HERBED CHEDDAR BISCUITS
These savory biscuits can be served at breakfast, lunch, and dinner.

Steps:
- Heat oven to 425 degrees. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Using your hands or a pastry cutter, cut in butter with the dry ingredients until the mixture is coarse and crumbly. Then cut in the shortening, and mix in the scallions, parsley, and grated cheddar cheese.
- Make a well in the center of the flour mixture, pour in buttermilk, and stir with a fork just until dough comes together. Do not overmix. Turn dough onto a lightly floured surface, and knead gently 6 to 8 times.
- On a clean work surface, pat dough into a 1-inch-thick round. Cut out biscuits using a floured 3-inch-round biscuit cutter. Do not twist cutter. Gently re-form scraps of dough, and cut out more biscuits.
- Transfer the biscuits to a lightly buttered or parchment-lined baking sheet, and bake until golden brown, 12 to 15 minutes, rotating baking sheet halfway through. Serve hot.
CHEDDAR AND HERB BISCUITS
Steps:
- Preheat oven to 425 degrees. In a medium bowl, combine flour, baking powder, garlic powder and salt. Cut in shortening and butter until coarse crumbs are formed. Lightly mix in grated cheese. Mix in buttermilk just until moist (dry spots here and there are ok - the biscuits will be tough if they are overmixed).
- Drop the biscuits onto a greased or lined baking sheet. Bake for 12-14 minutes, until browned and golden.
- While the biscuits are baking, in a small bowl combine three tablespoons melted butter, 1/4 teaspoon dried parsley flakes, 3/4 teaspoon garlic powder and a pinch of salt.
- Right when the biscuits come out of the oven, brush the butter/herb mixture over the biscuits evenly (alternately, you can dip the top of the biscuit into the butter mixture). Serve immediately.

- Whisk 1 cup whole-wheat flour, 2/3 cup all-purpose flour, 1 tablespoon each chopped parsley and chives, 2 teaspoons baking powder and 3/4 teaspoon kosher salt in a large bowl. Cut in 6 tablespoons diced cold butter, then half of a 5.2-ounce package garlic-and-herb cheese until pea-size pieces form. Stir in 2/3 cup half-and-half with a fork. Pat into a 4-by-8-inch rectangle; cut into 8 squares. Bake at 450 degrees F until lightly browned, 15 to 17 minutes.
WHOLE WHEAT GARLIC CHEDDAR BISCUITS
Wonderful whole grain & lower fat version of popular biscuits. If you're not a big fan of whole wheat, try organic white whole wheat (or if you must, substitute half with all-purpose flour).

- Combine flours, baking powder and salt in a bowl.
- Cut in margarine with a pastry blender or 2 knives.
- Add milk, mix quickly.
- Turn out onto a floured board.
- Knead 6 to 8 times.
- Roll 1/4 inch thick.
- Cut into 12, 2 inch round biscuits or into wedges or squares.
- Place on a lightly greased baking sheet.
- Bake in a 425°F oven 12 to 15 minutes until lightly browned.
- For herb biscuits, add basil, thyme and parsley to dry ingredients.

- Preheat the oven to 425 degrees F (220 degrees C).
- In a medium bowl, stir together the flour, baking powder, sugar, salt and cream of tartar. Cut in butter using a pastry cutter or a fork until it is the size of peas. Make a well in the center of the mixture and measure the milk, cheese and thyme into the bowl. Gently mix until a soft dough forms.
- Roll or pat out on a floured surface to 3/4 inch thick. Cut into circles and place on a baking sheet.

- In a large bowl, combine the flours, baking powder, baking soda, and salt. Add the butter and toss in the flour mixture until coated. Use a pastry blender or knife to blend the butter into the flour, until the butter is the size of small peas. Add the cheese. Pour in the buttermilk and use a wooden spoon and then your hands to bring the mixture together into a ball. Do not overwork the dough, it's alright if there are some dry bits.
- Turn dough out onto a clean surface and pat into a disk about 1 inch thick. Use a round cutter to cut out biscuits, or shape in a rectangle and cut into squares with a knife. Place on prepared sheet pan and brush with buttermilk.
- Bake until golden brown, about 20 minutes. Serve warm or at room temperature. Store in an air tight container. Biscuits are best the day they are baked but will keep for a few days.
