Halushki Recipe (Traditional Ukrainian Dumplings) image

This traditional Ukrainian halushki recipe consists of tender dumplings tossed with crispy bacon and sautéed mushrooms and onions. The epitome of Eastern European comfort food!

5 cups flour
1 tsp salt
4 eggs
1 cup lukewarm water
150 g Unsalted Butter (for dough)
3 tbsp Unsalted Butter (for sautéing veggies + dumplings)
1 lb fresh mushrooms
1 onion
1 cup bacon pieces
1 tbsp salt (adjust to taste)
1 tsp ground black pepper (adjust to taste)

Steps:

  • Prepare ingredients for the recipe.
  • Place the flour and salt in a large bowl. Make a little well in the middle. Place whisked eggs, water, and melted butter into it. Using a fork, work the ingredients together to form the dough. Finish up combining the ingredients by hand until you get a smooth, even texture.
  • Divide the dough into eight even pieces. On a floured surface, roll each piece into a long string. Dice each string into small pieces.
  • At this point, you can either freeze the raw dough for later use or move onto the next step to cook them.
  • Bring a pot of salted water to a boil. Toss in the raw dumplings and boil them until they float to the top.
  • Gather the topping ingredients.
  • Dice mushrooms and sauté them in a buttered skillet for about 5 minutes. Dice the onions and add them to the skillet, cooking them until softened. Season with salt and pepper.
  • Stir in bacon pieces, sauté for 5 minutes.
  • Place dumplings into a nonstick skillet and add in sautéed mixture and butter. Cook until they turn golden brown.
  • Serve immediately and enjoy!

This is a traditional Polish recipe handed down from my grandma. Its quick, simple, inexpensive, tasty and makes enough to feed an army.

1 ½ pounds pork chops
garlic powder to taste
salt and pepper to taste
1 onion, chopped
1 large head cabbage, cut into squares
1 pound large egg noodles
1 tablespoon butter

Steps:

  • Sprinkle pork chops with garlic powder, salt and pepper and place in a large greased sauce pan or deep skillet with chopped onion and fry until very brown and well cooked. It is ok if they stick a little, as the drippings are essential in this dish. When done, remove chops and set aside.
  • Add a little water to the saucepan or skillet and mix up the drippings a bit. Place cabbage into the pot, and allow to cook down completely.
  • In a separate large saucepan, boil the egg noodles in water until cooked. Drain noodles and mix in butter.
  • Cut up the pork chops to bite size pieces and set aside. When the cabbage has cooked down, add pork and cooked noodles and mix completely.

There are two version of the halushky dumplings that l grew up loving. This version, the more popular of the 2, uses raw pototo in the dough. The second version, used for adding to stews and soups, leaves out the potato.

1 large potato, washed, peeled, and cut into medium-sized chunks
1 egg
1 1/2 cups water (more or less)
3 cups all-purpose flour (Use more or less if needed. The more health-conscious crowd can substitute up to l/3 of flour for wh)
1 pinch salt
4 quarts water

Steps:

  • Place 4 quarts water in large cooking pot and place on high heat. Prepare dough while waiting for water to boil.
  • To blender, add cup of water, egg and salt. Turn blender on "high" and add potato chunks a few at a time, blending all untill completely liquified.
  • Pour water/potato liquid in large mixing bowl. Add cup of flour and mix with sturdy mixing spoon.
  • Continue to add flour slowly until mixture is just slight stiff. It should be sticky and soft, yet firm enough to hold its shape so that it doesn't flow off a large dinner plate. If too soft, it will flow like lava. lt's okay to be too stiff. Dumplings will just have to cook 5 minutes longer.
  • The best way to make consistently-sized dumplings is to use a spaetzle/halushky maker. Halushky can be made without the use of a "maker", the way it was done for generations in the old country.
  • The manual method involves dumping some of the soft dough onto a large, flat plate. Hold the plate, at a slightly downward slant, on the edge ofthe boiling water.
  • Wet a large spoon with the water. (A "large" spoon puts more distance between your and the boiling water!) With the spoon, cut off small pieces of dough (about the.size of a Halls cough drop) and let it plop into the boiling water.
  • Continue this process until all the dough has been turned into dumplings. (The wet spoon can be used to push more dough to the edge of the plate to make it easy to cut off the dumplings. The sticky dough won't stick to a vvet spoon.).
  • After the last dumplings are in the boiling water, boil for about l5 to 20 minutes.
  • Remove from the stove and strain through a colander. Don't rinse.
  • Dumplings can be used for various stand-alone halushky recipes or can be added to soups or stews. (lf being added to soups or stews, the dumplings can be cooked directly in the soup or stew without boiling first separately.).

Halusky are Slovak boiled dumplings made with grated raw potatoes, flour, and salt. Whip them up for a tasty side dish or main course.

1 pound bacon (diced)
1 large chopped onion
5 large russet potatoes (peeled and chopped)
2 teaspoons salt
2 1/2 to 3 cups all-purpose flour
Garnish: chopped chives

Steps:

  • Gather the ingredients.
  • Cook bacon cubes in a large skillet over medium-high heat, until browned. If using onion, add it to skillet and fry mixture until bacon is well cooked and onions are transparent, or about 5 to 7 minutes. Set aside.
  • Bring a large pot of salted water to a boil. Meanwhile, add chopped potatoes in a food processor and process until completely puréed.
  • Add salt and flour into potato mixture a little at a time, processing after each addition. The batter is done when a spoon will stick straight up in the dough.
  • Place a third of the thick batter onto a cutting board. Using a knife, scrape about 15 small bits of dough into boiling water.
  • When they all float to the top, remove with a slotted spoon and place in a large colander to drain. Repeat process with all remaining batter on board, and remaining two thirds in food processor.
  • Once all dumplings are cooked, add into large skillet with bacon and combine well. Serve immediately and garnish with chives, if using.

1 recipe dumpling dough, recipe follows
4 tablespoons butter
2 cups julienne onions
Salt
Freshly ground white pepper
1 pound cottage cheese
1 tablespoon finely chopped parsley leaves
2 cups water
2 teaspoons vegetable oil
1 egg
1 teaspoon salt
3 to 4 cups all-purpose flour

Steps:

  • Bring a pot of salted water to a boil. Turn the dough out unto a floured surface. Roll the dough out to about 14-inch rectangle and 1/4-inch thick. Cut the dough into 1-inch squares. Add the dough to the boiling water and cook for about 4 to 5 minutes, or until the dough floats for 1 minute in the water and is fully cooked. Remove and drain on paper towels. Season with salt. Meanwhile, melt the butter in a large saute pan. Add the onions. Season with salt and pepper. Saute until tender, about 3 to 4 minutes. In a large mixing bowl, toss the dumplings with the onions and cheese. Toss well. Season with salt and pepper. Spoon into a serving bowl and garnish with parsley. Serve warm.
  • In a mixing bowl, combine the water, oil and egg. Mix well. Add the salt and 3 cups of the flour. Mix until the dough comes together and form a smooth ball. **If the dough is too sticky-add a little more flour, about 1/4 cup at a time. Cover with plastic wrap and allow to rest for 30 minutes.

This recipe makes a generous amount, which is great because Haluski tastes even better the second day. My Bubba (grandmother) made potato dumpling noodles to go with her cabbage. Also great served with any fish!

1 (16 ounce) package egg noodles
½ cup salted butter
1 yellow onion, chopped
1 large head cabbage, shredded
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain.
  • Melt butter in a skillet over low heat; cook and stir onion until onion is softened and butter is golden brown, 5 to 10 minutes. Add cabbage and toss to coat. Place a lid on the skillet; cook cabbage mixture, stirring occasionally, until cabbage is tender, about 30 minutes. Season with salt and pepper. Remove lid and continue to cook until cabbage begins to brown, 5 to 10 more minutes.
  • Mix noodles and cabbage together in a serving bowl; season with salt and pepper.

2 cups all-purpose flour
3 eggs
3 ounces milk
Salt and pepper
8 ounces (2 sticks) butter
1 large yellow onion, cut into medium dice
1 head savoy cabbage, cut into medium dice
2 tablespoons Hungarian paprika
12 ounces smoked ham, cut into julienne strips

Steps:

  • Combine the flour, eggs, milk and some salt and pepper in a medium bowl. Mix by hand until incorporated, making sure not to overmix. Place in the refrigerator, covered, and let rest for 1 hour.
  • Bring a pot of salted water to a boil. Cut penny-size dumplings into the water by hand and let boil for 5 minutes. Drain the dumplings and set aside.
  • Melt the butter in a large pan. Add the onions and cook until translucent. Add the cabbage and paprika and cook until tender. Toss with the dumplings and smoked ham and serve.

Haluski (dumplings)
2 large potatoes, peeled
3 + cups flour
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1/3 cup milk
Kapusto (cabbage)
1/2 cup butter
1 head cabbage, roughly chopped
1 onion, halved and sliced
Salt and pepper

Steps:

  • Make your dough by grating your potatoes on the smallest shredding option on your cheese grater (I have actually used mashed potatoes as a base also). Squeeze the excess water out and put the shreddings into a mixing bowl. Stir in the flour, baking powder, salt, eggs, and milk until a dough forms, adding more flour if necessary to achieve a workable consistency. Divide the dough into 6 sections. On a flour dusted surface, roll out each dough section into a long rope or snake. Slice the snakes into 1/4 inch wide "pillows" or dough ball sections. Press with tines of a fork into each dumpling (helps hold the sauce). Set aside the cut dumplings until ready to cook. Melt the butter in a large saucepan over low heat. Once melted, increase the heat to medium high and saute the onions and cabbage in the butter. Season with salt and pepper. Saute for 10 minutes, stirring often. Remove from heat. Bring a large pot of salted water to a boil. Working in batches boil the potato dumplings for approx. 3 minutes each batch. (You can tell they are ready when they float; cook 1 more minute once floating). Remove from the water with a slotted spoon. The cooked dumplings can be combined directly with the cooked cabbage mixture. Serve with mustard!

HALUSHKY (POTATO DUMPLINGS) UKRAINE / RUSSIA

The is from "The Best of Ukrainian Cuisine". I haven't tried it yet. It differs from the halusky recipe in that it doesn't use farina. Times are guesstimates. If you don't have a meat grinder, you can grate the potatoes instead.

1/2 lb potato, unpeeled
1 fresh potato, peeled
1 egg
1 onion, finely chopped
2 tablespoons flour
1 tablespoon oil
1 pinch red pepper
salt, one pinch
melted butter (for drizzling over top)
sour cream

Steps:

  • Be sure to wash the potatoes before doing anything with them.
  • Take the one uncooked, peeled potato. Grind in a meatgrinder.
  • Cook the other potatoes in salted water. Drain, cool, peel and grind them also in the meat grinder.
  • Combine cooked potatoes with fresh potato and egg.
  • Brown finely chopped onion in oil. Combine with flour and stir. Season with salt and red pepper. Mix with the potatoes.
  • Bring at least a quart of salted water to a simmmer. Drop in spoonfulls of the batter. Cook at a slow boil for 8-10 minutes. Remove with a slotted spoon to a colander. Do not overcrowd the cooking water.
  • To serve, put on a plate and drizzle with butter. Pass with sour cream. It can also be served with fried mushrooms to go with meat dishes.

TRADITIONAL SLOVAK HALUSKI

This has been in my family for generations coming from Czechoslovakia. Traditionally, it is mixed with goat cheese from Czechoslovakia but since it's not available here in the States, we use brick cheese or feta. We eat this as a main meal but can be served as a side. Serve as is or add kielbasa on the side or slice up kielbasa and mix it in with haluski! Serve with warm crusty bread.

4 small potatoes, peeled and coarsely chopped
1 cup all-purpose flour

  • Sprinkle bacon crumbles and a handful of shredded brick cheese over each batch of dumplings; continue to make, boil, and transfer dumplings to the bowl, sprinkling each batch with bacon and brick cheese. When all dumplings are made, gently stir the haluski to mix all ingredients.
