Steps:
- Combine all ingredients except gelatin in a small saucepan over medium-low heat. Stir with a whisk.
- Gradually whisk gelatin into the mixture, stirring constantly. (Avoid dumping gelatin into the pan all at once, which will cause big globs of gelatin to remain in the finished product.)
- Continue heating over medium-low heat until all ingredients are well combined and gelatin is completely melted. (The mixture will change from a grainy, jelly-like consistency to a more glassy, smooth consistency when gelatin is all melted.)
- Place gummy bear mold on a cookie sheet (which makes it easier to move without spilling once filled). Pour mixture into silicone mold and place in freezer for about 20-30 minutes.
- Pop homemade gummy bears out of mold and store them in an airtight container. They will keep in the refrigerator for a few weeks.

- Place the pan on low-medium heat and whisk continuously until the powder is dissolved. This will take about another 5 minutes.
- Once dissolved use a dropper to place in molds.
- Allow gummies to sit for 5-10 minutes to cool. Lightly coat the backs of the gummy bears with cornstarch.
- Place the molds in the refrigerator for 15 minutes to fully cool and set.

Steps:
- **Wash your strawberries, slice the greens off and puree in a blender. Measure 2 cups of the puree and place in a medium-sized bowl.
- Stir in the lemon juice, stevia and food coloring.
- It helps to have another person help you here. Have one person spread open a nut milk bag over a large bowl while you pour the strawberry mixture inside. Tie the bag closed and squeeze the bag to get as much liquid out as you can. You should get 1¾ cup (or 334g) of the mixture after straining.
- Pour the mixture into a nonstick saucepan, sprinkle the gelatin overtop and let it sit for 5 minutes. Stir it together and smush any big clumps of gelatin, don't worry about the small ones, they'll dissolve.
- Place the pan over medium-high heat and stir occasionally, until it comes to a light boil. Stir constantly when the mixture boils harder. When you can't stir the bubbles away, keep it on the heat for ~30 seconds and then remove from the heat. Let the mixture sit for a few minutes so the foam/bubbles have a chance to go away, then carefully scoop the mixture into gummy bear molds.
- Let the molds cool on the counter for about an hour, then place them in the fridge. Refrigerate until firm. To store, place gummy bears in an airtight container and refrigerate.

Steps:
- Lay out your molds on a baking sheet and set aside.
- In a small saucepan, combine the juice and honey. Turn the heat to low and whisk the ingredients together.
- Slowly, add the gelatin to the saucepan one tablespoon at a time, whisking the ingredients to help the gelatin to dissolve.
- Let the mixture come to a simmer and then turn off the heat. Stir in the lime juice, if you are using.
- Use a dropper to divide the mixture into the gummy bear molds. Place the molds into the refrigerator or freezer to set.
- Once the gummy bears have set, remove them from the molds and store them in a tightly-sealed container in the refrigerator for up to a week.

KETO SUGAR FREE GUMMY BEARS RECIPE
Steps:
- Combine 1/4 cup water and strawberries in a medium saucepan. Bring to a boil, stirring and mashing as berries soften.
- Reduce heat to medium-low. Simmer for 4-7 minutes, until berries are fall-apart soft. Mash with the back of a spoon.
- Meanwhile, pour the remaining 1/2 cup water into a small bowl. Sprinkle the gelatin powder into the bowl and whisk immediately before it sets. Set aside to bloom for at least 5 minutes.
- Place a fine mesh sieve lined with a jelly bag or nut milk bag over a bowl. When the berries are very soft, pour the berry mixture over the sieve to strain. Press with a spoon or spatula to push the juice into the bowl. You should get about 3/4 cup of juice - measure out 3/4 cup to use for the jello, and add water to reach this mount if it's not enough juice.
- Wipe down the saucepan and pour juice back into the saucepan over medium heat. Add Besti and stir to dissolve. Taste and adjust sweetener to taste if needed.
- Reduce heat to low. Stir in the bloomed gelatin and heat, stirring, for about 2 minutes, until gelatin dissolves.
- Use a dropper to fill silicone gummy bear molds with the liquid.
- Refrigerate for about 2 hours, until set. Remove the molds from the fridge one at a time to pop out the bears. (They are easier to remove when cold, so don't take all the molds from the fridge at once.) Store in the refrigerator.

Steps:
- Combine the fruit juice or lemonade, gelatin and sugar in a small saucepan. Cook over low heat, stirring often, until the gelatin and sugar dissolve completely, about 1 minute (make sure there is no undissolved sugar stuck to the bottom of the saucepan). If any foam forms while stirring, skim it off and discard. Transfer the mixture to a small liquid measuring cup.
- Put the gummy bear molds on a flat surface and slowly fill each cup to the top. Give each mold a small shake to ensure the mixture settles to the bottom. Refrigerate until the mixture sets, about 10 minutes. Store at room temperature in an airtight container for up to 5 days.
