Steps:
- Place the cabbage in boiling water for no more than one minute. Discard the water.
- Put the cabbage in a large bowl and add grated carrots, sliced onion, cayenne, oregano, olive oil, salt, brown sugar, vinegar, and water.
- Let chill in refrigerator at least two hours before serving.

Steps:
- Heat oil in a large skillet over medium-high heat. Add rice, onion, and tomato; cook and stir until rice turns light golden brown, 3 to 4 minutes.
- Stir water, carrot, celery, and chicken bouillon into the skillet. Simmer until most of the water is absorbed, about 8 minutes. Cover and simmer until rice is tender, 5 to 8 minutes more.

- Combine the cabbage and carrot in a large bowl and pour the boiling water over the mixture. Allow the mixture to steep for 5 minutes; drain well. Return the cabbage and carrots to the bowl. Mix in the green onion, vinegar, 1/2 cup of water, and oregano. Toss until all ingredients are combined. Chill for 20 minutes before serving.

Steps:
- Put avocados into bowl and mix with lime juice.
- Mix in other ingredients gently. Serve as soon as possible.
- You do not need salt with this unless you are one who cannot do without it.
- We use a couple jalapenos, but serrano or whatever juicy green chile you like should work fine.
- We eat this all year round and at least once a week. It's good for you! In hot weather we eat all of it between the two of us as a main course with tortillas or chips.
- My husband insists on having green onion in anything with onion, so I add this too, but it is not in the original recipe.

- Place cabbage in a fine mesh strainer. Very slowly pour boiling water over the cabbage. Rinse with cold water. Drain well, pressing out as much water as possible.
- Add cabbage to large bowl. Add carrot, onion, jalapeno, oregano, and vinegar and toss well to combine. I like to put it all in a bowl with a lid and shake it.
- Curtido tastes best after it has marinated for several hours or days, but you can enjoy it fresh if you’d like.
HOW TO MAKE AN AUTHENTIC GUATEMALAN CURTIDO RECIPE

- Preheat oven to 375°F. Wrap beets in aluminum foil and set on a baking pan. Roast for 60 minutes, or until a knife easily pierces the beet. Set aside to cool.
- While beets are cooling, put on a pot of salted water and bring to a simmer. While you are waiting for the water to come to a simmer, prepare the ice bath: fill a large bowl with cold water and ice. Set aside.
- Add green beans, peas and shredded cabbage to the simmering water and cook for 4 minutes. Remove from water with a slotted spoon or a spider (don't throw out the water) and plunge the bean mixture into the ice bath.
- Add carrots and cook for 5 minutes, then add cauliflower to the carrots. Let them cook for a few minutes more until softened. The goal is to soften the vegetables, they should still have a little resistance when you bite them. When carrot and cauliflower mixture is to your liking, drain and add to ice bath.
