Easy Shrimp and Spicy Tomato Skillet image

If you like food that is saucy, spicy and takes 20 minutes to make you will love this skillet. Large shrimp are sautéd in a harissa spiced tomato sauce and served with crusty bread. This harissa and tomato shrimp is also great to toss in pasta or served over polenta.

2 tablespoons olive oil
2 pints cherry tomatoes
1/2 small red onion, thinly sliced
3 cloves garlic, sliced
2 tablespoons tomato paste
2 tablespoons red wine vinegar
1/4 teaspoon kosher salt
1 tablespoon harissa
1 1/2 lb large shrimp, deveined and peeled
1/4 cup chopped fresh parsley, plus more for garnish

Steps:

  • Heat the skillet over medium-high heat. Add olive oil, red onion, and cherry tomatoes. Cook tomatoes until they begin to blister and split, tossing occasionally, about 10 mins.
  • Using tongs or the back of a spoon pop the tomatoes. Add garlic, sauté until fragrant and tomatoes have released their juices, about 3 minutes.
  • Add tomato paste, vinegar, salt, and harissa. Mix until well combined and saucy. If you like your food with a little more spice you can add more harissa to taste.
  • Add shrimp and parsley, sauté until shrimp is cooked through, about 5 minutes.
  • Serve with crusty bread, pasta, or polenta. Garnish with fresh parsley.

5 tbsp butter
3 tbsp olive oil
1 small yellow onion (diced)
5 garlic cloves (minced)
3 heaping tbsp harissa
1 lb. jumbo shrimp (deveined, tails optional)
salt & pepper
2 tbsp chopped fresh cilantro or parsley

Steps:

  • Add butter and olive oil to a large pan/skillet. Sauté onion in butter/oil for a couple minutes, and when the onion starts to soften, add garlic and harissa. Sauté onion and garlic for a minute or two then add the shrimp, salt & pepper, making sure they the shrimp are laying flat on their sides. When the bottom of the shrimp turns pink, flip each shrimp over and cook for another 2 minutes, or until fully cooked and no longer gray.
  • Generously sprinkle fresh herbs over the shrimp and serve! Great in tacos, over rice, or as an appetizer with crusty French bread. Enjoy!

2 tablespoons canola oil, divided
1 lemon, 1/2 cut into wafer-thin slices and 1/2 juiced
2 zucchini, thinly sliced on the diagonal and halved
1 fennel bulb, thinly sliced, plus 1 tablespoon fronds
1 cup wax beans
1 cup green beans
1 cup snap peas, sliced in half on the diagonal
1/2 cup fresh or frozen peas
A few handfuls of pea shoots
4 cups cooked rice

Steps:

  • To make harissa, combine cayenne, paprika, chili powder, garlic powder, coriander, cumin, and olive oil in a medium bowl. Add shrimp and toss to coat.
  • Heat 1/2 tablespoon canola oil in a wok or large cast- iron skillet over medium heat. Add lemon slices; cook until golden. Remove slices and set aside.
  • Add remaining canola oil to skillet and increase heat to high. Add shrimp and cook 2 minutes. Add sliced fennel, wax beans, green beans, snap peas, and peas and cook 1 minute. Add pea shoots; cook until just wilted. Stir in lemon slices and juice. Serve over rice; garnish with fennel fronds.

This easy dish relies on harissa for its flavorful broth. Different brands can vary wildly in flavor and heat, so incorporate the harissa slowly, especially if yours is very spicy, and add more at the end to taste. The final dish does have some sauciness to it: The starch from the couscous will thicken the sauce in the few minutes it takes to go from stovetop to table, but you may want to provide a spoon along with a fork. If you prefer a drier dish, you can reduce the amount of water by 1/4 cup.

1 pound large shrimp, peeled and deveined
Kosher salt and freshly ground black pepper
3 to 4 tablespoons harissa paste, plus more to taste
1 tablespoon olive oil
1 tablespoon unsalted butter
1 medium yellow onion, finely diced
1 cup pearl couscous or orzo
3 to 4 garlic cloves, finely chopped
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 cup dry white wine
1 pint grape or cherry tomatoes, halved crosswise
1/2 cup fresh Italian parsley leaves, packed, coarsely chopped or left whole

Steps:

  • In a medium bowl, toss shrimp with 1/4 teaspoon salt, a few grinds of black pepper and 1 tablespoon harissa. Set aside.
  • In a large, lidded skillet, heat olive oil and butter over medium. Add onion and 1/2 teaspoon salt, and cook, stirring, until translucent, 3 to 4 minutes.
  • Add couscous, garlic, coriander and cumin. Cook 3 to 4 minutes, stirring occasionally, until couscous is toasted.
  • Add wine and cook until evaporated, 1 to 2 minutes, scraping the bottom of the pan. Add 2 to 3 tablespoons of harissa and 2 1/2 cups water, and bring to a boil. Reduce heat to a simmer, cover and cook for 10 minutes, until couscous is al dente. (There will still be plenty of liquid.)
  • Nestle the shrimp into the couscous, pushing them under the surface a bit. Add the tomatoes and increase the heat until simmering again. Reduce heat to medium-low, cover, and cook 3 to 4 minutes, rearranging shrimp using tongs once, until they are pink and cooked through. Adjust seasoning, if needed, adding more harissa, salt and pepper if desired. Garnish with parsley and serve in shallow bowls.

3 cups diced Spanish onions (1 large onion)
2 cups diced fresh fennel bulb (roughly 1 head)
2 cups sliced leeks (2 leeks)
2 cloves garlic, minced
2 teaspoons fresh thyme, finely chopped
1 1/4 cups extra-virgin olive oil
Salt
4 medium zucchini, quartered lengthwise and cut into 1/4-inch-thick slices (4 cups)
14 eggs
1 teaspoon Ethiopian berbere spice mix, such as Sheba
1/2 teaspoon Aleppo sun-dried chili
Freshly ground black pepper
2 cups diced feta
1 1/2 cups grated Grafton Cheddar
1 cup grated Parmesan
1/4 cup finely cut fresh chives
1/4 cup chiffonaded fresh cilantro
1/4 cup chiffonaded fresh parsley
2 tablespoons chopped fresh chervil
Harissa Aioli, recipe follows
1 cup piquillo peppers, well drained, dried, seeds and stems removed
Zest and juice of 1 lime
2 cloves garlic, pureed
1 tablespoon finely ground caraway seeds
1 tablespoon finely ground roasted coriander seeds
1 tablespoon finely ground roasted cumin seeds
1 teaspoon Sriracha
1/2 teaspoon salt
1/4 teaspoon smoked paprika
3/4 cup mayonnaise

Steps:

  • Cook the onions, fennel, leeks, garlic, thyme, 1/2 cup of the oil and 2 teaspoons salt in a saute pan over medium heat, stirring all the time, until the vegetables begin to soften. Lower the heat to the lowest setting, and cook, stirring occasionally, until the vegetables are soft and translucent, about 20 minutes. Turn the heat up to high, and cook, stirring all the time, until the vegetables turn light golden brown. Remove them from the pan, and let sit at room temperature.
  • Heat a saute pan over high heat. When quite hot, add 1/4 cup of the remaining oil, then the zucchini; saute it for a minute to get even heat distribution. Add 1 1/2 teaspoons salt, and continue to saute until the zucchini is lightly golden brown and cooked through. Remove the zucchini from the pan, and let sit at room temperature.
  • Whisk the eggs, Sheba spice, Aleppo chili and 1/8 teaspoon pepper in a large bowl until frothy. Add the feta, Cheddar, Parmesan, chives, cilantro, parsley, chervil, the onion mixture and the cooked zucchini, and briskly stir until everything is well incorporated.
  • Preheat the oven to 450 degrees F. Heat an 11-inch saute pan over high heat, then add the remaining 1/2 cup extra-virgin olive oil. Add half the egg mixture to the pan and IMMEDIATELY give 1 or 2 quick saute flips to incorporate the mixture at the bottom of the pan (which is cooking) with the raw on top. Add the rest of the mix, IMMEDIATELY give 2 more quick flips, then flatten out the top of the mixture with a spatula. Continue cooking for about 3 minutes (this will help the frittata have a nice golden-brown top). Transfer the pan to the oven, and bake until golden brown on top and cooked through. If it doesn't brown on top, place the pan under a salamander or broiler until golden brown.
  • Let the frittata cool for 2 minutes, then tap on the side of the pan with a wooden spoon to loosen the frittata. Place a cutting board on top of the pan, and quickly invert them both; the frittata should slide out onto the cutting board. Refrigerate the frittata on the cutting board until cold, then slice as desired. Serve with the harissa aioli.
  • Process the peppers, lime zest and juice, garlic, caraway, coriander, cumin, Sriracha, salt and paprika in a Vita-Prep or blender to a fine puree. Add the mayonnaise, and process just to combine. Yield: 1 quart.

Steps:

  • Heat olive oil in a skillet or cazuela over medium high heat. Add onions and tomatoes. Cook about 10 minutes, stirring occasionally, until the vegetables start to soften.
  • Add the garlic and cook for 2-3 minutes, till it gets a little fragrant.
  • Add in harissa paste, tomato paste and honey. Mix well. Simmer until the sauce thickens up and the oil begins to separate, at least 15 minutes.
  • Stir in the shrimp and parsley. Cook for a few minutes, until the shrimp are just cooked through. Taste and adjust for salt.
  • Serve immediately.
