  • Toss the chives and bacon together in a small bowl. Top each tomato with the mixture. Drizzle hot honey over the entire plate. Serve.

3 large tomatoes, cut in halves
1/4 cup soft breadcrumbs
2 tablespoons butter, melted
1/2 teaspoon dried basil
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup monterey jack cheese, grated
1 tablespoon fresh parsley, chopped

Steps:

  • Scoop out center of each tomato half, leaving a 1/2 inch thick shell.
  • Chop scooped out tomato pulp; set aside.
  • In a medium bowl, combine breadcrumbs, butter, basil, salt and pepper.
  • Stir in cheese and chopped tomato pulp.
  • Fill tomato shells with breadcrumb mixture.
  • Wrap each stuffed half in foil.
  • Place on grill, stuffed side up.
  • Cook 10 to 15 minutes or until cheese melts.
  • Remove foil; sprinkle with parsley.
  • Serve hot and enjoy.

1 (6 ounce) package button mushrooms, stemmed
1 tablespoon olive oil, or as needed
⅓ cup crumbled blue cheese
2 tablespoons butter
2 cloves garlic, minced
1 tablespoon chopped fresh basil
salt and ground black pepper to taste

Steps:

  • Coat tops of mushrooms with olive oil. Place mushrooms top-down in a grill-safe dish.
  • Mix blue cheese, butter, garlic, basil, salt, and pepper thoroughly in a bowl. Scoop evenly into the mushroom caps.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Cook mushrooms until tender and heated through, about 5 minutes.

2 medium tomatoes
6 slices bacon, cooked
1/4 cup onion, chopped
1/4 cup green pepper, chopped
3/4 cup shredded cheddar cheese
1 tablespoon lettuce, chopped

  • cut thin slice from top of each tomato.
  • scoop out pulp and set aside.
  • drain tomatoes up-side down on rack.
  • meanwhile in a skillet, cook bacon until almost done.
  • drain off fat.
  • add green pepper and onion.
  • saute until soft.
  • remove skillet from heat and blend in cheese, lettuce and tomato pulp.
  • sprinkle with cracker crumbs.
  • dot each tomato with 1 teaspoon butter.
  • place in a buttered baking dish.
  • bake in pre-heated 400 degree oven, for 25-30 minutes.

6 slices firm white sandwich bread
1/4 lb sliced bacon (about 5 slices)
6 tablespoons olive oil
1/4 cup finely chopped shallot
3 tablespoons Sherry vinegar
4 assorted medium heirloom tomatoes (2 lb total), cut into 1/4- to 1/3-inch-thick slices
30 small fresh basil leaves
1 1/2 oz blue cheese (preferably Maytag Blue), crumbled, at room temperature
Garnish: very small heirloom cherry or currant tomatoes
Special Equipment
a 3-inch round cookie cutter

Steps:

  • Cut 1 round from each bread slice with cookie cutter.
  • Cook bacon in a 10-inch heavy skillet over moderate heat until crisp, then transfer to paper towels to drain. Pour off bacon fat from skillet and reserve fat (do not clean skillet).
  • Heat 1 1/2 tablespoons oil in skillet over moderate heat until hot but not smoking, then toast 3 bread rounds, turning over once, until golden brown, about 3 minutes total. Transfer toasts to a rack to cool and season with salt and pepper. Toast remaining 3 bread rounds in 1 1/2 tablespoons more oil in same manner.
  • Cook shallot in 2 tablespoons reserved bacon fat and remaining 3 tablespoons oil in a small heavy saucepan over moderate heat, stirring, until softened, about 2 minutes. Add vinegar and simmer, whisking, until emulsified, about 1 minute. Season dressing with salt and pepper and keep warm, covered.
  • Crumble bacon. Arrange bread rounds on 6 plates and divide tomato slices among them, stacking slices and sprinkling some basil and bacon between slices. Sprinkle cheese and remaining basil and bacon over and around tomatoes. Spoon some of warm bacon dressing over and around tomatoes and season with salt and pepper.

16 ounces fresh mozzarella cheese, cubed
1/2 cup soft breadcrumbs
2 tablespoons dry basil
1/4 teaspoon fresh ground pepper

Steps:

  • Halve tomatoes and scoop out insides leaving 1/2-inch thick shell.
  • Chop pulp and set aside.
  • Combine breadcrumbs, butter, basil, salt and pepper. Stir in cheese and tomato pulp.
  • Fill tomato halves with cheesy breadcrumb.
  • Spray cooking spray lightly on the bottom of aluminum pan.
  • Place tomato halves in disposable pan and wrap top loosely with foil.
  • If grilling, set over grill for at least 10 minutes.
  • If oven baking, bake at 350° for 15 minutes and broil until cheese is browned and bubbly.
  • Uncover and serve on pan with large sprigs of parsley or curly parsley.

4 slices cooked bacon
5 tablespoons soft butter, divided (or to taste)
4 slices bread (white or whole wheat)
4 slices monterey jack pepper cheese (or use American cheese)
4 slices tomatoes

Steps:

  • Spread about 1 tablespoon butter into the bottom of a large skillet (or just leave some fat in the pan from the bacon).
  • Spread 1 tablespoon (can use more) onto one side of each slice of bread.
  • Place the 4 slices of bread butter-side down onto a large skillet or flat grill.
  • Top with 1 slice of cheese, 2 slices of tomato and 2 slices cooked bacon, then 1 more slice of cheese.
  • Cover with a slice of bread (butter-side facing outside).
  • Fry over medium turning once with a spatula until golden brown on both sides.

  • Preheat grill to about 400°-450° surface temperature. Medium if you don't want to check the temp. Clean and oil grates. This can easily be done near the end of grilling a main dish.
  • Wash tomatoes and cut tops off making a bowl. Spoon out the inside being careful not to go through the outside. Wash out the shells and take the inner core that you removed and wash off any seeds. Chop the cores into 1/4 inch cubes removing any tough parts.
  • In a mixing bowl, combine chopped tomato, 1/4 cup each feta, Parmesan, and Italian breadcrumbs. Add salt, pepper, parsley, oregano, basil, and garlic. Mix well then stuff the filling into the tomato shells.
