Hacienda Colorado-style Beans Ala Charra image

This bean dish can be either served as a side, or as a main course with white cooked riced added just before serving.

1 1/2 lbs dried pinto beans
3 quarts water
1/2 teaspoon salt
3/4 lb smoked bacon
1 large white onion, diced
1/2-1 teaspoon salt
1/2 teaspoon garlic powder
2 cups diced tomatoes
3 tablespoons chopped fresh cilantro
1 -2 drop liquid smoke

Steps:

  • Sort beans and remove any debris.
  • Add beans to water in pressure cooker.
  • Add 1/2 teaspoon salt.
  • Soak overnight.
  • Add the rest of the salt to taste, bacon, onion, and garlic powder.
  • Pressure cook beans until tender, but firm.
  • Cooking times will vaary with altitude, but 15-20 minutes on a medium rock will cook them well.
  • Run cool water over pressure cooker lid before removing lid.
  • Wait for vents to drop before rotating the lid from the pot.
  • Add tomatos and cilantro.
  • Stir and simmer on low until heated through.
  • Add liquid smoke, if desired.

2 tablespoons butter
1 medium onion, finely chopped
1 medium red pepper, chopped
1 garlic clove, minced
1-1/4 cups crushed tortilla chips, divided
6 large eggs
3 tablespoons minced fresh cilantro
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
6 cups frozen shredded hash brown potatoes, thawed
1-2/3 cups shredded cheddar cheese, divided
1 cup 4% cottage cheese
2/3 cup canned black beans, rinsed and drained
1/2 cup shredded pepper jack cheese
Optional toppings: quartered grape tomatoes, thinly sliced green onions, sour cream and salsa

Steps:

  • Preheat oven to 350°. In a large skillet, heat butter over medium heat. Add onion and red pepper; cook and stir 3-4 minutes or until tender. Add garlic; cook and stir 1 minute longer. Remove from heat; cool slightly., Sprinkle 3/4 cup crushed tortilla chips in a greased 11x7-in. baking dish. In a large bowl, whisk eggs, cilantro, cumin, salt and pepper. Stir in hash browns, 1 cup cheddar cheese, cottage cheese, black beans, pepper jack cheese and onion mixture; spoon over chips., Bake, uncovered, 40-45 minutes or until lightly browned. Top with remaining cheddar cheese and tortilla chips. Bake, uncovered, 10 minutes longer or until cheese is bubbly. 1 bottle (8 ounces) taco sauce
8 hot dog buns, split
1 cup refried beans
Shredded lettuce
1 large tomato, chopped
24 pickled pepper rings
Minced fresh cilantro

Steps:

  • Cut a lengthwise slit three-quarters of the way through each hot dog and to within 1/2 in. of each end. Fill pocket with 2 tablespoons cheese. , Place in an ungreased 13x9-in. baking dish. Pour taco sauce over hot dogs. Bake, uncovered, at 350° for 15-17 minutes or until cheese is melted. , Spread the inside of each bun with 2 tablespoons refried beans. 1 dash onion salt
corn chips

Steps:

  • Mix cream cheese salsa and salt until well blended.
  • Spread in microwavable bowl on high for 3 to 4 minutes or until heated through, stirring every 2 minutes.
  • Serve warm.
  • I put mine in crock pot on low until heated and then on warm.
