HOMEMADE ORANGE CREAMSICLE POPSICLES

Homemade Orange Creamsicle Popsicles image

Homemade creamsicles are easy-to-make and only require a few real food ingredients: yogurt, refreshing coconut cream, orange juice, and natural sweeteners.

Provided by Kristin Marr

Categories     Dessert

Time 10m

Number Of Ingredients 8

1/2 cup coconut cream
1/2 cup plain whole milk yogurt (or a dairy-free yogurt )
1/2 cup orange juice
3 TB honey
1/2 tsp pure vanilla extract
1/4 cup shredded unsweetened coconut (optional)
popsicle molds
medium bowl

Steps:

  • In a medium-size bowl, combine: coconut cream, yogurt, orange juice, honey, and vanilla. Whisk together. To get the coconut cream, use canned coconut milk and remove the top layer of cream from the milk. You can also purchase coconut cream in a can versus purchasing milk (with the cream layer on top).
  • Pour the liquid into the popsicle molds and freeze for at least four hours.
  • To enjoy, run the outside of the popsicle molds under cold water for a few seconds, then remove from the molds.
  • If desired, roll or sprinkle shredded coconut over the top of the creamsicles popsicles and bites.

  • Add all of your ingredients to a blender and blend for about 30 seconds. Dip a spoon in and taste the batter, if you'd like more vanilla flavor add a little more vanilla. If you'd like more orange flavor, I'd recommend adding more orange zest NOT orange juice.
  • Pour the mixture into each Popsicle mold, leaving at least 1/2 inch of empty space at the top of the mold.
  • Put your lids on top of each Popsicle mold, and place the Popsicles into your freezer, for at least two hours (or till the Popsicles are frozen entirely).
  • To eat, remove the Popsicle from the freezer and run it (still in the mold) under warm water for about a minute. This will make the Popsicle easier to remove from the mold!

  • Put boiling water into a heat-proof bowl. Sprinkle the gelatin on top and let it rest for 10 minutes. Stir and ensure the gelatin is well-incorporated. If it is still grainy, place the bowl in the microwave and cook for 30 seconds. Stir again.
  • Pour cream into a blender jar. Add the gelatin mixture and beat until the mix is creamy and well blended, stopping to scrape the sides down to get all the gelatin crystals mixed in as needed. Do not over-blend, or you will have jello butter from that whipping cream turning into butter (Ask me how I know this.) About 30 seconds in a high powered blender is all you need.
