This popular French classic coats the fish in seasoned flour which lightly protects the fish without overpowering its flavour

4 fillets sole or plaice, skin-on (about 140g/5oz each)
6 tbsp plain flour
3 tbsp light olive oil or sunflower oil
85g butter, ideally unsalted
1 lemon, juice only
2 tbsp small caper (optional)

Steps:

  • Check the fish for small bones and pull any out with tweezers. In a large shallow bowl, season the flour with a little salt and black pepper. Toss the fish in the flour, coating well, and shake off any excess.
  • Heat the oil in a large frying pan. Add the fish and cook, skin-side down, for 2 mins. Use a fish slice or large spatula to turn, then cook the other side for 1-2 mins until golden.
  • Remove the fish to a warmed plate, then season. Wipe out the pan with kitchen paper. Return the pan to the heat, then add the butter. Heat until it melts and begins to turn a light brown, then mix in the lemon juice and capers, if using. Swirl in the pan for a few secs, return fish to the pan and spoon over any juices. Serve immediately.

6 (3 ounce) fillets haddock
salt and pepper to taste
4 roma (plum) tomatoes, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 small onion, thinly sliced
5 tablespoons capers
8 tablespoons chopped fresh parsley
6 tablespoons fresh lemon juice
6 tablespoons extra virgin olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Center each piece of fish on an individual piece of aluminum foil (large enough to enclose the fish when folded). Sprinkle each piece of fish with salt and pepper. Divide the sliced tomatoes, onion, and red and yellow peppers between the 6 pieces of fish, and place on top of the fillets. Sprinkle evenly with the capers and parsley. Drizzle each fillet with 1 tablespoon of olive oil and 1 tablespoon of lemon juice.
  • Fold and seal the foil into a packet and place on a baking sheet. Leave 2 inches between each packet for even cooking.
  • Bake in preheated oven for 20 minutes.
  • Let rest for 5 minutes and unwrap. One packet per person.

This is from Cooking Light and was adored by my family. In fact, my 3 year old ate most of mine! This is a simple recipe for Halibut which allows the Halibut to shine!

4 (6 ounce) halibut fillets (about 3/4 inch thick)
1/4 teaspoon black pepper
1/4 teaspoon salt, divided
1 teaspoon all-purpose flour
1 1/2 tablespoons butter, divided
2 teaspoons fresh lemon juice
1 tablespoon fresh parsley, finely chopped

Steps:

  • Pat fish dry, and sprinkle both sides with black peper and 1/8 teaspoon salt. Sprinkle with flour.
  • Melt 1.5 teaspoons butter in a large nonstick skilled over medium heat. Add fish to pan, and cook 5 minutes or until lightly browned. Carefully turn fish over; cook 4 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness. Remove from pan; set aside and keep warm.
  • Add remaining 1 tablespoon butter to pan, and cook 1 minute or until lightly browned, swirling pan to melt butter evenly and prevent burning. Remove pan from heat; stir in juice. Drizzle juice mixture over fish. Sprinkle fish with remaining 1/8 teaspoon salt. Sprinkle with fresh parsley. Serve immediately.

CREOLE MEUNIERE SAUCE



Creole Meuniere Sauce image

Number Of Ingredients 8

1 cup Worcestershire sauce
1/2 cup chopped yellow onions
2 bay leaves
2 lemons, peeled, with pith discarded and cut in half
3/4 cup heavy cream
1 pound (4 sticks) unsalted butter, cut into 1/2-inch dice
1/2 teaspoon Creole Seasoning
1/4 cup chopped scallions

Steps:

  • In a medium-sized nonreactive saucepan, combine the Worcestershire, onions, bay leaves, and lemons, and cook over medium-high heat. Mash the lemons down with the back of a spoon and bring mixture to a boil. Reduce heat to a simmer until mixture becomes slightly thick, about 8 to 10 minutes. Add cream and whisk to blend. Cook 1 minute. Add butter bit by bit, whisking constantly until completely melted and blended into the mixture. Add Creole seasoning and stir to incorporate. Strain sauce through a fine-meshed sieve or colander lined with cheesecloth. Garnish with scallions.

2 fish fillets
Juice of half a lemon
Milk
Seasoned Flour (1 Cup Flour, 1 tsp Seasoned Salt, Pepper to taste)
2 T butter
1/3 cup sliced almonds
4-5 large mushrooms sliced thin
1/3 cup dry white wine, if desired
Splash of Cream or Half & Half

Steps:

  • Melt butter in saute pan. Dip fillets in milk, dredge them in seasoned flour, shake off excess flour. When butter is bubbling, add filets. Slowly saute until browned, flip over until other side is browned (approx 4 mins. each side). Remove filets and keep warm. Add lemon juice, almonds & mushrooms to browned butter. Add wine if desired. Be careful not to burn the almonds. Add splash of cream or half & half to add a little creaminess. Pour sauce over filets and serve. Bon Appetit!

  • Heat 1/2 c. butter over med high heat until very hot but not smoking. Remove the fillets from the milk, blot with paper towels, dip into flour, and shake off the excess. Carefully lay the fillets into the hot butter, don’t crowd the pan or you’ll have trouble flipping the fillets.
  • Cook the fish until golden on one side 2-3 minutes. With a slotted spatula and great care, flip the fish. Adjust the temp if the butter is getting too dark. Cook on the second side 2-3 minutes. Use slotted spatula to remove them, set on paper towels for a minutes and arrange on warm platter.
  • If the pan is too dark clean out slightly with paper towel. Melt 6 Tbsp butter until butter foam turns slightly brown. Remove pan from the heat so butter doesn’t keep cooking, but keep hot. Pour lemon juice over fish and sprinkle with parsley. Pour the hot browned butter – you should hear a sizzle (if you don’t it will still taste great!) Serve immediately with wedges.
