Digestive Biscuits image

Similar to the traditional British biscuits, these can also be served buttered or with cheese. For a sweeter biscuit, brush one side with melted semisweet chocolate after baking.

¾ cup whole wheat flour
¼ cup all-purpose flour
½ teaspoon baking powder
1 tablespoon rolled oats
4 tablespoons butter
4 tablespoons brown sugar
4 tablespoons milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a large bowl, sift together the flour and baking powder. Mix in the oatmeal. Cream together the butter and the sugar and add to mixture. Stir in the milk until mixture forms a thick paste.
  • Knead dough on a floured surface until smooth. Roll out dough to approximately 1/8" thickness. Cut into rounds with cookie cutter about 2 1/2 inches in diameter. Transfer to cookie sheets and prick with a fork.
  • Bake 15 to 18 minutes, or until golden. Let cool on wire rack. Store in an airtight tin.

This recipe was inspired by the amazing Jamie Oliver's Instagram. My cookies are made with high-quality whole ingredients and they taste way more delicious than anything store-bought. Most importantly, they actually taste like digestive cookies.

3/4 cup Organic Red Fife Flour
1/2 cup Oats
1/2 teaspoon Baking Soda
1/3 cup Coconut Sugar
1/3 cup Coconut Oil
1 tablespoon Nut Milk
1/2 cup Chocolate Chips

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Blitz the Oats (1/2 cup) in a blender or food processor to a finer texture.
  • Combine Organic Red Fife Flour (3/4 cup), Coconut Sugar (1/3 cup), Baking Soda (1/2 teaspoon), and blended oats.
  • Melt Coconut Oil (1/3 cup) and add to dry ingredients. Add Nut Milk (1 tablespoon) and combine.
  • Roll cookie dough into one large ball and refrigerate for an hour or two. This will make forming the cookies much easier.
  • Grease a cookie sheet or line with parchment paper. Form the cookies into small balls and then flatten with a fork or your fingers.
  • Bake for 12 minutes.
  • When cookies are done baking, let cool completely on a cooling rack.
  • Place Chocolate Chips (1/2 cup) in a saucepan on very low heat or use a double boiler to melt completely. Dip each cookie into chocolate and then refrigerate for an hour, then dip or drizzle cookies with chocolate!
  • Serve dipped in chocolate or plain.

  • Place racks in upper and lower thirds of oven; preheat to 350°. Process 1⅓ cups whole wheat flour, wheat germ, sugar, baking powder, salt, and butter in a food processor until butter virtually disappears and you have a fine, floury meal. Add milk and pulse until a damp and crumbly dough forms.
  • Turn dough out onto an unfloured surface and gently knead just to bring it into a ball; flatten into a disk. Lightly flour surface and roll out dough until just shy of ¼” thick. Lightly flour cookie cutter and punch out cookies, dusting with more flour as needed to avoid sticking. Dust any excess flour off of cookies with a dry pastry brush.
  • Using a spatula, transfer cookies to 2 parchment-lined baking sheets. Gently knead scraps together, reroll, and punch out more cookies. Discard any scraps (or bake as is and crumble over ice cream!).
  • Prick each cookie 3 times with a fork and bake, rotating baking sheets top to bottom and front to back halfway through, until bottoms and edges are browned, 15–18 minutes. Let cool on baking sheets (cookies will crisp up as they cool).
