Number Of Ingredients 18

vegetable oil
1 (18 ounce) can artichoke hearts, drained
2 garlic cloves, minced
3 scallions, chopped
1/8 cup fresh parsley, chopped finely (optional)
1/4 cup milk
1 large egg, beaten
1 teaspoon lemon zest
2 teaspoons lemon juice
1 cup all-purpose flour
3/4 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon pepper
1/2 lemon, juice of, to squeeze over fritters
kosher salt, to sprinkle
1 cup sour cream
1 lemon, juice of
1 teaspoon kosher salt

Steps:

  • Pour 3 inches of vegetable oil into a heavy bottomed pot and place over medium heat until a bread cube placed in the oil browns within 1 minute.
  • Coarsely chop the artichokes (or crush by hand) and put them in a large mixing bowl. Add the garlic and scallions, parsley(if using), milk, egg, lemon zest and lemon juice.
  • Mix the flour, baking powder, salt and pepper in a separate bowl and quickly mix the dry ingredients into the artichoke mix. Drop the fritters by heaping tablespoonfuls into the hot oil and fry until golden brown, about 5 minutes. Work in batches until all the batter is used. Keep warm in a warm oven until ready to serve. Immediately before serving, squeeze a little fresh lemon juice over all and sprinkle with a bit of kosher salt.
  • Serve with a dollop of Lemon Cream on top, if desired.

WATERMELON GAZPACHO SHOOTERS

4 cups seedless watermelon (about 3 pounds), diced
2 to 3 tomatillos, diced
1 tablespoon seeded and diced jalapeno (about 1/2 pepper)
1 lime, zested and juiced
1/2 teaspoon salt
Pinch cayenne pepper
Lime slices, for garnish

Steps:

  • Put the watermelon, tomatillos, jalapeno, lime juice and zest, salt and pepper into a blender or food processor, working in batches if necessary. Blend until the mixture is smooth. Chill well before serving, at least 1 hour and up to 1 day. To serve, pour about 2 ounces of the gazpacho into shot glasses and garnish with a lime slice.

CHOCOLATE CREME FRAICHE POT

11 ounces semisweet chocolate, chopped
Whipped cream, for serving
Cocoa powder, for serving

Steps:

  • Put the creme fraiche into a medium saucepan and place over medium heat. Stir until it begins to bubble and add the chopped chocolate. Stir well until the chocolate melts and the mixture is smooth. Pour into 8 souffle cups and chill, covered, for 2 hours. Serve with a dollop of whipped cream and a sprinkle of cocoa powder.

HONEY ROASTED PARSNIP BISQUE



Honey Roasted Parsnip Bisque image

Number Of Ingredients 12

2 pounds parsnips, peeled and quartered lengthwise
1/4 cup vegetable oil
3 teaspoons salt, divided
6 tablespoons honey, divided
6 cups water
1 bunch parsley
1 carrot, cut in 1/2
1 small onion
2 bay leaves
1/2 teaspoon black peppercorns
2 teaspoons white pepper
3 cups heavy cream

Steps:

  • Preheat the oven to 375 degrees F.
  • Toss the parsnips with the oil and 1 teaspoon of salt and drizzle with 3 tablespoons honey. Place on a baking sheet and put into the top half of the oven. Roast 30 minutes, or until the parsnips are a deep golden brown; they tend to burn easily so make sure to toss often while roasting.
  • Meanwhile, put the water into a large pot and place over high heat. Lay a double layer of cheesecloth on a flat surface and place the carrot, onion, parsley, bay leaves and peppercorns in the center. Tie the cheesecloth up and around the vegetable and herb mix and drop it into the water. Bring to a boil, lower the heat and simmer for 30 minutes.
  • Remove the parsnips from the oven and place them immediately into the stock. Add the remaining honey and salt and white pepper; simmer for about 20 minutes. Puree with an immersion blender, or in batches in a blender. Add the cream and cook for another 10 minutes or until thick.

FRENCH COUNTRY TART VARIATIONS



French Country Tart Variations image

1 prepared tart shell, Pate Brisee recipe follows
7 eggs
1 cup heavy cream
2 teaspoons salt
1 teaspoon white pepper
Pinch ground nutmeg
Variation #1 - Lorraine:
1 small onion, sliced
1 tablespoon olive oil
1 teaspoon Dijon mustard
5 slices bacon, cooked crisp
1/2 cup shredded Gruyere
Variation #2 - olives, roasted red pepper and goat cheese
1/2 cup pitted kalamata olives, roughly chopped
2 store bought roasted red peppers, roughly chopped
4 ounces crumbled goat cheese
Preheat the oven to 350 degrees F.
Pan release spray
2 tablespoons cornmeal
1 1/4 cups all-purpose flour
1/8 teaspoon salt
7 tablespoons butter, chilled and cut into bits
3 tablespoons ice water

Steps:

  • Whisk the eggs and cream together in a large mixing bowl. Add the salt, pepper and nutmeg and whisk to blend.
  • For the Lorraine tart: put the onion into a small skillet with a tablespoon of olive oil. Place the pan over medium heat and cook until the onion is translucent, about 10 to 15 minutes. Brush the bottom of the prepared tart shell with the Dijon and spread the cooked onion, bacon and Gruyere on top. Pour the custard over the filling and place the pan into the bottom half of the preheated oven. Bake the tart until the filling is slightly puffed and golden, about 40 minutes. Remove from the oven and let cool 10 minutes before serving.
  • For the olives, roasted red pepper and goat cheese tart: Put the olives, roasted red pepper and goat cheese into the prepared tart shell and pour the custard over the filling. Bake as above.
  • Prepare the tart pan by spraying it with pan release spray and coating it with the cornmeal. Knock out any excess cornmeal and set the pan aside.
  • Blend the flour and salt in the bowl of a food processor fitted with a steel blade. Add the butter and pulse until the mixture resembles coarse crumbs. Transfer the mix to a large mixing bowl and add the water 1 tablespoon at a time, stirring constantly with a fork. Transfer the dough to a floured surface and knead just until it forms a ball. Flatten the dough into a disk and wrap in plastic wrap. Refrigerate at least one hour.
  • On a floured surface, roll the dough out to a 12-inch circle. Carefully lift it into the prepared pan, pressing into the bottom and up the sides. Leave at least a 1-inch overhang, which will be used to crimp the edges. Prick the bottom of the pan all over and place in the freezer for 15 minutes.

1/2 cup flat-leaf parsley leaves, roughly chopped
4 tablespoons butter
1/2 cup crumbled blue cheese

Steps:

  • Pour the water into a large saucepan and place over high heat. Bring to a boil and add the salt, grits, and parsley. Stir well, lower the heat to medium and cook for 5 to 7 minutes, or until the grits are thick and creamy. Add the butter and blue cheese and stir well to combine. Serve immediately.

SAFFRON GARLIC NEW POTATOES

2 tablespoons thinly sliced garlic cloves
1 shallot, peeled and thinly sliced
1/4 teaspoon ground saffron
2 pounds very small new potatoes, scrubbed
1 cup low sodium chicken stock
1 1/2 cups water
2 teaspoons salt
1/4 teaspoon smoked paprika
1 tablespoon chopped parsley leaves, for garnish
1 baguette, sliced

Steps:

  • Melt the butter in a large saucepan over medium heat. Add the garlic and shallot and cook, stirring often, until the garlic begins to turn golden. Add the saffron powder, stir and cook an additional minute. Add the potatoes and toss to coat. Add the chicken stock, water, salt and paprika and bring to a boil. Reduce the heat to low, stir and simmer for 10 to 15 minutes, until the potatoes are fork tender. Stir in parsley. Transfer the potatoes and broth to a heat safe serving bowl or chafer and serve with sliced baguettes.
