Easy Grilled Vegetables image

Perfectly crisp-tender grilled veggies served with an amazing, tangy, garlicky basil sauce. You'll want this sauce on everything!

3 tablespoons olive oil
1 pound asparagus, trimmed
1 pound cherry tomatoes, stemmed
8 ounces cremini mushrooms, halved
2 ears corn, each cut crosswise into 4 pieces
2 zucchini, quartered lengthwise
Kosher salt and freshly ground black pepper, to taste
1/2 cup olive oil
2 1/2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
2 cloves garlic, chopped
1/3 cup packed fresh basil leaves
3 tablespoons packed fresh parsley leaves
Kosher salt and freshly ground black pepper, to taste

Steps:

  • Preheat grill to medium heat. To make the basil garlic sauce, combine olive oil, vinegar, Dijon, garlic, basil and parsley in the bowl of a food processor until smooth and vibrant green; season with salt and pepper, to taste. Set aside. Brush olive oil onto the asparagus, tomatoes, mushrooms, corn and zucchini; season with salt and pepper, to taste. Add vegetables to grill, and cook, turning occasionally, until lightly charred all over, about 3-4 minutes for the asparagus, tomatoes and mushrooms and about 5-8 minutes for the corn and zucchini. Serve immediately with basil garlic sauce.

2 red bell peppers, grilled
2 green bell peppers, grilled
1 small eggplant, cut in 1/2-inch slices, grilled
2 medium red onions, cut in thick slices, grilled
1 zucchini, cut lengthwise into 1/2-inch sliced, grilled
8 mushrooms, grilled
2 tablespoons fresh parsley, coarsely chopped
2 garlic cloves, crushed
1 tablespoon olive oil
2 tablespoons balsamic vinegar
salt and pepper
4 fat free tortillas

Steps:

  • After grilling (or broiling) vegetables, let cool enough to handle.
  • Chop into 1/4" pieces and combine in a bowl with all remaining ingredients, except tortillas.
  • Divide between tortillas, spreading filling to within 1/2" of edge.
  • Roll up pinwheel style.
  • Wrap in plastic wrap and chill 1 hour, to allow flavors to blend.
  • Remove plastic wrap and slice in 1" slices and serve. (do not serve ragged looking slices).

Sushi masters train for years to hone their skills, but hand-rolling is an easier way to enjoy some of the traditional ingredients and flavors.

Number Of Ingredients 16

1 cup sushi rice
1 tablespoon seasoned rice wine vinegar
8 ounces asparagus spears
4 mini sweet peppers, halved and seeded
4 to 5 shiitake mushrooms, stems removed
1 tablespoon olive oil
2 teaspoons low-sodium soy sauce, plus more for serving
Freshly ground black pepper
1/2 cup shredded red cabbage
1/2 cup shredded carrot
1 mini cucumber, halved, seeded and sliced into thin strips
1 avocado, pitted, peeled and sliced
4 nori sheets, halved into rectangles
1/2 cup bottled sriracha mayonnaise
Sesame seeds, for sprinkling
1/2 cup sushi ginger (pickled)

Steps:

  • Cook the sushi rice according to the package instructions, then flavor with the seasoned rice vinegar, stirring to distribute. Let sit until ready to use.
  • Preheat a grill pan on medium heat.
  • Add the asparagus, peppers and shiitake mushrooms to a bowl, then toss with the olive oil. Season with 2 teaspoons soy sauce and a pinch of pepper. Grill the vegetables, turning as needed, until lightly charred, 4 to 5 minutes. Remove to a cutting board. Halve the asparagus, then set aside. Slice the peppers and mushrooms into thin strips.
  • Present the grilled vegetables on a platter, along with the cabbage, carrot, cucumber and avocado, and allow everyone to build their own hand rolls.
  • To make the hand rolls: Lay a halved nori sheet, shiny-side down, on a clean surface. Add 1/4 cup of the sushi rice to the left edge of the nori and flatten slightly. Top with the desired vegetables. Bring the bottom left corner up and over the fillings to the top edge of the rectangle, creating a cone. Now roll the cone down the remaining strip of nori. Use a couple grains of rice to secure the nori to itself to help keep it rolled. Drizzle the top with the sriracha mayonnaise and sprinkle over the sesame seeds. Serve alongside the ginger and soy sauce for dipping.

1 package rice paper wrappers (about 16)
1 quart hot water
4 cups grilled vegetables (eggplant, zucchini, onions, red bell peppers) coarsely chopped
2 tablespoons sesame oil
2 tablespoons sesame seeds, toasted
1/3 cup pickled ginger
2 cups mixed salad greens
2 ounces fresh mint
Sweet Thai chili sauce, recipe follows
2 (1 quart) bottles rice vinegar
3 cups sugar
1 red bell pepper, finely diced
1/2 large red onion, diced
1 1/2 tablespoons ginger
3/4 cup cilantro or mint, finely chopped
1/2 tablespoon garlic chili sauce

Steps:

  • In a bowl combine grilled vegetables, sesame seeds, sesame oil, mint. Transfer hot water to bowl that will fit the whole rice wrapper flat. Place one sheet of rice paper in water until softened. Place wrapper on plastic board or towel or wooden cutting board. Take a small amount of the greens and place on lower third of rice paper. Place about 1 1/2 T of vegetable mixture on greens. Place a few piece of pickled ginger over veggies. Roll up roll in spring roll fashion. Serve with Thai Chili Sauce.
  • Dip rice paper wrappers into hot water. Place on counter top. Place lettuce and vegetables on wrapper, roll like a spring roll. Serve with Thai chili sauce.
  • In a medium saucepan, over medium-high heat, combine rice vinegar and sugar. Cook until reduced to a syrup-like consistency. Combine remaining ingredients to reduced liquid and mix well. Serve with summer rolls.
  • Yield: 1 quart

4 ounces cream cheese, chive flavored
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
1/4 teaspoon black pepper
3 spinach tortillas
1 cup finely chopped cooked chicken
3/4 cup shredded chopped carrot
3/4 cup finely chopped green bell pepper
4 tablespoons chopped green onions

Steps:

  • Combine cream cheese, mayonnaise, mustard and black pepper in a small bowl; stir until well blended.
  • Spread cream cheese mixture evely onto each tortilla leaving about a 1/2 inch border.
  • Divide chicken, carrot, bell pepper and green onions evely over cream cheese leaving about a 1 1/2 inch border on cheese mixture at one end of each tortilla.
  • Roll up each tortilla in a jelly-roll fashion. Cut into 1 1/2 inch thick slices.
  • Refrigerate till ready to eat.

1 (3 ounce) package cream cheese, softened
1/3 cup sour cream
1 tablespoon taco seasoning mix (to taste)
1/2 cup fresh corn kernels (or frozen corn, thawed, drained)
1/2 cup black beans, drained, rinsed
1/4 cup finely chopped fresh cilantro
1 plum tomato, seeded, finely chopped (Roma, about 1/4 cup) (optional)
2 tablespoons salsa
2 tablespoons diced mild green chilies, drained (optional)
1/2 cup shredded cheese, cheddar, jack, etc
3 large tortillas (10 inch. plain, jalapeno,sundried tomato, etc.)

Steps:

  • In small bowl, beat cream cheese, sour cream and taco seasoning mix until well blended.
  • Stir in corn, beans, cilantro, tomato, green chilis and salsa.
  • Spread cream cheese mixture over each tortilla to edges.
  • Roll up each; cut off tapered ends.
  • Wrap each tortilla roll in plastic wrap and refrigerate at least 1 hour but no longer than 8 hours.
  • To serve, cut each roll into 1-inch slices.
  • Garnish with cilantro sprigs.

1/3 cup sun-dried tomatoes (not packed in oil)
1 cup boiling water
4 boneless skinless chicken breast halves (4 ounces each)
1-1/2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
1/2 teaspoon pepper
1/4 teaspoon salt
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 tablespoon golden raisins
1 tablespoon reduced-fat cream cheese
2 teaspoons pine nuts
2 tablespoons all-purpose flour
2 teaspoons olive oil
1 cup reduced-sodium chicken broth
1/2 cup minced fresh basil
3 garlic cloves, minced
1-1/2 teaspoons cornstarch
1 tablespoon cold water
2 medium tomatoes, chopped

Steps:

  • Place dried tomatoes in a small bowl. Cover with boiling water; let stand for 5 minutes. Drain, reserving 1/2 cup water; chop tomatoes and set aside., Flatten chicken to 1/4-in. thickness; sprinkle with rosemary, pepper and salt. In a small bowl, combine the spinach, raisins, cream cheese, pine nuts and sun-dried tomatoes. Spread 1/4 cup spinach mixture over each chicken breast. Roll up and secure with toothpicks. Place flour in a shallow bowl; coat chicken with flour., In a large nonstick skillet coated with cooking spray over medium heat, brown chicken in oil. Add the broth, basil, garlic and reserved water. Bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until a thermometer reads 170°., Combine cornstarch and cold water until smooth. Stir into pan. Bring to a boil; cook and stir for 1 minute or until thickened. Add tomatoes; heat through. Discard toothpicks.

Summer vegetable roll-ups image

Treat vegetarians to these Italian-inspired aubergine, pepper and courgette rolls with ricotta cheese and basil pesto

Yield Serves 4 as a light lunch or 6 as a starter

Number Of Ingredients 8

2 aubergines , preferably long and thin ones
3 courgettes , ideally about the same length as the aubergines
6 tbsp olive oil
3 red peppers
100g ricotta
2 tsp pesto
50g pine nuts
basil leaves , to serve

Steps:

  • Cut each aubergine and courgette into 6 slices lengthways. Line a grill pan with foil and arrange the aubergine and courgette slices over it. Brush them liberally with oil, then season. Grill until lightly browned, then turn over and repeat. Remove and leave to cool, keeping the 2 vegetables separate.
  • Quarter the peppers and remove the seeds. Place on the grill, skin-side up, and grill until the skins are blackened. Transfer to a bowl and cover with foil. When cool enough to handle, peel off the skins.
  • Mix the ricotta and pesto with a little seasoning. Put an aubergine slice on your work surface and spread with a little ricotta mix. Cover with a courgette slice and spread with a little more ricotta mix. Top with a pepper slice, then roll up from one end and secure with a cocktail stick if necessary. Place on a platter and repeat with the remaining vegetables and ricotta mix to make 12 roll-ups.
  • Toast the pine nuts in a dry frying pan until golden. Drizzle a little oil over the roll-ups, then scatter with pine nuts and basil leaves. Serve at room temperature.
